Chinese chews, a sweet treat made with chopped dates and walnuts, and sprinkled with powdered sugar.

3/4 cup all purpose flour
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped dates
1 cup chopped walnuts
3 eggs, well-beaten
Confectioners sugar, for topping

Steps:

  • Preheat oven to 300° F. Grease and flour an 8 x 12-inch pan - if you use a smaller pan, the baking time will be longer. Note: If you grease the pan, but don't flour it, the squares will stick to the pan and be difficult to remove after baking.
  • Combine flour, sugar (not confectioners sugar), baking powder and salt. Sift with a sifter or fine mesh sieve into a medium sized mixing bowl. If you don't have a sifter, whisk dry ingredients together well to combine.
  • Stir the dates, nuts and well-beaten eggs (I beat the eggs separately with a hand mixer for about 1 minute until fluffy before adding them), into the dry ingredients. It is not necessary to beat the eggs with a mixer, you can beat them by hand with a fork. Make sure ingredients are well combined - the batter will be sticky.
  • Spread the batter out as thinly as possible into the prepared pan.
  • Bake for 30 minutes, or until top is golden brown and a toothpick inserted in the center of the pan comes out clean.
  • Let cool completely, and cut into 1 to 1 1/2-inch squares. Note: Many recipes call for cutting the squares while still warm. In my experience, they are much easier to cut after they've cooled.

Made in a shallow cookie pan and cut into squares then rolled and tossed in confectioner's sugar. Chewy and wonderful!

2 cups pureed dates
2 cups white sugar
2 teaspoons baking powder
4 eggs
2 cups ground pecans
1 ½ cups cake flour
½ teaspoon salt
½ cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Mix dry ingredients except confectioner's sugar. Add nuts and dates.
  • Then add eggs which have been lightly beaten. Mix well.
  • Press mixture into ungreased cookie sheet as thin as possible. Bake for 15-20 minutes.
  • Cut into 1 -2 inch squares while hot. Roll into balls as soon as the squares are cool enough to handle then roll in confectioner's sugar. Allow to cool completely before eating.

I make these every Christmas for a cookie exchange. Super easy and oh so good! My grown children and grandchildren always ask when I will be making them. Sometimes I add raisins- very good both ways.

1-12 oz pkg chocolate chips
1-12 oz pkg butterscotch chips
1-large can(s) chow mein noodles
2 c peanuts, dry roasted

Steps:

  • 1. Put both bags of chips in a large pot or dutch oven over the lowest setting* on your stove. Stir with a wooden spoon until the chips have melted. *very important or the chocolate may burn!
  • 2. Remove from heat and add the chow mein noodles and break some up with your spoon. Add the peanuts and mix again.
  • 3. Drop tablespoons of the mixture onto large sheets of wax paper spread out on your counter. When the chocolate hardens you can remove and store in plastic containers. Use the wax paper to put on top of each layer when stacking them.

My mother-in-law's Chinese Chews are buttery, chewy blondies with dates and walnuts, dusted in confectioners sugar. An old family favorite!

8.5 ounces pitted dates
1 cup chopped walnuts
8 Tablespoons salted butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
confectioners sugar for dusting

Steps:

  • Preheat your oven to 350 degrees F. Prepare an 8x8 pan by lining it with parchment paper and folding it over the edges of the pan to make for easy removal and cleanup. (If you don't have parchment paper, use foil and grease it well.)
  • Cut up the dates into small pieces with kitchen scissors. (They're really sticky to chop with a knife and don't do well in a food processor or blender.) It's best to cut a pitted date in half the long way, then cut those pieces in half the long way again. Then, snip each strip into pieces.
  • If starting with walnut halves, chop them until you have one cup.
  • In a glass bowl or other microwave-safe bowl, melt your butter in the microwave, covering it with wax paper to prevent splashing. Stir in the sugar.
  • Add the eggs and vanilla to your bowl and mix with a spoon until blended. Add the flour and salt and stir. Stir in the dates and nuts until blended.
  • Pour the batter into your baking pan and use a spatula to even it out. Bake for 35-40 minutes, or until the top is golden brown. A toothpick or cake tester inserted in the center should come out clean.
  • Let the pan cool on a rack for 10 minutes. Then lift out the Chinese Chews by grasping the parchment paper and transferring everything to a cutting board. Cut into squares (I did 16 large ones, but smaller squares work well, since they are rich tasting.)
  • If you're not planning to freeze them, dust with confectioner's sugar. Transfer the bars to a rack to finish cooling. They taste best when completely cooled.
  • Store at room temperature in an airtight container. You can freeze them without the confectioner's sugar and add the sugar when they are thawed.

1 c butter
2 c sugar
2 eggs
3 c sifted flour
1 tsp salt
1 tsp soda
1 c coconut
2 c washed and dried raisins
2 c chopped nuts
2 tsp vanilla - a little almond flavor can be added

Steps:

  • 1. Cream butter and sugar. Add remaining ingredients.
  • 2. If drop cookies are to be made, chill dough before dropping on a slightly greased sheet pan. If Chews or bars or strips are to be made, press dough onto a slightly greased and floured sheet and bake at 325 to 350 degrees until well set and a light brown. Do not overcook.
  • 3. Remove from oven and, while hot, brush with a powdered sugar and water glaze.

Easy, yummy cookie. I make these for the holiday cookie exchange, but I felt so guilty for making such an easy cookie, I didn't make them one year. The next year I was asked to please make them again, people were asking for them.

1 (10 ounce) bag of crispy chow mein noodles
1 (16 ounce) bag semi-sweet chocolate chips
1 (16 ounce) bag butterscotch chips or 1 (16 ounce) bag peanut butter chips (my variation)

Steps:

  • Make a clear space on your counter or table.
  • Using clean newspaper, cover the space with paper.
  • Melt chocolate and butterscotch (or peanutbutter) chips in a microwave safe bowl in the microwave for about 2 minutes, until smooth.
  • Check and stir the chips about every 30 seconds, as needed.
  • While the chips are melting, dump the whole bag of chowmein noodles into a large mixing bowl.
  • When the chips are ready, quickly mix them into the chowmein noodles.
  • Working quickly, place teaspoon fulls of the mixture onto newspaper to dry.
  • Cookies are ready when they are dry and set.
  • Enjoy.

1 cup chopped dates or 1 cup prune

Steps:

  • Sift dry ingredients into a mixing bowl.
  • Stir in dates and nuts.
  • Add eggs.
  • Mix thoroughly and spread into a greased 15 1/2 x 10 1/2 inch cookie sheet.
  • Bake at 375 for about 20 minutes.
  • Cut into squares or finger lengths.
  • Remove to a cooling rack and roll in confex sugar if desired (I DO).
