Steps:

  • 1. Heat chili con carne, plain or with beans, turn into hot serving dish; top with fried eggs. This is also delicious with scrambled, poached or shirred eggs.

1 (7 ounce) can whole-kernel corn, drained
4 eggs, room temperature
3 slices American Cheese, cut diagonally into halves

Steps:

  • Stir chili with beans and corn together in a large skillet over medium heat; cook until heated through, about 5 minutes.
  • Break eggs onto chili mixture and top eggs with American cheese.
  • Cover skillet and cook until eggs are set and cheese is melted, about 10 minutes.

1 (4 ounce) can hot green chili peppers
1 -2 teaspoon all-purpose flour
1/4 teaspoon salt
4 eggs

Steps:

  • Sieve chili peppers and their liquid into 7 or 8 inch skillet.
  • Stir in flour and salt.
  • Bring to boil and simmer for a few minutes, until slightly thickened, stirring constantly.
  • Space 4 eggs on top of chili sauce, cover, and simmer over low heat until poached to desired doneness.
  • Serve with chili sauce from pan.
  • Woman's Day.
