SUPER LOW-FAT GRANOLA CEREAL

Number Of Ingredients 10

8 cups old-fashioned oats
1 cup raisins
1/2 cup chopped dried apricots
1/2 cup dried cranberries
1-1/2 cups packed brown sugar
1/2 cup water
1 teaspoon salt
1 teaspoon maple flavoring
1 teaspoon vanilla extract
2% milk or reduced-fat plain yogurt

Steps:

  • In a large bowl, combine the oats, raisins, apricots and cranberries; set aside. In a small saucepan, combine the brown sugar, water and salt. Cook and stir over medium heat for 3-4 minutes or until brown sugar is dissolved. Remove from the heat; stir in maple flavoring and vanilla. Pour over oat mixture; stir to coat., Transfer to two greased 15x10x1-in. baking pans. Bake at 350° for 25-30 minutes or until crisp, stirring every 10 minutes. Cool completely on wire racks. Store in an airtight container. Serve with milk or yogurt.

BASIC GRANOLA RECIPE

This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

Number Of Ingredients 9

3 cups rolled oats
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon (see Cook's Notes)
1/2 teaspoon kosher salt
1/3 cup honey (see Cook's Notes)
1/4 cup canola oil (see Cook's Notes)
1 teaspoon vanilla extract (see Cook's Notes)
1/2 cup coarsely chopped almonds (see Cook's Notes)
1/2 cup dried cranberries (see Cook's Notes)

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
  • Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
  • Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

This recipe comes from the Chico Hot Springs Resort in Montana. It is always served with breakfast. Excellent on yogurt or on its own. Very healthy!

4 cups rolled oats
3/4 cup craisins (or raisens, I use a collection of dried fruit)
1 cup sliced almonds
3/4 cup salted sunflower seeds
2 teaspoons cinnamon
2 1/2 teaspoons pure maple syrup
3/4 cup honey
3/4 cup canola oil

Steps:

  • Preheat oven to 350 degrees.
  • Cover 2 baking sheets by covering with wax paper and cooking spray.
  • Combine first 5 ingredients in large bowl.
  • Mix syrup, honey, and oil.
  • Add to dry mix and stir until combined.
  • Divide between baking sheets, spread evenly.
  • Bake 20-25 minutes, toss half-way through baking.

WICKED EXCELLENT GRANOLA

I arrived at this by trial & error, picking my favorite parts from many existing granola recipes and adding stuff on my own. This will fill your belly & clear out your arteries.(chant with me: fiber..fiber...fiber...) Feel free to use different nuts and/or dried fruit. But the crytallized ginger really makes it special. ;) This recipe makes a LOT - good for a crowd but it also keeps for a long time in an airtight container (or 2). This is wicked tasty. (said in my best Maine accent, lol) Enjoy!

15 cups old fahioned oats (the BIG container)
1/2 cup oat bran
1/2 cup wheat bran
1/2 cup wheat germ
1/2 cup ground flax seeds
1 cup unsalted pumpkin seeds
1 cup unsalted sunflower seeds
1 cup almonds (slices or slivers)
1 cup pecans, broken up
1/4 cup ground cinnamon
2 tablespoons nutmeg
1 cup canola oil
1/2 cup honey
1 cup maple syrup
1/2 cup vanilla
2 cups dried cherries
2 cups chopped crystallized ginger

Steps:

  • Preheat oven to 300°F.
  • Combine in a very large roasting pan the oats through nutmeg. Drizzle oil, honey, maple syrup & vanilla over all & stir well to combine.
  • Bake for 1 - 1.5 hrs, stirring every 20 minutes until it looks dry-ish & toasty.
  • When cooled, stir in fruit.

1/2 cup oat bran flakes
2 cups old fashioned oats
1/4 cup slivered almonds
1/4 cup pumpkin seeds, roasted
1/4 cup dried currants or 1/4 cup raisins
1/4 cup dried cranberries
1/2 cup dried tart cherry
1/4 cup flax seed
1/2 cup honey
1/3 cup unsalted butter, melted

Steps:

  • Preheat oven to 350. Coat a baking sheet or jelly roll pan with cooking spray; set aside.
  • In a large mixing bowl, combine the bran flakes, oats, almonds, pumpkin seeds, currants, cranberries, cherries, and flax seeds. Set aside.
  • In a small bowl, combine the honey and the melted butter, and pour over the oat and fruit mixture. Stir with a wooden spoon until combined.
  • Spread mixture onto the prepared pan, and bake for 23 minutes or until golden. Cool on the pan, and break into pieces with a spatula. Store in an airtight container (I like a glass jar) for up to a week.

I tried Costco's granola the other day, and is it EVER good! Now, I'm not saying this recipe is an exact clone of Costco's, but it's the best I found. Add or subtract ingredients according to your taste - you can use less sugar if you like, increase the amount of wheat germ, add flax seeds, sesame seeds, pumpkin seeds, other dried fruit or nuts - it's perfect for experimenting. 4 cups old fashioned oats
1/2 cup brown sugar
1/2 cup wheat germ
1/2 cup flaked coconut
1 cup nuts (i.e. sunflower seeds, walnuts, almonds, pecans)
1 cup dried fruit, chopped (dried cranberries, blueberries, raisins, apricots, etc.)
1/2 cup vegetable oil
1/2 cup honey, plus
1/4 cup maple syrup or 1/4 cup honey
2 teaspoons vanilla

Steps:

  • Preheat oven to 325°F.
  • Mix granola ingredients in a large bowl.
  • For coating, heat oil, honey, and maple syrup to a rolling boil. Turn off heat and add vanilla. Pour over granola mixture and blend well. Spread on a baking sheet.
  • Bake for about 15-20 minutes, stirring the granola every 5 minutes while baking to ensure even browning. Watch it closely as it can burn fast. For softer granola do not bake as long.
