Chinese Sausage with Sticky Rice (Xôi Lạp Xưởng) image

Al dente and sticky rice with plump and juicy pieces of flavorful lap cheong, this recipe will teach you a very simple and easy recipe to enjoy Chinese sausage on a weeknight.

208 g glutinous sticky rice
48 fl oz water (plus more for steamer)
93 g Chinese sausages

Steps:

  • In a mixing bowl, combine the glutinous rice and water. Cover with a lid or towel and let rest for at least 8 hours.
  • In a pot of water over medium-high heat, add the steamer and line with the cheesecloth. Preheat the steamer for about 2 minutes or until you start to see steam rising above the steamer.
  • Drain the water from the soaked rice.
  • Add rice to the preheated steamer lined with cheesecloth and spread evenly. Add the Chinese sausages on top of the rice at least 1 inch apart.
  • Cover with the lid and steam for 20 minutes. Make sure to add water to the pot throughout the steaming process so the pot doesn't run out of water.
  • Open the lid and check the texture of the rice, it should be plump, soft, and chewy. The rice should not be mushy or too hard. If the texture is too al dente for your preference, you can close the lid and continue to cook for an additional 2 minutes before checking the texture again. Cook until it reaches the final desired texture because it will not continue to cook once you remove it from the heat.
  • Transfer the rice into bowls. Cut the Chinese sausage into bite-size pieces. Serve immediately.

Recipe video above. This is how the Chinese do omelettes! Egg Foo Young was created as a recipe to use up leftovers, so make this your own using what you have - see Notes for the formula. Otherwise, use EITHER the prawn/shrimp or pork filling. Makes 4 small omelettes, serves 2 as meal with rice, or 4 as part of a banquet.

4 tsp cornflour / corn starch
1 1/2 tbsp light soy sauce (, or all purpose (Note 2))
2 tsp Oyster Sauce
1 tbsp Chinese Cooking Wine ((shaoxing wine) OR Mirin (Note 3))
1/2 tsp sesame oil
1 cup / 250 ml water
Dash of white pepper
6 eggs
2 cups bean sprouts ((just eyeball it))
4 shallots/green onions (, white part only, sliced)
Salt and white pepper
2 tbsp vegetable oil
1 tsp sesame oil
1 garlic clove (, finely chopped)
ONE Filling of Choice, below (Prawn or Pork)
100 - 120g/3.5 - 4 oz chopped raw small prawns/shrimp (, peeled and deveined (Note 4))
100 - 120g/3.5 - 4 oz ground/mince pork ((or chicken, turkey, beef or veal))
1/2 tsp EACH soy sauce and Oyster Sauce
1/4 tsp sugar
Dash of sesame oil
Sesame seeds, sliced green onion

Steps:

  • Mix cornflour and soy sauce. Then add remaining ingredients.
  • Pour into a saucepan over medium heat. Bring to simmer, stirring constantly. Simmer for 1 minute until sauce thickens to thin syrup consistency. Remove from stove, set aside.
  • MICROWAVE option: Microwave on high for 1 1/2 minutes. Stir very well, microwave for another 1 1/2 minutes until thickened. Mix well again.
  • Place pork in a bowl, add remaining ingredients. Use fork to mix through.
  • Whisk eggs in a bowl.
  • Add beansprouts, green onions, pork or prawns, salt and pepper. If using pork, crumble the raw pork in with fingers (see video). Mix through.
  • Heat 1/2 tbsp vegetable oil and drizzle of sesame oil in a non stick skillet over medium heat. Add a bit of garlic and quickly saute (10 seconds) and push into centre of skillet.
  • Ladle in 1/4 of batter. Use spatular to push edges in to form a round(ish) shape.
  • Cook until the underside is light golden (about 1 1/2 minutes) then flip and cook the other side for 1 minute. The raw meat will cook through in this time. Repeat with remaining egg to make 4 omelettes (use 2 pans if you can!).
  • Slide omelette onto plate. Pour over sauce. Sprinkle with sesame seeds and green onions, if using.
  • Serve with a side of rice and steamed vegetables of choice. Double the sauce if you want enough to pour over the rice and veggies! (Click on Servings to scale recipe up).

1 fresh Italian sausage link (4 ounces), casing removed
1-1/2 cups sliced fresh mushrooms
10 large eggs
1/2 cup grated Parmesan cheese
2 to 4 garlic cloves, minced
1/4 teaspoon pepper
1/4 to 1/2 cup minced fresh parsley
4 teaspoons olive oil, divided

Steps:

  • In a 10-in. nonstick skillet, cook sausage and mushrooms over medium-high heat 4-6 minutes or until sausage is no longer pink, breaking up sausage into crumbles. Remove with a slotted spoon; wipe skillet clean., In a large bowl, whisk eggs, cheese, garlic and pepper until blended. Stir in parsley., In same skillet, heat 2 teaspoons oil over medium-high heat. Pour in half of the egg mixture. Mixture should set immediately at edges. As eggs set, push cooked portions toward the center, letting uncooked eggs flow underneath. When eggs are thickened and no liquid egg remains, spoon half of the sausage mixture on one side; fold omelet in half., Cut omelet in half; slide onto serving plates. Repeat with remaining ingredients.

1/4 pound bulk pork sausage
2 tablespoons chopped onion
2 tablespoons chopped sweet red pepper
1/4 cup sour cream
3 eggs, separated
3 tablespoons milk

1 tablespoon butter

Steps:

  • Crumble the sausage into a small microwave-safe dish; add onion and red pepper. Cover and microwave on high for 2 minutes; drain. Stir in sour cream; set aside., In a small bowl, whisk the egg yolks, milk, salt, baking powder and pepper. In a large bowl, beat egg whites until stiff peaks form. Gently fold into egg yolk mixture. , Place the butter in a greased 9-in. microwave-safe pie plate. Microwave on high for 30 seconds. , Pour egg mixture into plate. 4 eggs
1 green onion, chopped
1/4 teaspoon salt
1/4 teaspoon msg (optional)
black pepper
1 tablespoon vegetable oil
2 sweet Chinese sausage (sliced 1/2 inch thick)

Steps:

  • Add eggs, green onion, salt, MSG, and pepper in a large bowl and lightly beat together.
  • In a non-stick skillet heat oil, add sweet sasuage and cook for 1 or 2 minutes until lightly brown.
  • Drain sausage and add to egg mixture, beat together lightly.
  • Add entire mixture to the same skillet you used for cooking the sausage.
  • Cook for about 2 to 3 minutes on each side, or until lightly brown.
  • Serve with steamed rice.

Perfect for holidays or when you just don't want to fuss over the stove-top. This recipe is so easy, with great results. Any type of cheese and sausage can be used. Also, other ingredients can be added, I usually add some shrooms and a dash of cayenne pepper, use your imagination. Do ahead: you can cook the sausage and onions the day before and refrigerate. 2 tablespoons olive oil
1 small onion, diced
1/2 lb Italian sausage, casings removed
8 large eggs
1/3 cup whole milk
1 teaspoon kosher salt
fresh ground black pepper
1 red bell pepper, diced
1 1/2 cups grated gruyere cheese
1/4 cup fresh flat-leaf parsley, plus
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • Lightly butter an 8 by 8-inch baking dish.
  • Heat the oil in a medium skillet over medium-high heat. Add the onion and cook until translucent, about 3 minutes. Add the sausage and cook until brown, about 5 minutes. Set the pan aside to cool.
  • In a large bowl, whisk together the eggs, milk, salt and pepper until smooth, about 20 seconds.
  • Add the red bell pepper, 1 cup of Gruyere cheese and 1/4 cup of parsley. Stir in the onion mixture.
  • Pour the batter into the prepared pan. Sprinkle with the remaining cheese. Bake for 20 to 25 minutes or until golden brown.
  • Cut the baked omelet into wedges and sprinkle with remaining parsley before serving.
