36 wonton wrappers
1/2 cup buttermilk ranch salad dressing
1 envelope reduced-sodium chili seasoning mix
1-1/2 cups shredded rotisserie chicken
1 cup shredded sharp cheddar cheese
Sour cream and sliced green onions, optional

Steps:

  • Preheat oven to 350°. Press wonton wrappers into greased miniature muffin cups. Bake 4-6 minutes or until lightly browned., In a small bowl, mix salad dressing and seasoning mix; add chicken and toss to coat. Spoon 1 tablespoon filling into each wonton cup. Sprinkle with cheese., Bake 8-10 minutes longer or until heated through and wrappers are golden brown. Serve warm. If desired, top with sour cream and green onions before serving.

SICHUAN SPICY WONTON IN CHILI OIL (红油抄手)

Tender meat in slippery wrappers seasoned with a chili oil based sauce, Sichuan spicy wonton combines great flavour and texture. Follow my recipe to make it in 30 mins.

Number Of Ingredients 14

2 stalks scallions
1 tbsp minced ginger
80 ml warm water
200 g minced pork ( or beef/chicken/turkey)
1 medium egg
¼ tsp salt
1 pinch ground white pepper
40 ready-made wonton wrappers
1 tsp minced garlic
1 tbsp light soy sauce
1 tsp black rice vinegar
¼ tsp ground Sichuan pepper (see note 1)
¼ tsp sugar
2 tbsp homemade chili oil ( or to taste, see note 2)

Steps:

  • Finely chop the scallions. Put the white part into a bowl (keep the green part for garnishing the dish later). Add the ginger. Pour in the water. Leave to infuse for 5 mins.
  • In another bowl, mix the minced meat, egg, salt and white pepper until well combined.
  • Remove the scallions and ginger then pour the water into the meat in batches while stirring in one direction until the liquid is fully absorbed.
  • Lay a wonton wrapper on your hand. Dip the back of a spoon in water then use it to wet two neighbouring edges of the wrapper.
  • Put the filling (about a teaspoon) in the middle. Fold the wrapper to form a triangle. Gently press to seal.
  • Wet one of the sharp corners of the triangle. Put the other sharp corner over the wet corner. Press to stick two corners securely. Repeat to finish all the wrappers.
  • Bring a large pot of water to a full boil. Gently slide in the wontons. Cook over high heat. Push them around with a spoon to prevent sticking to the bottom (You may cook all 40 wontons at once or in two batches depending on the size of your cookware. They need to be able to move around with ample space).
  • Once all the wontons rise to the surface, cook for a further minute.
  • While waiting for the wontons to cook, add all the ingredients for the sauce in each serving bowl.
  • Use a slotted spoon to take out the wontons. Add them into serving bowls.
  • Garnish with the green part of the scallions saved from step one. Mix well then serve immediately.
  • Uncooked wontons freeze well. Lay them on a tray and keep in the freezer until fully frozen. Transfer to an airtight container/bag and put back to the freezer. Consume within 3 months.
  • Follow the same procedure to cook frozen wontons. Defrosting is unnecessary and not recommended.

2 tablespoons salted butter, melted
12 wonton wrappers
One 15-ounce can black beans, drained and rinsed
One 4-ounce can diced green chiles, drained
2 teaspoons chili powder
Juice of 1/2 lime
1/2 cup grated Monterey Jack cheese
1/2 small avocado, diced
1/3 cup pico de gallo
1/4 cup sour cream
Hot sauce, if desired
1/4 cup fresh cilantro leaves

Steps:

  • For the wonton cups: Preheat the oven to 375 degrees F.
  • Brush 12 cups of a mini muffin pan with the butter. Fit 1 wonton wrapper into each cup, folding the sides as needed.
  • In a small bowl, toss together the beans, green chiles, chili powder and lime juice. Spoon some of the bean mixture into each cup, about a heaping tablespoon each. Bake until the filling is warmed through, about 12 minutes. Remove the pan and top each cup with a pinch of cheese. Return the pan to the oven and continue to bake until the cheese is melted and the wontons are golden, another 5 minutes.
  • For the toppings: Let the taco cups cool in the pan for a minute or two. Transfer the taco cups to a platter and top each with some avocado, pico de gallo, a small dollop of sour cream, hot sauce, if using, and cilantro.

These hearty little cups are meaty, filling and perfect for an easy weeknight meal or while watching the game!

¾ lb uncooked 95% lean ground beef
1/3 cup chopped onion
1 clove garlic (minced)
½ cup drained and rinsed canned kidney beans
1 (14.5 oz) can petite diced tomatoes
2 tablespoons chili powder
1 teaspoon cumin
½ teaspoon salt
¼ teaspoon cayenne pepper
24 wonton wrappers
4 oz 50% reduced fat sharp cheddar cheese (shredded)

Steps:

  • Pre-heat the oven to 375. Lightly mist 12 cups in a standard muffin/cupcake tin with cooking spray and set aside.
  • Place the ground beef in a medium skillet and bring to medium heat. Use a wooden spoon to break it up into small pieces as it cooks. When the meat is breaking up and almost browned, add the onions and the garlic and stir together. Continue to cook another few minutes until the meat is browned and onions are softened.
  • Add the kidney beans, diced tomatoes, chili powder, salt, cumin and cayenne to the meat mixture and stir together until well combined. Reduce the heat to low and simmer, uncovered, for 10 minutes or until thickened.
  • Push a wonton wrapper into the bottom of each of the sprayed cups in the muffin tin. Using about half of the chili mixture, spoon evenly into the wonton wrappers. Sprinkle about half of the shredded cheddar evenly over the top of each cup. Press another wonton wrapper on top and repeat the layering steps with the remaining chili mixture and shredded cheddar.
  • Bake for 18-20 minutes until the wontons are golden brown and the contents are heated through. Remove the muffin tin from the oven and allow to cool for 2-3 minutes before removing from the tin.

1/2 lb cooked chicken breast (about 1 1/4 cups)
2 small yellow squash
1 medium green or red bell pepper
1 c corn kernels, frozen
1 jalapeno (optional)
3/4 c marinara sauce
1 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
salt and pepper, to taste
24 square wonton wrappers

Steps:

  • 1. Dice up the cooked chicken, yellow squash, bell pepper, and jalapeno. Combine in a large bowl with the corn, marinara sauce, and spices. Set aside.
  • 2. Preheat oven to 375 degrees.
  • 3. Prepare a muffin tin with nonstick spray. Line with 2 wonton wrappers in each well, overlapping them to create a "cup."
  • 4. Fill each wonton cup with the mixture. Bake 10-15 minutes, or until golden brown around the edges. If desired, add shredded cheese during the last 5 minutes of cooking.

I got this recipe from a cookbook called Best American Recipes. The time for preparing and cook are a guess. Chill time is not included in prep. time. They cook in about 3-4 minutes.

16 ounces shredded monterey jack cheese (4 cups)
2/3 cup diced green chilis
1/3 cup diced jalapeno pepper
1 (1 lb) package wonton skins
peanut oil
salt

Steps:

  • Combine the cheese with both peppers; stir well.
  • Prepare 1 wonton skin at a time.
  • Spoon about 1 1/2 teaspoons of cheese/chile mixture in the center of wonton skin.
  • Lightly moisten the edge of the wonton skin and fold in half to make a triangle pressing edges to seal.
  • Repeat with remaining wonton skins and cheese mixture.
  • Chill for 20 minutes.
  • Heat peanut oil to 375*.
  • Fry wontons in hot oil until golden brown, turning once.
  • Drain on paper towel and sprinkle with salt.
  • Serve with avocado dip.
