CHILLED VODKA AND TOMATO GAZPACHO
This originally started out as a new cocktail I was creating, but after a while I realized it makes a great quick appetizer "shot." The vodka is so subtle that the gazpacho is really the main attraction.

Steps:
- In a blender, combine all of the ingredients except for the vodka, celery salt, bacon, and pepper and purée until smooth.
- Strain using a fine mesh strainer and chill for 1 hour. Rim shot glasses by dipping them in the vodka and then the celery salt. Pour gazpacho into the shot glass and garnish with bacon.

Steps:
- Place the tomato juice, tomato, cucumber, capsicum, onion, garlic and Worcestershire sauce in the jug of a blender and blend until almost smooth.
- Add Tabasco sauce.
- Taste and season with salt and pepper.
- Divide vodka evenly among shot glasses.
- Top with the gazpacho and serve immediately.

GAZPACHO VODKA COOLER
Steps:
- Using a small melon baller or spoon, scoop two-thirds of the way down into one of the 2-inch pieces of cucumber, forming a cucumber shot glass. Refrigerate until ready to use.
- Muddle the grape tomatoes, 4 of the basil leaves and remaining cucumber piece in a cocktail shaker until well crushed. Add the vodka, vinegar, lemon juice and some ice to the cocktail shaker and shake until well mixed. Strain into the cucumber shot glass and garnish with the remaining basil leaf.

Steps:
- Set aside a few pieces of tomato, cucumber, and bell peppers for garnish.
- Combine remaining tomatoes, cucumber, and bell peppers with onion, jalapeno, and garlic in a food processor; process until all vegetable are finely chopped. Mix in olive oil, sherry vinegar, and salt.
- Cover and refrigerate until chilled, at least 1 hour.
- Season with pepper before serving and garnish with reserved tomatoes, cucumbers, and bell peppers.

- Place the bread slices in a bowl with 1/2 cup of water. Let the bread soak while you work on the tomatoes. Squeeze the bread to ring out any water
- Place the tomatoes in a large pot of boiling water for 40 seconds or so. With a slotted spoon, remove the tomatoes from the boiling water and let them cool for about a minute or so. When they are cool enough to handle, gently peel the skins off.
- In a large food processor or blender, place the tomatoes with the cucumbers, celery, bell peppers, green onions and garlic. Top with the soaked bread. Pour 1/2 cup extra virgin olive oil and the sherry vinegar. Run the processor for a few seconds then add the salt, pepper, cumin, cayenne pepper (optional) and a pinch of sugar; blend.
- Test the gazpacho and if it's too thick, add a little water and blend again until you reach the desired texture.
