Bacon-Wrapped Chicken in the Oven image

Chicken wrapped in bacon... Goes well with corn, probably other vegetables or bread, too.

¼ cup brown sugar
2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt
¼ teaspoon onion powder
4 (4 ounce) skinless, boneless chicken breast halves
1 (16 ounce) package bacon
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix brown sugar, paprika, garlic powder, pepper, salt, and onion powder together in a small bowl. Rub 1/2 of the spice mix over chicken breasts.
  • Wrap each breast with 2 to 4 slices of bacon, depending on size. Place in a baking dish and sprinkle remaining spice mix over top.
  • Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Serve topped with parsley.

4 boneless skinless chicken breast halves (5 ounces each)
1/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup all-purpose flour
3 bacon strips, chopped
1 tablespoon butter
4 garlic cloves, thinly sliced
2 teaspoons minced fresh rosemary or 3/4 teaspoon dried rosemary, crushed
1/8 teaspoon crushed red pepper flakes
1 cup reduced-sodium chicken broth
1 tablespoon lemon juice

Steps:

  • Pound chicken with a meat mallet to 1/2-in. thickness; sprinkle with salt and pepper. Lightly coat both sides with flour; shake off excess. , In a nonstick skillet, cook bacon over medium-high heat until crisp, stirring occasionally. With a slotted spoon, remove bacon to paper towels; reserve 1 teaspoon drippings., In same pan, heat butter and drippings over medium heat. Add chicken; cook until no longer pink, 4-6 minutes per side. Remove from pan., Add garlic, rosemary and pepper flakes to pan; cook and stir until garlic begins to color, 1-2 minutes. Stir in broth and lemon juice; bring to a boil, stirring to loosen browned bits from pan. Cook until slightly thickened, 3-4 minutes., Return chicken and bacon to pan; heat through, turning chicken a few times to coat.

Number Of Ingredients 5

4 - 6 chicken breasts
2 ounces butter
3 garlic cloves
12 slices bacon
1 teaspoon dried thyme or parsley

Steps:

  • Prepare the garlic butter. Mince the garlic, mash into the butter with the thyme or parsley (feel free to substitute your preferred herb). Cut your chicken breasts in half lengthways. I usually cut one or two into thirds for the kids' portions. Also the easiest way to do this is with a large pair of kitchen scissors/shears. Take a slice of bacon, spread with a little garlic butter and wrap around one of the pieces of chicken - use two slices of bacon if necessary. Place into a roasting tin. Repeat until all chicken is used up. Roll up any leftover bacon slices and place into the tin as well. Also add any leftover garlic butter. Roast at 180C/350F or Gas Mark 4 for 25 minutes. Turn each piece over and roast for a further 10 minutes or until they look golden, crispy and 'done'. Serve and enjoy!

Number Of Ingredients 9

6 boneless chicken breasts
3 medium onions, chopped small
6 slices bacon
6 cloves garlic, minced
1 cup original breadcrumbs
1/3 teaspoon coarse black pepper
2 tablespoons olive oil
2 tablespoons butter or 2 tablespoons margarine
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees.
  • First cook bacon in a skillet until crispy.
  • Crumble bacon and set it to the side.
  • Drain skillet but do not rinse.
  • Add 1 tablespoons olive oil and 1 tablespoons butter in skillet.
  • Add onions, garlic, pepper and bacon.
  • Cook on medium heat until onions are soft.
  • Remove from pan with the drippings, and put them to the side.
  • Add 1 tablespoons olive oil and 1 tablespoons butter to skillet brown chicken breasts on both sides for about 1 1/2 minutes apiece.
  • Put chicken in ungreased pan.
  • Coat the tops of chicken lightly with the bread crumbs.
  • Next spoon garlic, onion, and bacon mixture over each piece of chicken.
  • Sprinkle with shredded cheese.
  • Bake for 25 minutes uncovered for medium sized breasts.
  • Let stand 3 minutes and serve.
