CHICKEN WITH ORANGE-SOY SALSA (LIGHT)
I adapted this recipe of R. Reisman to make it with chicken breasts - I have also made it with chicken thighs - and both ways are really really good! You can use hot salsa for extra spice.

Steps:
- Preheat oven to 425°F (220°C).
- Dust chicken breasts with flour. In a large nonstick frying pan sprayed with cooking spray, heat oil over medium-high heat; in batches, cook chicken until browned on all sides, about 5 minutes per batch. Transfer to a 13 x 9-inch baking dish.
- In a bowl, stir together salsa, honey, orange juice concentrate, soy sauce, cornstarch, mustard, garlic, and ginger; pour over chicken.
- Bake, uncovered, in centre of oven for 20 to 30 minutes, or until chicken is cooked through. Garnish with parsley.

SALSA CHICKEN
Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

- Preheat oven to 375 degrees F (190 degrees C)
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
- Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
- Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

ORANGE SOYA SAUCE MARINATED CHICKEN
Quick and delicious, this marinade can be prepared in the morning and forgotten about all day. It also works well with pork or beef, and can easily be doubled, tripled, or more. Add flare by cutting thin strips of orange rind and sprinkling on top right before serving.

- Heat oven to 400°F.
- Grate 1 tsp. zest from 1 orange. Mix 1/2 tsp. zest, 1/2 tsp. rub seasoning and dressing; reserve for later use. Combine remaining zest and rub seasoning; rub onto outside of chicken, under chicken skin and inside chicken cavities. Place on rack in roasting pan.
- Bake 50 to 55 min. or until chicken is done (165°F).

- In a bowl, whisk together the 1/4 cup cold water and 1/2 Tbsp starch, then whisk in the rest of the Marinade Ingredients: 1/2 Tbsp orange zest, 1/2 cup fresh OJ, 4 Tbsp soy sauce, 2 tsp sesame oil, 1 Tbsp grated fresh ginger, 3 minced garlic cloves and 2 Tbsp honey.
- Add 1/4 of your marinade to your prepared chicken thigh meat, stir and let it marinate while preparing the rest of your veggies (15-30 min).
- Heat a large wok or heavy-bottomed saute pan over high heat. Add 1/2 cup water. As soon as it boils, add broccoli, carrot and asparagus. Cover and let it steam cook for 2 minutes over high heat until the veggies are crisp tender and bright green. Remove veggies to a bowl then rinse and dry your pan.
- Again, heat the pan over high heat and stir in 1 1/2 Tbsp oil. Add diced onion and saute 1 minute, stirring constantly.

- ORANGE SAUCE: Combine all the ingredients for the sauce except the 1 tablespoon of cornstarch in a medium saucepan over medium-high heat, bring the sauce to a boil, lower the heat to medium and let reduce for 7 minutes. Mix the 1 tablespoon of cornstarch with 1 tablespoon of water in a small bowl, add to the saucepan and stir until thickened, reduce the heat to low and allow the sauce to cook for 4-5 minutes. Remove from stove, allow the sauce to cool.
- CHICKEN: Add the cornstarch and salt to a ziplock bag. Zip and shake to combine the two. Add the chicken pieces, seal and continue to shake until the chicken is coated. Drizzle the oil in a large skillet over medium-high heat. Add the coated chicken using a pair of tongs. Discard any remaining cornstarch. Sauté over medium heat for 7-8 minutes or until the coating browns and the chicken cooks through. Add the sauce to the pan and stir to coat well. If you'd like to add veggies, add them in now and let them heat through. Serve warm with cooked white or brown rice.
