3 eggs
1 1/4 cups milk
1 1/4 cups flour, sifted
1/4 teaspoon salt
3 tablespoons butter, melted
3/4 cup sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 400°F.
  • Generously butter 6 cups in a popover pan or 6 six ounce custard cups.
  • In a large bowl, beat eggs well with mixer.
  • At low speed add milk.
  • Add flour and salt and beat until smooth.
  • Stir in melted butter.
  • Fill cups 1/2 full with batter.
  • Top with cheese and pour in remaining batter.
  • Bake 50 minutes or until puffed and deep golden brown.
  • Let pans cool 1 minute and then loosen with a knife.
  • Serve with hot with butter and fresh fruit.

Yield Makes 6 large or 9 medium popovers

Number Of Ingredients 8

2 large eggs
3/4 cup milk
1/4 cup water
1 cup minus 2 tablespoons all-purpose flour
1/2 teaspoon salt
3/4 teaspoon chili powder
1/8 teaspoon cayenne, or to taste
1/2 cup coarsely grated extra-sharp Cheddar (about 2 ounces)

Steps:

  • Preheat oven to 375°.F. Generously grease six 2/3-cup popover tins or nine 1/2-cup muffin tins.
  • In a bowl whisk together eggs, milk, and water. Add flour and salt, whisk mixture until combined well but still slightly lumpy. Whisk chili powder and cayenne into batter. Divide half of batter among tins. Sprinkle 1/4 cup Cheddar over batter in tins and divide remaining batter among tins. Sprinkle remaining 1/4 cup Cheddar over popovers and bake in lower third of oven 45 minutes. Cut a slit about 1/2 inch long on top of each popover with a small sharp knife and bake 10 minutes more.

Salami, Cheddar and Chive Popovers image

I got a pop over pan for Christmas. Wow, I can't belive I didn't have one sooner!! This makes a dramatic addition to any meal. They are light and airy. You can also use a muffin tin but only pour batter in every other cup. Also, do NOT open the oven during cooking or you will lose the steam.... and the POP! The batter can be made the night before. I made these with cheddar, chive and slalmi but you could use just about anyhthing you want.....

cooking spray
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon fresh ground pepper
1 tablespoon freshly chopped chives
2 cups milk, at room temperature
3 eggs, at room temperature
1 tablespoon melted butter
6 slices genoa salami, diced small (deli)
12 sharp cheddar cheese cubes (1/2 inch cubes)

Steps:

  • Preheat over to 425 and spray the popover pan with non stick spray. Preheat pan in over 5 minutes before adding batter.
  • Mix all ingredients EXCEPT cheddar cheese and whisk until combined completely.
  • Scoop batter into pan leaving 1/4 inch at the top.
  • Drop one cube of cheese into the center of each cup.
  • Place pan in oven in the lower 1/3 of the oven.
  • Bake 20 minutes at 425.
  • Reduce heat to 350 and bake another 20 minutes.
  • Serve Immediately or allow to cool on a wire rack.

1 cup all-purpose flour
1/8 teaspoon salt
2 eggs
1 cup milk
3/4 cup shredded sharp cheddar cheese
4 slices bacon, cooked & crumbled
2 scallions, trimmed & chopped (I subbed with minced sweet onions)

Steps:

  • 1. Coat 8 cups of a popover/muffin pan with non-stick spray. Be sure to fill empty cups with water to avoid burning pan. Pre-heat oven to 450°F.
  • 2. Whisk flour and salt together in a mixing bowl. In a separate bowl, whisk the eggs and milk together. Add to the flour mixture and stir until blended. Fold in cheese, bacon and scallion.
  • 3. Fill popover/muffin cups 3/4 full (approx. 1/3 cup batter in each). Bake at 450° for 15 minutes. Reduce oven temperature to 350° and bake an additional 10 to 15 minutes, or until browned and puffed. ***Keep oven closed until the end of baking time or else the popovers will deflate.***.
  • 4. Remove popovers from the oven. Immediately remove popovers from pan to cool. Pierce sides once with a knife to release steam.
  • 5. Serve warm. (Re-heat at 350° for 5 minutes to crisp the outside edges, if needed.).
