CHILI LIME PEACH CHICKEN
Chili Lime Peach Chicken -a fast and healthy weeknight dinner highlighting fresh juicy peaches. Can be made with breast or thigh meat. 25-30 minutes.

- Preheat oven to 400 F (please see notes)
- In a small bowl mix chili powder, cumin, smoked paprika, chipotle and salt.
- Season all sides of chicken generously with the spice mix.
- Heat oil in a skillet over medium to medium-high heat and sear the chicken, top side down until deeply golden, about 5-7 minutes. (If using skin-on, get that skin crispy!). Turn and sear 4-5 minutes then set aside, and cover with foil.
- To the same skillet, over medium heat add the shallots. Saute stirring often until tender about 3-4 minutes. Add the peaches. Gently saute for 2 minutes, turning them over after they just begin to soften and caramelize. Don't over cook them here. Squeeze with a couple of tablespoons of lime juice and drizzle 1 tablespoon honey, stir carefully with the goal of keeping the peaches intact. Once they are heated through turn heat off.
- Nestle the chicken back into the skillet with the peaches, and if using chicken breast, just simmer until cooked through. ( 160F) If using thighs, place in the oven until cooked through.(165F)
- Squeeze chicken with lime and garnish with cilantro, serving in the skillet, or place all on a platter, spooning the flavorful pan juices over top, garnishing last.

- Place flour and sugar in a food processor; pulse until blended. Add butter; pulse until butter is the size of peas. Add 1/2 cup cheese; pulse 1-2 times. Transfer flour mixture to a large bowl. Mix together egg yolk and 6 tablespoons ice water; gradually add to flour mixture. Toss with a fork until dough holds together when pressed, adding more water if needed. Divide dough in half. Shape each into a disk. Wrap and refrigerate 30 minutes or overnight., Preheat oven to 450°. Wrap chopped green chiles in 3 layers of paper towel and squeeze gently to remove excess moisture. In a large bowl, combine sugar, flour, cinnamon, nutmeg and salt. Add peaches and green chiles; toss to coat., On a lightly floured surface, roll 1 dough portion into a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust even with rim. Sprinkle bottom with cheese. Add filling; dot with butter. Roll out remaining dough; make a lattice crust. Place over filling. Trim, seal and flute edge., Bake on lower rack for 10 minutes. Reduce oven setting to 350°. Bake 35-40 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack.

AIR FRYER SALMON WITH SPICY PEACH GLAZE
A quick and tasty dinner for two can be ready in minutes! Fresh or thawed frozen salmon filets are air-fried, then coated with a sweet-spicy glaze. Add some sesame seeds, sliced scallions, and a light squeeze of lemon juice for extra flavor, if you like. We like these with a steamed green vegetable and rice, or roasted potatoes and a salad. With either menu, it's great for a quick and elegant meal on a weeknight, or for an easy start to the weekend. Want to serve four people? Simply double the recipe, and adjust the cook time by a couple of minutes.

- Stir peach preserves, minced garlic, powdered ginger, chili garlic sauce, and lemon juice together in a microwave-safe bowl until blended. Microwave on high for 30 to 35 seconds, or until boiling. Carefully remove from the microwave and stir again; set aside.
- Create a foil sling for the air fryer by cutting a piece of foil wide enough to cover the bottom of the air fryer basket and go up two sides about 2" inches. Spray the foil with cooking spray and place in the basket. Poke a few holes in the foil to align with the holes in the basket to allow airflow.
- Season both sides of the salmon fillets with salt and pepper and place on the foil sling. Lightly spray with cooking spray.
- Air fry at 390 degrees F (198 degrees C) for 8 minutes. Test for doneness with an instant read thermometer. Farmed salmon is "medium" at 125 degrees F (51 degrees C), and wild salmon is "medium" at 120 degrees F (48 degrees C). If needed, add air frying time in 3-minute increments, until salmon reaches preferred doneness.
- Lift the salmon filets from the air fryer using the sides of the foil sling.
- To serve, pour prepared glaze over fillets and use the remainder of the glaze as a sauce. Sprinkle fillets with sesame seeds and green onions and drizzle with lemon juice.
