CHIPOTLE HOME FRIES

Great addition to a brunch menu. My inspiration is from Made By Frances blog with the technique of pre-cooking the potatoes from America's Test Kitchens.

Number Of Ingredients 7

1 1/2 tablespoons vegetable oil
1 lb yukon gold potato, scrubbed and cut into 1/2 inch cubes (2 medium)
1 tablespoon butter
1 teaspoon paprika
1 chipotle chile in adobo, minced plus 1 teaspoon of adobo sauce
salt
fresh ground black pepper

Steps:

  • Place the diced potatoes in large saucepan, cover with 1/2 inch water, add 1 teaspoon salt and place over high heat. As soon as water begins to boil, about 6 minutes, drain potatoes thoroughly in colander.
  • Heat the butter and oil in a large heavy bottomed skillet. Arrange the potato cubes in a single layer. Cook for 4-5 minutes without stirring. Flip the potatoes and cook another 4-5 minutes on the opposite side. Repeat again until the potato cubes are evenly browned on all sides.
  • Remove from heat and add in the paprika, minced chipotle chile and adobo sauce. Season to taste with salt and black pepper.

Sweet Potato Fries With Chipotle Mayonnaise (Yam Fries) image

Taste of 2008! This is a nice change from regular fries and these definitely will tempt your taste buds. Served along with a nice spicy chipotle mayonnaise it satisfies many cravings! Although these fries are done in the oven if you prefer you can deep fry for a more crispy effect. Enjoy!

Number Of Ingredients 12

sweet potato
olive oil
2 tablespoons ground coriander
1 tablespoon ground fennel
1 tablespoon ground oregano
3/4 teaspoon ground chili pepper flakes (or to taste)
2 tablespoons salt
1/2 cup mayonnaise
1 chipotle pepper
1 tablespoon adobo sauce
2 drops Tabasco sauce
1/2 teaspoon cumin

Steps:

  • Preheat oven to 425°.
  • Mix together seasoning. In a bowl combine 1 Tbsp oil and 2 tsp seasoning per sweet potato. Toss and place on greased baking pans. Making sure that potatoes are spread out in pan. Bake for 30-40 minutes turning every 10 minutes.
  • Serve with chipotle mayonnaise to prepare mayonnaise combine mayonnaise,* chipotle pepper, 1 tbsp adobe sauce and 2 drops Tabasco sauce. (*I use Chipotle peppers in a can that are in the adobe sauce already, found usually in Mexican food aisles of the supermarket).
  • *Save remaining seasoning mixture in ziploc bag for next time.

  • Finely mince cilantro and garlic. Place cilantro, garlic and zest and juice from one lime in a bowl and toss together, set aside.
  • In a large skillet over medium heat, heat olive oil. Add onions and garlic and let cook for 3-4 minutes until onions and garlic begin to soften. Next, add in the chipotle sauce and stir to combine. Once hot, turn off heat and add fries. Toss to coat.
  • Add coated fries to a large baking sheet, making sure to lay in a single layer. Bake at 450 for 30 minutes, turning fries half way through cooking time.
