After we spent the night at our friends' house in Arizona, we awoke to the tantalizing aroma of an egg souffle. It brings back wonderful memories. -Pat Coyne, Las Vegas, Nevada

2 cans (4 ounces each) chopped green chiles
1/4 cup sliced ripe olives
1/4 cup finely chopped onion
2 cups sharp shredded cheddar cheese
4 large eggs
1-1/2 cups biscuit/baking mix
2 cups 2% milk
1/4 teaspoon pepper
1 cup 4% small-curd cottage cheese
Optional: Salsa and sour cream

Steps:

  • Preheat oven to 350°. Spread green chiles in a greased 11x7-in baking dish; sprinkle with olives, onion and cheese. In a large bowl, whisk eggs, biscuit mix, milk and pepper until blended. Stir in cottage cheese; pour over top., Bake, uncovered, until golden brown, puffed and a knife inserted in the center comes out clean, 45-50 minutes. Let stand 5-10 minutes before serving. If desired, serve with salsa and sour cream., To Make Ahead: Refrigerate unbaked souffle, covered, several hours or overnight. To use, preheat oven to 350°. Remove souffle from refrigerator while oven heats. Bake, as directed, increasing time as necessary until golden, puffed and a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.

2 cans (4 oz each) Old El Paso™ whole green chiles, drained
4 oz Monterey Jack cheese, cut into 3x1/2x1/2-inch strips
1 jar (2 oz) diced pimientos, drained
4 eggs, separated
1 1/2 cups milk
1/2 cup Gold Medal™ all-purpose flour
1/4 teaspoon salt
Cilantro sprigs, if desired
2 cups Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Stuff chiles with cheese strips; arrange in baking dish. Sprinkle with pimientos.
  • In medium bowl, beat egg yolks and milk with wire whisk until well blended. Stir in flour and salt until smooth.
  • In large bowl, beat egg whites with electric mixer on high speed until stiff peaks form. Gently fold yolk mixture into beaten egg whites until no traces of white remain. Spoon mixture evenly over stuffed chiles.
  • Bake 30 to 40 minutes or until knife inserted in center comes out clean and top is golden brown. Garnish each serving with cilantro sprig. Serve immediately with salsa.

This Chili Rellenos Casserole is very easy to prepare and is loaded with flavor. Great for a busy week night, and good enough for company.

2 (7 ounce) cans whole green chile peppers, drained
8 ounces Monterey Jack cheese, shredded
8 ounces Longhorn or Cheddar cheese, shredded
2 large eggs, or more to taste
1 (5 ounce) can evaporated milk
2 tablespoons all-purpose flour
½ cup milk
1 (8 ounce) can tomato sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Evenly layer 1 can chile peppers in the bottom of the baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chile peppers.
  • In a bowl, mix together the eggs, evaporated milk, and flour. If too thick, feel free to add 1/2 cup regular milk. Pour over the top of the chilies.
  • Bake in the preheated oven for 25 minutes. Remove from oven, pour tomato sauce evenly over the top, and continue baking another 15 minutes.
  • Sprinkle with remaining Jack and Cheddar cheeses, pop under the broiler for a few minutes, and serve.

Here's a wonderfully zesty casserole that's much lower in fat and easier to assemble than traditional chile rellenos. I don't remember where I got the recipe, but I've enjoyed this layered entree for years. --Marilyn Morey of Mallard, Iowa.

4 cans (7 ounces each) whole green chiles, drained
8 flour tortillas (6 inches), cut into 1-inch strips
2 cups shredded part-skim mozzarella cheese
2 cups shredded reduced-fat cheddar cheese
3 cups egg substitute
3/4 cup fat-free milk
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon salt
1 teaspoon paprika
1 cup salsa

Steps:

  • Cut along one side of each chile and open to lie flat. Coat a 13x9-in. baking dish with cooking spray. Layer half of the chiles, tortilla strips, mozzarella and cheddar cheeses in prepared dish. Repeat layers. , In a small bowl, beat the egg substitute, milk, garlic powder, cumin, pepper and salt. Pour over cheese. Sprinkle with paprika., Bake, uncovered, at 350° for 40-45 minutes or until puffy and a knife inserted 2 in. from the edge of the pan comes out clean. Let stand for 10 minutes before cutting. Serve with salsa.

My aunt gave me this recipe from somewhere called 1823 Historic Rose Hill Inn. We made it Christmas morning and then shared the leftovers with our later rising neighbors. Made as stated, my non-heat tolerant dad liked it. I make it with more chiles when he's not around.

10 eggs
1/2 cup unsifted flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup butter, melted
16 ounces low-fat small-curd cottage cheese
1 lb monterey jack cheese, shredded
1/4 teaspoon ground cumin
8 ounces of chopped green chilies (mild canned)

Steps:

  • Heat oven to 350 degrees and grease 2 small baking dishes. In a large bowl, beat eggs until light and lemon colored. Add all ingredients except chiles. Mix.
  • Pour 1/2 cup mixture into each pan and spread. Top with thin layer of green chiles. Top with another layer of egg mixture. Bake about 30 minutes until top is browned and center is firm. It is best served hot from the oven.
  • NOTES:.
  • If you prefer, you can make this in a 9 x 13 pan, just plan to bake it longer. You can make the egg mixture the night before and assemble just before baking.

  • In a small bowl, whisk egg yolks with flour. In a large clean bowl with a clean whisk or beaters, beat egg whites and remaining tsp. salt until soft peaks form. Fold egg whites into egg yolk mixture; spread half on the casserole. Sprinkle remaining chiles on top. Spread remaining egg mixture over chiles and sprinkle with remaining queso fresco. Bake until golden and puffy, 20 to 25 minutes. Sprinkle with cilantro and serve with hot sauce.
