Vegetable oil, for greasing
1 1/2 tablespoons ancho chile powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/8 teaspoon ground cloves
Kosher salt and freshly ground pepper
3 pounds chicken wings, split at the joint, tips removed

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 450 degrees F. Line 2 baking sheets with parchment paper and lightly oil. Mix the chile powder, cumin, coriander, cloves, 2 teaspoons salt and 3/4 teaspoon pepper in a large bowl. Add the wings and toss to coat.
  • Spread the wings, spaced apart, on the prepared baking sheets. Bake, turning once, until browned and crisp, about 40 minutes.
  • Hot:
  • Ancho chile powder gives these a slightly smoky kick; serious wing lovers will want to step up the heat.
  • Hotter:
  • Put 2 jalapenos, 1/2 cup cilantro, 1/4 teaspoon cayenne, the juice of 1 lime and 1 1/2 tablespoons vegetable oil in a food processor and finely chop. Toss with the wings; marinate 2 hours. Brush off the marinade and rub and bake as directed, omitting the black pepper.
  • Hottest:
  • Marinate the wings in the jalapeno mixture (see above), then rub and bake as directed. About 5 minutes before they're finished baking, brush with a mixture of 3 tablespoons each honey and Sriracha sauce (hot Asian chili sauce).

1/2 cup chili powder
1/2 cup light brown sugar
1/2 teaspoon cayenne pepper
1/3 cup cider vinegar
3 tablespoons vegetable oil, plus more for grill
Kosher salt and freshly ground black pepper
4 pounds chicken wings (12 whole wings)

Steps:

  • 1. Whisk the chili, sugar, cayenne, vinegar, 3 tablespoons oil, 1 tablespoon salt, and 1/4 teaspoon pepper in a bowl to make a thick paste. Put half the paste in a large re-sealable plastic bag.
  • 2. Remove the wing tips and discard. Pat the wings dry. Add the wings to the bag and seal. Toss the wings in a bag to evenly coat with the mixture. Marinate at room temperature 30 minutes or refrigerate up to 2 hours.
  • 3. Preheat a grill over medium-high heat. Lightly brush the grill grate with oil. Evenly arrange the wings on the grill, cook until crisp and just cooked through, 4 to 5 minutes per side. Brush the wings with the reserved rub and continue to grill until glazed, about 2 minutes more. Transfer the wings to a platter. Serve.

3/4 cup cherry preserves

Steps:

  • Cut ribs into serving-size pieces; sprinkle with pepper. Place in a 5- or 6-qt. slow cooker. Combine the remaining ingredients; pour over ribs. Cook, covered, on low until meat is tender, 6-8 hours. Serve with sauce.

20 chicken wings, or drumettes
1 cup BBQ sauce
½ cup honey

Steps:

  • Preheat oven to 425°F (220°C).
  • In a bowl, combine flour, chili powder, salt, pepper, paprika, and garlic powder. Coat the wings in the flour evenly, shaking off any excess.
  • Place the floured wings on a parchment paper-lined baking sheet and spread them out in a single layer.
  • Bake for 45 minutes, flipping halfway through, until skin is crispy and golden brown.
  • Preheat oven to 500°F (250°C).
  • In a separate bowl, combine the BBQ sauce and the honey. Stir the cooked wings in the sauce and coat them evenly.

1 (12 fluid ounce) can cola soft drink (such as Coke®)
1 (1.41 ounce) package sazon seasoning (such as Goya®)
1 teaspoon dry mustard
1 teaspoon ground cayenne pepper
1 teaspoon seafood seasoning (such as Old Bay®)
1 teaspoon celery salt
1 tablespoon light brown sugar, or to taste
1 tablespoon BBQ seasoning (such as McCormick®), or to taste
1 cup hot pepper sauce (such as Frank's RedHot®), divided
cooking spray

Steps:

  • Combine wings and cola in a large bowl. Place in the fridge to marinate for 1 hour.
  • Mix sazon seasoning, mustard, cayenne pepper, seafood seasoning, celery salt, brown sugar, and BBQ seasoning together for the rub.
  • Drain wings and discard cola. Mix wings thoroughly with 1/2 cup hot sauce, then toss in the rub to coat.
  • Preheat oven to 425 degrees F (218 degrees C). Grease a broiler pan with cooking spray.
