CHICKPEA-MUSHROOM BURGERS
These 10-ingredient gluten-free and vegan burgers are crisped up like a smash burger in the oven. We would never say that you HAVE to put cheese on them, but let's just say we highly recommend it.

Steps:
- Cook quinoa in a large saucepan of lightly salted boiling water, stirring occasionally, until tender, 8-10 minutes. Drain well and let cool at least 10 minutes.
- Meanwhile, heat 1/4 cup oil in a large nonstick skillet over medium-high. Add chickpeas (make sure they are well drained) and cook, tossing occasionally, until lightly browned, 8-10 minutes. Add garlic powder and paprika and toss a few times to coat. Transfer to a large bowl and let cool about 5 minutes.
- Add mushrooms, tahini, miso, and 1/4 cup oil to bowl with chickpeas and mash with a potato masher or fork to combine. Add quinoa and flour and mash until mixture holds together when squeezed in your hand. Taste and season with salt if needed. Form into 8 patties and arrange on a parchment-lined rimmed baking sheet. Freeze until firm, about 2 hours. At this point, the patties can be baked, or they can stay frozen up to 3 months. Transfer to resealable freezer bags or layer in an airtight container with sheets of parchment between patties.
- Preheat oven to 425°. Drizzle frozen patties generously with oil on both sides on a rimmed baking sheet. Bake patties until browned and crisp, 25-30 minutes. Place a slice of cheese on top of each patty and bake until cheese is melted, about 1 minute.
- Spread mayonnaise and mustard on cut sides of buns (if using). Place burgers on bottom buns. Top with lettuce and pickles (if using) and close up burgers.
- Do Ahead: Patties can be made 3 months ahead. Transfer to a resealable freezer bag and freeze.
CHICKPEA & QUINOA PATTIES
It wasn't until I moved to Australia and couldn't find canned black beans that I found out how beans are actually made - and what a brilliant enlightenment! Use fresh chickpeas for these, make such an outstanding difference! Easy to prepare in advance, I also make several batches and freeze.

Steps:
- 1. Prepare chickpeas according to package directions.
- 2. Prepare the quinoa according to package directions (can use vegetable broth for a little added flavour).
- 3. Combine all ingredients in food processor until fairly smooth.
- 4. Form into patties, allow to cool for at least 10 minutes.
- 5. Heat barbecue to medium high, grill patties for 8-10 minutes, flipping once.

Steps:
- In a small stockpot over medium heat, saute the onions in olive oil for about 7 minutes. Add the garlic and saute for 2 more minutes.
- Add the tomato paste, coriander, cumin, black pepper, and salt; saute for another minute.
- Add the quinoa and saute for 2 minutes.
- Add the chickpeas and broth; cover and bring to a boil. Once the mixture is boiling, lower the heat to very low, cover, and cook for about 18 minutes, or until the quinoa has absorbed all the water; stir occasionally.
- Fluff with a fork and serve.

- If you haven’t prepared your quinoa yet, do so now (make sure it’s cooked and cooled completely before use).
- Preheat oven to 375 degrees F (190 C). Add rinsed, dried chickpeas to a parchment-lined baking sheet and toss with oil, salt, and curry powder. Bake for 20 minutes or until chickpeas appear cracked and feel dry to the touch. Remove chickpeas from the oven and set aside. Keep oven on.
- In the meantime, add diced potatoes (smaller / bite size) to a rimmed, oven-safe medium skillet along with oil, salt, and curry powder. Cover and cook for 4 minutes. Then decrease heat to medium low, add water, and cover again. Continue cooking potatoes until browned on the edges and tender. Then turn off heat and use a fork or potato masher to mash them until nearly creamy (as few chunks as possible). Set aside.
- Add cooked chickpeas to a food processor along with cashews, serrano pepper (optional), ginger, garlic, salt, curry powder, harissa paste, and cilantro (optional) and blend into a semi-loose dough. Then add cooked/cooled quinoa and pulse to combine until a textured dough forms (you're not looking for a purée).

- Place dried chickpeas in a bowl and cover with water by a few inches. Let sit overnight, or at least 12 hours. If time permits, 18 to 24 hours is best. Drain.
- Place the drained chickpeas, quinoa, onion, scallions, herbs, salt, paprika, and pepper flakes in the food processor. Process until blended, about 10 seconds. Scraped down the sides of processor and pulse again until combined. Transfer to a large mixing bowl.
- Add the grated zucchini and with a spatula or your hands, incorporate the zucchini into the mixture. Taste the mixture. It should taste good, and shouldn’t need much adjustment, but do adjust if necessary.
- Use a ½-cup measuring cup to portion the mixture into 6 (plus a little guy) patties. Squeeze the mixture between your hands as you shape each patty. The mixture will feel wet. When you shape the patties, the mixture might even feel a little delicate, and you will probably worry that the patties will fall apart in the pan. But, as long as your patties can hold their shape on the plate or sheetpan, you’re in good shape. At this point, the patties can be wrapped and stored in the fridge for a day or two.
