STUFFED BUFFALO CHICKEN BREASTS



Stuffed Buffalo Chicken Breasts image

Buffalo Chicken breast stuffed with cheese, shredded carrots and minced celery, then rolled, breaded, baked and drizzled with hot sauce. Sound enticing? It should be, this is good stuff!

1/4 cup shredded 2% cheddar
4 wedges light Laughing Cow blue cheese
1/3 cup celery stalk (minced)
1/4 cup green onion (minced)
1/4 cup carrot (minced)
salt and pepper (to taste)
5 3 oz each thin boneless chicken breasts cutlets
15 reduced fat Ritz Crackers (crushed into crumbs)
1 tbsp light mayonnaise
6 tbsp Franks hot sauce
1 tbsp lemon juice
2 tsp light butter
1/2 tsp garlic powder
cooking spray

Steps:

  • Preheat the oven to 400°F.
  • Lightly spray a baking dish with oil.
  • Mix cheddar, laughing cow cheese, celery, green onion, carrot, salt and pepper in a dish.
  • Lay out the chicken cutlets, placing even amount of mixture in the middle and spread in the center.
  • In one bowl make a breading station out of crushed ritz crumbs.
  • In another bowl combine mayonnaise, 1 tablespoon of hot sauce, and lemon juice as a dredging mixture.
  • Roll chicken breasts in the mayonnaise mixture, then into cracker crumbs, and put on a lightly greased pan, seam side down.
  • Lightly spray top of chicken with cooking spray.
  • Bake 30 minutes.
  • While the chicken cooks, melt butter and mix with the remaining hot sauce and garlic powder.
  • Drizzle buffalo sauce over finished chicken breast and serve.

4 boneless skinless chicken breasts, pounded thin to 1/4 inch
1/8 cup seasoned bread crumbs
seasoning salt
cooking spray
4 pieces Laughing Cow cheese
4 pieces lean ham (or prosciutto)

Steps:

  • Preheat oven to 400.
  • Spray 13x9 with cooking spray.
  • Place one piece of cheese and one piece of ham in each chicken breast and roll jellyroll style.
  • Secure with toothpicks and coat with bread crumbs.
  • Place seam side down in pan.
  • Sprinkle with seasoning salt.
  • Bake for 35-45 minutes or until done.

I could not find the Chicken with Laughing Cow cheese; so I made this one up by myself. My adult children loved it. I hope you do too. BTW-I did find the laughing cow one online & it uses ham. I was trying to make this especially healthier and did not use ham, but one could use it if desired. Enjoy!

1 c trader joe's just almond meal-or finely grind almonds into a powdery state in blender or food processor
1/2 c finely grated parmesan cheese ( cannned works fine)
1 Tbsp dried oregano
1 Tbsp dried basil
4-5 medium boneless,skinnless chicken breasts
4-5 small triangles of laughing cow cheese-(i used the garlic herb)
cooking spray ( i used olive oil-but any would work)
pointed toothpicks to hold together
bottled ranch dressing- i used trader joe's-any brand will do

Steps:

  • 1. Pre- heat oven to 375 degrees-Prepare a large baking dish with cooking spray.
  • 2. Rinse and pat dry each chicken breast. Dip into Ranch dressing covering both sides.
  • 3. Place chicken breast one at a time-into a pie pan holding the dry indredients-covering both sides.
  • 4. While still in the pie pan-place one triangle of Laughing Cow cheese into the breast and roll up to keep it inside-securing with a toothpick. Place each breast into the sprayed cooking dish or pan.
  • 5. Bake for one hour uncovered- Check meat with a sharp knife to see that the juices run clear. When done, serve.

1 pound deli sliced chicken breast
4 leaves lettuce
1 cucumber ((sliced thin lengthwise))
1 tomato (sliced)

Steps:

  • Cover each tortilla with a wedge of spreadable cheese. Layer sliced chicken breast, lettuce, cucumber slices, tomatoes on each tortilla.
  • Roll up, and cut into 1 inch slices.
