6 white peaches, peeled,pitted and cut lengthwise into thin wedges
1 cup confectioners' sugar
2 cups dry white wine

Steps:

  • Place peaches in a large bowl.
  • In a smaller bowl whisk together the wine and sugar until the sugar is totally dissolved.
  • Pour dressing over peaches and chill for at least 1 hour, up to 12 hours before serving.
  • Gently toss and serve.

Sweetened Grilled Peaches and Pears in White Wine image

Great summer desert. Grilled sweet peaches and pears marinated in a lightly sweetened white wine served with fresh mint and a creamy mascarpone topping.

1 cup white wine (Chardonnay works well for this)
2 tablespoons brown sugar
1/4 teaspoon allspice
1 tablespoon of fresh mint
4 peaches (I prefer white if you can find them)
4 bartlette pears
1 cup mascarpone cheese
1 tablespoon honey
1 tablespoon orange juice
1/2 cup pistachios, toasted

Steps:

  • Cut the peaches and pears in thick slices, don't peel, just nice thick slices. You will be grilling these so you don't want them too thin.
  • Mix the wine, mint, allspice and brown sugar in a pie pan or small bowl and add the peaches and pears and let marinade 1-2 hours.
  • Mix the mascarpone, honey and orange juice and chill in a small bowl.
  • Toast the pistachios. I rough chop and then lightly toast in a dry saute pan for 2-3 minutes just to lightly toast and intensify the flavors. Remove and let cool.
  • Grill on medium heat on a grill pan or they can be done on a outdoor grill as well. Grill until until nice grill marks on each side but not overdone.
  • Just serve the fresh grilled fruit with a dollop of the mascarpone cheese topping and toasted pistachios.

With their flat bottoms, white donut peaches are easier to serve and eat than rounded ones. Lemon verbena is a fragrant herb that can be found at many farmers' markets in midsummer.

2 cups dry rose wine
1/2 cup sugar
1 strip (about 4 inches) lemon zest
4 lemon verbena sprigs (each about 6 inches long), plus more for garnish (optional)
1 1/2 cups water
4 large white donut peaches (1 1/4 pounds total)

Steps:

  • Bring wine, sugar, lemon zest, lemon verbena, and water to a simmer in a medium saucepan over high heat. Carefully add peaches, and reduce heat to medium. Gently simmer until tender all the way to the pit when pierced with a skewer or a sharp knife, 20 to 25 minutes.
  • Using a slotted spoon, transfer peaches to a plate. Let cool slightly. When cool enough to handle, peel off skin.
  • Meanwhile, return poaching liquid to a simmer, and cook until reduced by about three-quarters, about 20 minutes. Pour through a sieve, and discard zest and leaves. (You should have about 1 cup syrup.) Let cool for 10 minutes.
  • Refrigerate single layers of peaches and the syrup in separate airtight containers until cold, at least 30 minutes (or overnight). To serve, place a peach on a serving plate and spoon about 3 tablespoons syrup around each peach. Garnish with lemon verbena if desired.

I once worked with a French waiter known for a fierce scowl that could cause even the most self-assured chef and diner to wither. He tasted one spoonful of these peaches and told me that this was his idea of the perfect dessert. It was one of the few times I saw him smile. But what's not to like? Icy peaches floating in sweet red wine is pretty close to perfection, if I do say so myself. His good mood didn't last very long. But after that, every time we passed each other, I knew from the tiny gleam in his eye that I'd won the admiration of my toughest customer.

Number Of Ingredients 3

3/4 cup (150 g) sugar
2 cups (500 ml) fruity red wine, such as Merlot, Zinfandel, or Beaujolais
4 ripe yellow or white medium peaches (1 1/2 pounds/675 g)

Steps:

  • In a large nonreactive bowl, whisk together the sugar and wine until the sugar is completely dissolved.
  • Peel the peaches, halve them, and remove the pits. Cut each peach half into slices 1 inch (3 cm) thick and submerge them in the wine. Taste and add more sugar if desired. Cover and chill until cold, at least 4 hours.
  • The peaches should be enjoyed as cold as possible. Serve them right from the refrigerator in well-chilled bowls with lots of the cold sweetened wine. Crisp cookies, such as Pecan-Butterscotch Tuiles (page 214) or Croquants (page 211), are great served alongside.
  • You can make the recipe up to 8 hours in advance and keep the mixture chilled until ready to serve. You can also chill the sweetened wine a few days in advance and add the peaches the day you plan to serve them.
  • Use yellow and white nectarines instead of peaches (there's no need to peel the nectarines).
  • Superfine or baker's sugar dissolves much more quickly than regular granulated sugar. To make your own superfine sugar, pulse granulated sugar in a blender or a food processor a few times until the texture is very fine.

8 ripe peaches, washed well and rubbed dry (white or yellow, or a mixture)
4 tablespoons sugar (to taste)
1 (750 ml) bottle dry white wine

Steps:

  • Slice the peaches thinly. Combine the peaches and sugar, and toss gently to mix.
  • Add the wine, and toss gently again.
  • Taste, and adjust sugar as needed. Cover, and refrigerate for several hours - or up to a few days, if you want.
  • Serve the peaches cold, in a glass or shallow bowl, with a small ladleful of their liquid. Eat the peaches with a fork and then drink the liquid left in the glass.
