This recipe is from Giuliano Bugialli's Classic Techniques of Italian Cooking. I made it this past weekend with 20 drumsticks, 20 slices of Prosciutto di Parma and doubled all other ingredients. It was the most tasty dish at the party and everyone loved it! The chicken was incredibly flavorful and juicy and the prep is quite simple as well. I put everything together the day before and just roast it in the oven before the party.

1 roasting chicken, cut into 8 pieces
4 tablespoons butter
5 large sage leaves, fresh
1 teaspoon rosemary, fresh
1 teaspoon dried marjoram
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 tablespoon olive oil
8 slices prosciutto di Parma

Steps:

  • Melt butter over low heat in a small saucepan. Finely chop the sage, rosemary and marjoram and put into a small bowl. Add the melted butter, salt and pepper to the chopped ingredients and mix well. Lay a large sheet of aluminum foil on the table and brush the shiny side with olive oil. Using a pastry brush, coat each piece of chicken with the herb-butter mixture. Wrap each piece in a slice of Prosciutto di Parma and place the chicken pieces on the foil close together and wrap completely with foil. Place the package in a terra cotta or ceramic casserole and cover. Place the casserole in a cold oven and turn the oven to 450 degrees. Bake for one hour and 45 minutes without removing the cover. Remove from oven and let stand for five minutes. Use scissors to cut from the center of the foil outward in four directions, making a cross. Cut each quarter in half and fold back each of the foil pieces from the center, forming petals over each side of the casserole. Serve immediately.

1 egg white, beaten
1 cup progresso Italian style breadcrumbs
8 ounces goat cheese, cut into 1/4 inch slices
2 tablespoons butter
1 head boston lettuce
2 ripe pears, thinly sliced
12 slices prosciutto di Parma
1/4 cup lightly toasted walnuts
2 tablespoons fresh orange juice
1 1/2 teaspoons white wine vinegar
1 1/2 teaspoons Dijon mustard (DONT use yellow or French's mustard)
1/4 teaspoon sea salt
1/4 teaspoon white sugar
1/3 cup olive oil
4 -5 dashes pepper, milled

Steps:

  • In small dishes, place egg whites and bread crumbs.
  • In a large skillet over medium high heat, melt butter.
  • Dip goat cheese slices first in the egg whites, second in the bread crumbs.
  • Cook coated goat cheese in the hot butter until just golden, around 30 seconds for each side.
  • Remove and set aside.
  • In a small bowl whisk together all the ingredients from orange juice to the pepper.
  • On each of 4 salad plates, arrange 3 lettuce leaves.
  • Place 2 pear fans on each plate.
  • Place/tuck 3 slices of Prosciutto on each plate.
  • Center the goat cheese rounds, dividing evenly.
  • Drizzle with vinaigrette and sprinkle with walnuts.
  • Serve.

2 tablespoons extra-virgin olive oil
3 large chicken breast halves with ribs and skin, cut crosswise in half
3 chicken drumsticks with skin
3 chicken thighs with skin
1 cup 1/4-inch cubes prosciutto (about 5 ounces)
6 garlic cloves, thinly sliced
2 tablespoons chopped fresh rosemary
1 1/4 cups dry white wine
1 cup low-salt chicken broth
1 cup canned crushed tomatoes with added puree
Fresh rosemary sprigs

Steps:

  • Preheat oven to 325°F. Heat extra-virgin olive oil in heavy large ovenproof pot over medium-high heat. Sprinkle chicken with salt and pepper. Working in 2 batches, sauté chicken until golden, about 4 minutes per side. Transfer chicken to platter. Add prosciutto, sliced garlic, and chopped rosemary to same pot. Stir 1 minute. Add dry white wine, chicken broth, and crushed tomatoes with puree. Bring to boil, scraping up browned bits. Boil 5 minutes. Return chicken to pot, arranging in single layer. Return to boil. Cover pot and place in oven. Bake until chicken breasts are cooked through, about 20 minutes. Remove chicken breasts. Continue baking until drumsticks and thighs are cooked through, about 10 minutes longer. Remove pot from oven. Return chicken breasts to pot. (Can be prepared 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep refrigerated.)
  • Bring chicken mixture to simmer. Transfer chicken to platter; tent with foil. Boil until sauce is reduced to 2 cups and coats back of spoon, about 5 minutes. Season sauce to taste with salt and pepper. Pour sauce over chicken. Garnish with rosemary sprigs and serve.

1/4 lb prosciutto, sliced super thin
1 bunch parsley, finely chopped
1/4 cup breadcrumbs
1/4 cup grated parmesan cheese or 1/4 cup parmigiano-reggiano cheese
2 eggs
1/4 cup grated provolone cheese
1 bunch basil leaves
1 tablespoon fresh rosemary
3 garlic cloves, minced
olive oil
2 (28 ounce) cans roma tomatoes, crushed

Steps:

  • preheat oven 450 degrees F.
  • Lay chicken on flat surface season with salt and pepper.
  • place slices of ham over breasts until all is used.
  • in bowl- mix parsley, bread crumbs, cheeses, eggs, basil and rosemary.
  • layer some filling on each chicken breast on the smaller end roll up the chicken tightly and secure with butchers twine or toothpicks.
  • place in foil pouches and bake 15-20 minutes in shallow pan.
  • make sauce while roasting chicken in large pot saute garlic in olive oil for about 2 minutes.
  • add tomatoes, basil and salt let cook for about 45 minutes at a slow boil.
  • when chicken comes out quickly brown them in a little olive oil, top with sauce and serve over pasta.
