'Chinese Buffet' Green Beans image

Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

1 tablespoon oil, peanut or sesame
2 cloves garlic, thinly sliced
1 pound fresh green beans, trimmed
1 tablespoon white sugar
2 tablespoons oyster sauce
2 teaspoons soy sauce

Steps:

  • Heat peanut oil in a wok or large skillet over medium-high heat. Stir in the garlic, and cook until the edges begin to brown, about 20 seconds. Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes. Stir in the sugar, oyster sauce, and soy sauce. Continue cooking and stirring for several minutes until the beans have attained the desired degree of tenderness.

Chinese Take-Out Spicy Green Beans With Pork image

Garlic, ginger, and chiles are the main flavors in this Chinese classic. Although this dish technically fills a portion of your daily allowance of vegetables, it doesn't taste like it. Serve this dish to the vegetable haters in your life. They might actually thank you for it. From the Take-Out Menu Cookbook.

1 lb pork tenderloin, frozen for 30 minutes, then thinly shaved with your sharpest knife
3 tablespoons soy sauce
2 tablespoons rice wine
1 teaspoon szechuan peppercorns or 1/4 teaspoon fresh ground black pepper
1/4 cup chicken stock
1 tablespoon spicy bean sauce
1 tablespoon hoisin sauce
1 1/2 teaspoons chili-garlic sauce
1 1/2 teaspoons sugar
1 teaspoon sesame oil
2 teaspoons cornstarch
1/4 cup peanut oil or 1/4 cup vegetable oil
1 lb green beans, trimmed and snapped in half
3 garlic cloves, minced (1 tablespoon)
1 (1 inch) knob fresh ginger, peeled and minced
4 green onions, thinly sliced
1/4 cup toasted white sesame seeds

Steps:

  • In a small bowl, toss the pork with 2 tablespoons of soy sauce, 1 tablespoon of rice wine, and the peppercorns. Marinate at room temperature while assembling the rest of the ingredients.
  • In a separate bowl, combine the remaining tablespoon of soy sauce, the remaining tablespoon of rice wine, the stock, spicy bean sauce, hoisin, chili garlic sauce, sugar, sesame oil, and cornstarch. Set aside.
  • heat a wok or large frying pan over medium-high heat and add the oil.
  • When the oil is hot, add the beans and stir-fry them for 10 minutes, or until they begin to brown and blister. Remove the beans from the pan using a slotted spoon and pour off all but 2 tablespoons of the oil. Return the pan to the heat, and add the pork, garlic, and ginger. Stir-fry for about 3 minutes, or until there is no longer any pink color to the pork. Add the green onions and cook 1 minute. Add the reserved sauce and green beans and mix well. The sauce will begin to thicken and glaze the pork and beans.
  • To serve, sprinkle with sesame seeds.
  • Variation: Feel free to substitute chicken, beef or shrimp, or tofu for the pork.

vegetable oil for deep-frying
2 tablespoons Japanese soy sauce
2 tablespoons dry sherry
1 tablespoon rice vinegar
1 tablespoon Asian dark sesame oil
1 teaspoon sugar
1/4 teaspoon salt
12 ounces long green beans, trimmed and cut into 3- to 4-inch lengths
2 teaspoons shredded fresh ginger
3 cloves garlic, minced
4 small whole dried red chili peppers

Steps:

  • 1. Heat a large, flat-bottomed wok or large Dutch oven over high heat. Add enough oil to come one-third the way up the sides of the wok or 3 inches deep in the Dutch oven. Heat over high heat until very hot, but not smoking (the surface of the oil will shimmer slightly), or a deep-frying thermometer reads 365°F. While the oil is heating, mix the soy sauce, sherry, rice vinegar, sesame oil, sugar, and salt in a small bowl and set aside. 2. Line a baking sheet with paper towels. In batches, without crowding, deep-fry the beans until crisp-tender and slightly shriveled, about 1 minute. Using a wire-mesh skimmer, transfer the beans to the paper towels and drain. 3. Pour off all but 1 tablespoon of the oil and return the pan to high heat. Add the ginger, garlic, and chilies and stir-fry until fragrant, about 15 seconds. Stir the soy sauce mixture well and stir it into the pan. Return the beans to the pan and stir-fry until coated with the sauce. Serve immediately.

Szechuan Green Beans With Ground Pork image

This is a bit spicy so you may want to decrease the pepper flakes and add more at the end for taste. I made this for a pot-luck Chinese dinner that is why the serving size is for 8. Can be cut in half. Delicious over Chinese white rice.

1 lb ground lean pork
2 teaspoons cornstarch
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 tablespoon peanut oil
5 cups green beans, trimmed and cut in half
4 garlic cloves, grated
4 tablespoons hoisin sauce
2 teaspoons sugar
2 teaspoons red pepper flakes
4 teaspoons low sodium soy sauce
4 cups white rice, hot and cooked

Steps:

  • Steam beans 5 minutes (should be snappy not mushy).
  • Combine the first 4 ingredients in a medium bowl.
  • Heat oil in a large non-stick skillet over med high heat. Saute pork mixture until pork loses it's pink color - stirring to a crumble. Add steamed green beans and garlic - saute for 3-5 minutes more.
  • Combine hoisin sauce, sugar, pepper flakes and soy sauce in a small bowl - stirring with a whisk to incorporate ingredients.
  • Pour mixture into pan with pork and green beans. Cook another 3-5 minutes or until heated through, stirring frequently.
  • Serve over hot rice - Enjoy!
