Honey Soy Dressing:
1/4 cup extra virgin olive oil or vegetable oil
3 Tbsp dark sesame oil
1/2 teaspoon crushed dried red pepper or chili powder (optional)
3 Tbsp honey
2 Tbsp soy sauce (less if using tamari which is more concentrated than soy sauce)
Salad:
12 ounces of vermicelli, thin spaghetti, or angel hair pasta
Salt
2/3 cup coarsely chopped cilantro
1/3 cup chopped roasted salted peanuts
1/3 cup thinly sliced green onions
1/2 cup diced red bell pepper
1 Tbsp toasted sesame seeds

Steps:

  • Prepare the dressing: Put the dressing ingredients into a small saucepan and bring to a boil. Remove from heat.
  • Cook the pasta: Put the pasta in a large pot in salted boiling water (1 Tbsp salt for every 2 quarts of water). Cook al dente, according to the directions on the pasta package. Drain.
  • Toss with dressing, chill: Stir together the cooked pasta and the dressing in a large bowl until the pasta is well coated. Cover and chill for several hours.

8 ounces dried udon noodles
1 cup frozen shelled edamame
Vegetable oil, for the grill
1 bunch scallions
3 tablespoons tahini
3 tablespoons soy sauce
3 tablespoons rice wine vinegar
2 teaspoons toasted sesame oil
2 teaspoons sugar
2 teaspoons grated fresh ginger
2 cups bean sprouts
1 cup shredded carrots
1 cup julienned snow peas
Toasted sesame seeds, for topping

Steps:

  • Cook the udon noodles as the label directs; drain and let cool. Meanwhile, cook the edamame as the label directs; drain and let cool.
  • Heat a grill or grill pan over medium-high heat and oil the grates. Add the scallions and cook, turning, until charred, about 3 minutes. Let cool, then slice.
  • Make the dressing: Whisk the tahini, soy sauce, vinegar, sesame oil, sugar and ginger in a large bowl. Stir in 1 to 2 tablespoons water to make a smooth sauce.
  • Add the noodles and edamame to the dressing along with the bean sprouts, carrots and snow peas; toss. Sprinkle with sesame seeds.

12 oz chow mein udon noodles (nanka seimen)
4 Tbsp sesame oil
DRESSING:
1-2 Tbsp vegetable oil
1/4 c green onions (slice on the diagonal)
5 garlic cloves, minced
1 Tbsp garlic scapes (or you can use chives)
1" fresh ginger, zested
2 tsp sambal oelek (red chili paste)
3 Tbsp brown sugar
1/4 c rice vinegar
1/4 c soy sauce
2 Tbsp fish sauce
1/2 c creamy peanut butter
1/2 c hot water
GARNISH:
1/4 c toasted sesame seeds
cucumber slices to cover
minced cilantro

Steps:

  • 1. Boil the noodles until soft (about 6-8 minutes). Immediately drain and rinse in cold water. Stop the cooking process! Drain well and toss with sesame oil to keep from sticking together.
  • 2. Heat vegetable oil, add the garlic, onions, ginger and chili. Cook for a few minutes, then add the remainder of the dressing ingredients. When the sugar has dissolved and the peanut butter is creamed into the the dressing, toss over the noodles. Use your fingers to gently massage the dressing into the noodles.
  • 3. Transfer the salad to a pretty dish. Discard any remaining dressing (you don't want to drown the noodles). Top with cucumber slices, toasted sesame seeds and cilantro. Serve at room temperature or chilled.

2 cups cubed cooked chicken breast
1-1/2 cups coleslaw mix
1 can (11 ounces) mandarin oranges, drained
1 medium sweet red pepper, julienned
1 cup fresh sugar snap peas, trimmed and halved
3 green onions, chopped
1/4 teaspoon salt
2/3 cup reduced-fat Asian toasted sesame salad dressing
1/4 cup chopped salted peanuts

Steps:

  • Cook pasta according to package directions. , In a large bowl, combine chicken, coleslaw mix, oranges, red pepper, snap peas and green onions; sprinkle with salt and toss to combine., Drain pasta and rinse in cold water. Add pasta and dressing to chicken mixture; toss to coat. Sprinkle with peanuts.

This amazing salad recipe was given to me by a friend who used to know someone at the now closed Larry's Markets in the Seattle area. I've added to the recipe a little -- so it's not exactly the same... but better! I take this to every picnic and everyone loves it! May also add diced chicken for a variation.

1 (16 ounce) package angel hair pasta
½ cup sesame oil
½ cup soy sauce
¼ cup balsamic vinegar
1 tablespoon hot chili oil
¼ cup white sugar
1 teaspoon sesame seeds, or more if desired
1 green onion, chopped
1 red bell pepper, diced

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Whisk together the sesame oil, soy sauce, balsamic vinegar, chili oil, and sugar in a large bowl. Toss the pasta in the dressing, then sprinkle with sesame seeds, green onion, and bell pepper. Serve warm, or cover and refrigerate for a cold salad.

1/4 cup tamari (or use soy sauce)
1/3 cup warm water
2 tablespoons peeled fresh ginger, chopped
1 teaspoon fresh minced garlic
2 tablespoons rice wine vinegar (or use red wine vinegar)
1 1/2 tablespoons sesame oil
3 teaspoons honey
1/2 teaspoon crushed chili pepper flakes (or to taste)
3/4 lb linguine (or use vermicelli or thin spaghetti)
2 tablespoons vegetable oil
4 green onions, chopped
1 red bell pepper, seeded and cut into thick strips
1/4 cup toasted sesame seeds

Steps:

  • Cook the pasta in a large pot of boiling salted water until tender; drain and rinse well under COLD water, then toss with 2 tablespoons vegetable oil, transfer to a large bowl, then add in the red bell pepper and green onions.
  • Using a blender puree all the dressing ingredients until smooth (about 2 minutes).
  • Just before serving pour the dressing over the cooked pasta and veggies, then add in the toasted sesame seeds; toss well to combine.
  • Sprinkle with chopped green onions if desired and serve.

1 cucumber, peeled,sliced and chopped

I got this recipe from the back of a packet of Chang's Fried Noodles. It's so easy and tasty and a real hit. You can use any other Asian fried noodles or even two minute noodles if you can't find Chang's Fried Noodles. I prefer to use pine nuts in this recipe.

1/2-1 Chinese cabbage or 1/2-1 savoy cabbage, shredded
1 (100 g) packet chang or similar fried Chinese noodles
1/2 cup pine nuts or 1/2 cup slivered almonds, lightly toasted in a dry pan until golden brown
6 spring onions, chopped
1/2 cup caster sugar
1/4 cup white wine vinegar or 1/4 cup white vinegar
1 tablespoon soy sauce
1/2 cup olive oil
1 teaspoon sesame oil

Steps:

  • Combine salad ingredients in a large bowl and mix well.
  • Combine dressing ingredients in a jar and mix well (can be stored in fridge).
  • Immediately before serving pour dressing over salad and mix well.

1 bunch green onion, chopped
1/4 cup sesame seeds
2 packages ramen noodles, crunched (Discard Flavor Packets)
1 (3 1/2 ounce) package sliced almonds
3 tablespoons butter
1/4 cup vinegar
1/2 cup sugar
3/4 cup vegetable oil or 3/4 cup olive oil
2 tablespoons soy sauce

Steps:

  • Combine Cabbage and Onions.
  • Refrigerate until ready to toss.
  • Brown Noodles, almonds and Sesame Seeds lightly in Butter.
  • Set aside.
  • Bring to a boil in a pan the vinegar, oil, sugar and soy sauce, just enough to dissolve the sugar.

9 ounces fresh green beans, trimmed and cut on the diagonal
¼ cup lime juice
3 tablespoons canola oil
3 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon Asian (toasted) sesame oil
1 tablespoon minced garlic
1 tablespoon grated orange zest
2 small serrano chile peppers, chopped
2 cups carrots, cut into matchsticks
1 cup thinly sliced green onions

Steps:

  • Fill a saucepan with lightly salted water and bring to a rolling boil. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink, and rinse with cold water until the pasta is cool.
  • Bring a saucepan of lightly salted water to a boil, stir in the green beans, and cook, stirring occasionally, until the beans are bright green and slightly tender, 5 to 8 minutes. Drain the beans, and rinse with cold water to chill.
  • In a large salad bowl, combine lime juice, canola oil, soy sauce, brown sugar, sesame oil, garlic, orange zest, and serrano peppers, stirring until the sugar has dissolved. Allow the dressing to stand for 30 minutes. Lightly toss in the carrots, green onions, linguini and green beans, and season to taste with salt and pepper. Cover and chill before serving.
