30 g butter
1 garlic clove, crushed
1 teaspoon chili powder
1 teaspoon flaked sea salt
1 cup brazil nut

Steps:

  • Melt butter in a heavy based pan.
  • Add garlic, chilli and salt and stir over medium heat for 1 minute.
  • Toss brazil nuts in and continue to stir for 1-2 minutes.
  • Drain on paper towel and allow to cool.

Nuts, popcorn, pretzels and cereal are the snack champions in this garlic-herb-flavored mix.

1 tablespoon minced fresh rosemary
1 tablespoon minced fresh sage
1 tablespoon minced fresh thyme
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
Vegetable or canola oil, for the baking sheet
1 large egg white
1 cup unsalted raw almonds
1 cup rice or corn cereal squares
1 cup unsalted raw peanuts
1 cup unsalted raw pecans
1 cup mini pretzels
1/2 cup corn nuts
1 cup cheese popcorn

Steps:

  • Mix together the rosemary, sage, thyme, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a small bowl and set aside.
  • Preheat the oven to 350 degrees F. Lightly coat a rimmed baking sheet with oil.
  • Put the egg white in a large bowl and whisk until frothy. Add the almonds, cereal, peanuts, pecans, pretzels and corn nuts and toss to coat in the egg white. Add the spice blend and toss to coat.
  • Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then stir in the popcorn and transfer to a large bowl.

2 tablespoons popcorn kernels
1 tablespoon vegetable oil
2 cups Chex (or other cereal squares)
2 cups Cheez-It crackers (or other mini cheddar crackers)
1 cup mini pretzel twists
1 cup smoked almonds
6 tablespoons unsalted butter
1 tablespoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Kosher salt

Steps:

  • Preheat the oven to 325 degrees F and line a baking sheet with parchment paper. Heat 3 popcorn kernels and the vegetable oil in a large saucepan over medium heat until 1 kernel pops; add the remaining kernels, cover and cook, shaking the pan occasionally, until the popping subsides. Remove from the heat and transfer to a large bowl.
  • Add the cereal, crackers, pretzels and almonds; toss to combine. Melt the butter in a small saucepan over low heat. Stir in the chili powder, paprika and garlic powder. Drizzle over the popcorn mixture and toss with a rubber spatula to coat; season with salt.
  • Spread the snack mix on the prepared baking sheet. Bake, stirring once or twice, until lightly toasted, about 10 minutes. Let cool completely. Store in an airtight container for up to 5 days.

3 cups mixed nuts or 3 cups peanuts

  • In a bowl, mix butter, chili seasoning, lime juice, garlic salt. Add nuts and mix to coat well.
  • Spread nuts on a baking sheet with parchment paper.
  • Bake in a preheated oven of 325 F for 15 minutes (shake 2 times). Spread nuts on foil sheet and let cool.

25g sugar
½ tsp cayenne pepper
300g pecan nuts

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Mix together the butter, sugar and cayenne, then toss through the pecans, and season with salt if you like. Line a baking sheet with parchment paper, then spread out the nuts in a single layer. Cook in the oven for 5 mins. Give the nuts a good stir and cook for another 5 mins or until they are crisp. Remove and leave to cool. You can store the nuts in an airtight container for up to 3 days.

1 egg white
½ tsp chilli flakes
½ tsp medium curry powder (or gluten-free alternative)
½ tsp cayenne pepper
½ tsp ground ginger
5 tbsp soft brown sugar
350g mixed nuts

Steps:

  • Heat oven to 200C/180C fan/gas 6. Whisk the egg white briefly to break it up. Add the spices and sugar, and whisk to combine. Add the nuts and stir or toss to coat.
  • Line a baking tray with baking parchment, then pour on the nuts. Sprinkle with salt to taste. Roast for 10-15 mins. Use a spatula or spoon to break up and toss the nuts halfway through cooking. Leave to cool completely, then break up to serve.

1 can (11-1/2 ounces) mixed nuts
1 package (11 ounces) pretzel sticks
1 package (6.6 ounces) Goldfish cheddar crackers
1 cup butter, cubed
1/2 cup packed brown sugar
1 tablespoon garlic powder
1 tablespoon chili powder
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 350°. In a large bowl, combine corn chips, nuts, pretzels and crackers. In a small saucepan, bring butter, brown sugar, garlic powder and chili powder to a boil. Remove from heat; stir in baking soda. Pour over snack mixture and toss to coat. , Transfer to three greased 15x10x1-in. baking pans. Bake 10-12 minutes or until lightly toasted.   • Bring a large pan of salted water to the boil. Add the stalks and cook for 2 mins, then add the florets and cook for 2 mins more.
  • Gently heat the garlic and oil together until the garlic just starts to sizzle and brown, then remove from the heat and add the chilli. Drain the broccoli really well and toss in the garlic oil to serve.
