28 ounces crushed tomatoes
1 1/2 teaspoons garlic powder
1/2 teaspoon oregano
1/2 teaspoon onion powder
5 tablespoons olive oil
2 teaspoons sugar substitute
1/3 teaspoon salt
3 garlic cloves
1/2 small red bell pepper
6 boneless skinless chicken breasts
salt and pepper
1 1/2 cups mozzarella cheese

Steps:

  • Put 2 tbsp olive oil in pan. Crush garlic and finely chop bell pepper. Add to pan.
  • Saute slowly till soft. Add crushed tomatoes, seasoning and sweetener. Let sauce simmer 7 minutes. Then add 1 more tbsp olive oil and simmer 3 more minutes.
  • Saute chicken in 2 tbsp olive oil with salt and pepper. Once done place in pan and cover each breast with 1/4 cup cheese.
  • Place in broiler till melted then top with marinara sauce.

Since I'm very particular about chili I look at new recipes for the dish with a skeptical eye. This one, published in the Chicago Tribune on 1/11/06 looked interesting and turned out to be quite good. It wasn't nearly spicy enough so I recommend increasing the amount of jalapenos to 6 or more and at least doubling the amount of chili powder.

1 tablespoon vegetable oil
1 lb Italian sausage, casings removed & crumbled
1 lb ground beef
1 large onion, chopped
1 green bell pepper, seeded, chopped
4 garlic cloves, minced
2 -6 jalapenos, seeds removed & chopped
1 tablespoon chili powder
1 tablespoon cumin seed
3/4 teaspoon salt
1 (28 ounce) can chopped tomatoes, with juice
1 (15 ounce) can undrained kidney beans
1 (15 ounce) can undrained great northern beans
1 (14 1/2 ounce) can chicken broth
1 (6 ounce) can tomato paste
1/4 cup chopped cilantro
1/4 cup chopped parsley
shredded cheese (optional)
chopped onion (optional)
sliced jalapeno (optional)
chopped tomato (optional)

Steps:

  • Heat oil in a Dutch oven over medium heat.
  • Add sausage and beef to oil. Cook until browned, about 8 minutes.
  • Stir in onion, bell pepper, garlic, jalapenos, chili powder, cumin seeds and salt. Cook, stirring often, until onion softens, about 4 minutes.
  • Add tomatoes, beans, broth, tomato paste, cilantro and parsley; stir to combine. Heat to a boil; reduce to a simmer. Cook, partially covered, until flavors have blended, 2 1/2-3 hours.
  • Taste and adjust seasonings.
  • Serve with toppings on the side if desired.

1 sweet onion
3 teaspoons minced garlic
1 (4 ounce) can diced green chilies
6 cups chicken broth
2 tablespoons olive oil
2 teaspoons chili powder
2 teaspoons cumin
1 (6 ounce) can tomato paste
1 lb cooked chicken, shredded
1 cup grated cheese
1 lime
salt and pepper

Steps:

  • Puree first three ingredients.
  • Heat olive oil, and add puree, chili powder, cumin and tomato paste. Saute. Stirring constantly for 1 minute. Add broth and simmer for 15 minutes.
  • Add chicken, lime, salt, and pepper. Simmer for 1-2 hours.
  • When serving add cheese to each bowl. Garnish with sour cream and diced tomatoes.

1 lb thick sliced bacon, cut into chunks
1 green pepper, sliced
1 onion, sliced

Steps:

  • Fry bacon in a deep skillet until crisp.
  • Drain oil, reserving about two tablespoons of fat.
  • Crumble bacon into skillet.
  • Add cabbage, onions and peppers into skillet and cook, stirring occasionally, until cabbage is wilted but still a little crisp.
  • Add seasonings to taste and serve immediately.
