Creamy chipotle shrimp is a one-pan easy shrimp recipe that's bursting with zesty flavor! This might just be the tastiest weeknight meal to enjoy. Watch the video above!

3 tablespoons olive oil (divided)
1 pound shrimp
1 red bell pepper (seeds removed and roughly chopped)
3 cloves garlic (minced)
3 green onions (sliced with green and white parts separated)
salt and pepper (to taste)
1 recipe chipotle sauce
1/2 cup milk (dairy or non-dairy)
garnish with chopped cilantro and sliced jalapeno

Steps:

  • Heat 2 tablespoons of olive oil in a saute pan on medium heat. Add the shrimp and saute for 3-4 minutes, or until the shrimp are cooked through and opaque. Remove them to a bowl.
  • In that same pan, add another tablespoon of olive oil and add the bell pepper and saute for 4-5 minutes.
  • Then add the garlic, white parts of the green onion, salt and pepper. Stir for another 2 minutes.
  • Pour in the chipotle sauce and milk and stir to combine. Then add the shrimp back to the pan to warm through.
  • Garnish with the green parts of the green onion, chopped cilantro and sliced jalapeno pepper.

8 ounces dried pasta, linguine, fettuccine, etc.
1 tablespoon vegetable oil
1 small onion, chopped
2 garlic cloves, peeled and minced
1 small bell pepper, cored, seeded, and sliced
1/2 teaspoon ground cumin
4 to 5 small fresh plum tomatoes or 10 cherry tomatoes, stem ends and seeds removed and sliced
2 to 3 canned chipotle peppers
1 teaspoon adobo sauce
1 pound peeled large shrimp
2 teaspoons fresh lemon juice
1 1/2 cups half-and-half, light cream, or evaporated milk
1/4 cup chopped fresh cilantro
Salt and pepper, to taste
1/3 cup grated Parmesan cheese, optional

Steps:

  • Boil the pasta in a large sauce pan until al dente, according to the package instructions. Drain and set aside. Heat the oil in a Dutch oven or large frying pan on medium heat and, stirring occasionally, sauté the onions for 2 minutes or until wilted. Stir in the garlic, bell peppers, tomatoes, and cumin. Sauté for an additional 2 minutes. Reduce the heat to medium-low and stir in the chipotles, shrimps, lemon juice, and half-and-half (or cream or evaporated milk). Simmer until the shrimps are just cooked through, approximately 3 to 5 minutes, depending on the size of shrimps used. Stir in the cilantro. Taste and correct the seasoning by adding salt, pepper, and, if needed, additional chipotle to suit your taste. Return the pasta to the sauce pan in which it was cooked, sprinkle with the grated cheese (if used), and pour the shrimp sauce over it. Toss until well blended and transfer to a serving dish. Serves 4 as a main course.

Kosher salt and freshly ground pepper
12 ounces short pasta, such as mezzi rigatoni, cavatappi, or gemelli
1/4 cup extra-virgin olive oil
1 head fennel, thinly sliced (1 1/2 cups), fronds reserved
2 1/2 cups fresh corn kernels (from 3 ears)
3 chipotles in adobo, seeded and chopped (1 tablespoon), plus 2 tablespoons sauce
1 pound large shrimp, peeled and deveined
1/3 cup heavy cream

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook until slightly less than al dente, about 2 minutes less than package directions. Reserve 1/2 cup pasta water, then drain.
  • Meanwhile, heat oil in a large straight-sided skillet over medium-high. Add fennel, season with salt and pepper, and cook, stirring occasionally, until it begins to soften, about 3 minutes. Add corn and chipotles with sauce and cook, stirring, 3 minutes. Add shrimp; cook until just beginning to curl but not completely cooked, about 1 1/2 minutes.
  • Add pasta, reserved pasta water, and cream. Cook, stirring and shaking pan until pasta and shrimp are cooked through and a creamy sauce forms, 1 to 2 minutes more. Season with salt and pepper and serve, garnished with fennel fronds.

4 ounces heavy cream
3 ounces Chipotle Sauce, recipe follows
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
9 ounces cooked penne pasta
2 ounces Parmesan, grated
1 tablespoon diced tomato
1 tablespoon diced scallion
1 cup BBQ sauce
1/2 cup canola oil
1/4 cup lemon juice
1/2 ounce Dijon mustard
2 ounces chipotle paste
1/2-ounce red chili flakes
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper

Steps:

  • In saute pan over high heat, add olive oil and hot links. Sear links until browned. Add the shrimp and cook until pink. Lower heat to medium. Then add cream, chipotle sauce, salt and pepper. Add cooked pasta and the cheese. Toss to combine.
  • Serve in pasta bowl and garnish with diced tomato, scallions, and more grated Parmesan.
  • Combine all ingredients in blender, puree, cover and refrigerate.

1 to 2 chipotle peppers in adobo

Steps:

  • In saute pan over high heat, add olive oil and hot links. Sear links until browned. Add the shrimp and cook until pink. Lower heat to medium. Then add cream, 3/4 of the Chipotle Sauce, salt and pepper. Add cooked pasta and the cheese. Toss to combine.

1 cup milk
3/4 cup KRAFT Grated Parmesan Cheese
2 Tbsp. canned chipotle peppers in adobo sauce, finely chopped

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, melt 2 Tbsp. butter in large skillet on medium-high heat. Add shrimp; cook and stir 3 min. or until shrimp turn pink. Remove shrimp from skillet; cover to keep warm.
  • Add remaining ingredients, including remaining butter, to skillet; cook on low heat 5 min. or until cream cheese is completely melted and mixture is well blended, stirring constantly with whisk. Stir in shrimp.
  • Drain pasta; place in large bowl. Add shrimp mixture; mix lightly.

8 ounces bow tie pasta
2 1/2 cups water
1 lb peeled and deveined shrimp
1 tablespoon cornstarch
1/4 cup chipotle marinade (Lawry's makes one)
4 ounces mushrooms
1/2 cup fresh tomato, diced
1/3 cup green onion, chopped
2 tablespoons butter
1/2 teaspoon seasoning salt

Steps:

  • Preheat a 2-sided grill (like the Foreman grill). Place pasta and water in large saucepan. Cover and bring to boil over medium-high heat. Remove lid and cook 6-8 minutes, stirring often, until most of the water is absorbed.
  • Place shrimp and cornstarch in a large ziplock bag. Seal and shap to coat shrimp. Add marinade to bag, seal tightly and knead to coat; set aside.
  • Stir remaining ingredients gently into pasta. Reduce heat to low, cover and simmer 5 minutes, stirring occasionally.
  • Place shrimp on grill, using tongs, and close lid. Grill 3-4 minutes or just until shrimp turn pink. Serve over pasta.
