1/4 cup olive oil, plus more to coat the skillet
4 boneless, skinless chicken breasts
Salt and freshly ground black pepper to taste
1 pound angel hair pasta
1 large bunch fresh basil leaves (about 3 ounces)
1/2 cup walnuts
2 ripe avocados, pitted and peeled
1 1/2 tablespoons freshly squeezed lemon juice
4 cloves garlic

Steps:

  • Heat a large skillet over medium heat. Add enough olive oil to coat the skillet. Season the chicken breasts generously with salt and pepper. Cook until golden brown on one side, 8 to10 minutes; flip and cook until cooked through and no longer pink, about 5 minutes more. Transfer to a cutting board and slice into strips.
  • Bring a large pot of water to a boil. Cook the pasta according to the package directions.
  • Meanwhile, in a food processor, blend together the basil, walnuts, avocados, lemon juice, garlic and olive oil. Add salt and pepper to taste.
  • Drain the pasta into a colander. Transfer it to a large serving platter or bowl and toss with the pesto. Top with the sliced chicken. Serve immediately.

A unique-tasting dish that combines the flavors of clementines and basil with the natural creaminess of avocado. I like to add spinach to this, but not always. It definitely looks prettier on the plate without the spinach, but the added nutrition is always a plus.

1 avocado, peeled, pitted, & chopped
1/3 cup fresh basil
2 tablespoons lemon juice
3 garlic cloves, minced
1/4 teaspoon black pepper
1/4 teaspoon salt
4 chicken breast halves
2 tablespoons olive oil, divided
2 shallots, sliced
1/4 cup sugar
4 clementines, sliced & peeled
2/3 cup water
1/3 cup white wine vinegar
1/4 teaspoon red pepper flakes
8 ounces penne pasta
2 cups fresh spinach, chopped (optional)

Steps:

  • In a large bowl, combine avocado, basil, lemon juice, garlic, black pepper, and salt. Set aside.
  • Start cooking the pasta according to your package's directions.
  • Lightly pound the chicken into 1/8" thick cutlets, then season both sides evenly with salt and pepper.
  • Heat half of the olive oil in a large frying pan over medium-high heat. Add cutlets and cook for 5 minutes on each side. Transfer to a plate and keep warm.
  • Heat the rest of the olive oil in the pan, then add the shallots and sautee for about 1 minute. Sprinkle sugar over the shallots and cook undisturbed until it is melted and golden, or about another minute.
  • Stir in clementine slices, water, white wine vinegar, & red pepper. Scrape the pan for about 30 seconds, then lower the heat and let simmer for 3 minutes. (If you are using the spinach, add it right after this step and stir the sauce until the leaves have wilted.).
  • Drain the pasta, but don't rinse it. Put the pasta in the bowl holding the avocado mixture, and stir to combine well.
  • Serve chicken over pasta and top with clementine sauce.

2 cups reduced-sodium chicken broth
1 cup quinoa
½ cup chopped scallions
1 ½ teaspoons lemon juice
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon onion powder
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
½ teaspoon sea salt
4 (4 ounce) skinless, boneless chicken breast halves
non-stick cooking spray
½ avocado
¼ cup plain non-fat Greek-style yogurt
1 ½ teaspoons lemon juice
½ teaspoon garlic powder

Steps:

  • Bring chicken broth to a boil in a saucepan. Stir quinoa into the broth and bring again to a boil; reduce heat to medium-low, cover, and simmer until quinoa is tender and broth has been absorbed, 15 to 20 minutes.
  • Stir scallions and 1 1/2 teaspoons lemon juice into the quinoa.
  • Mix paprika, cumin, onion powder, black pepper, cayenne pepper, and sea salt together in a small bowl; rub onto chicken breasts to season completely.
  • Prepare a large skillet with cooking spray and heat over medium-high heat.
  • Lay chicken breasts into the hot skillet, cover skillet with a lid, and cook until chicken is no longer pink in the center and the juices run clear, about 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Blend avocado, yogurt, 1 1/2 teaspoons lemon juice, and garlic powder in a food processor until smooth.
  • Spread quinoa onto a serving platter. Arrange chicken breasts onto the platter. Drizzle avocado cream sauce over the chicken breasts.

1/2 cup KRAFT Zesty Lime Vinaigrette Dressing, divided
1/2 cup TACO BELL® Verde Salsa, divided
4 small boneless skinless chicken breasts (1 lb.)
3/4 cup long-grain brown rice, uncooked
1-3/4 cups water, divided
1 cup grape tomatoes, cut in half
1/2 fully ripe avocado
1/2 cup chopped fresh cilantro, divided

Steps:

  • Mix 2 Tbsp. each dressing and salsa until blended. Pour over chicken in shallow dish; turn to evenly coat both sides of chicken breasts with dressing mixture. Refrigerate 30 min. to marinate.
  • Meanwhile, cook rice as directed on package, using 1-1/2 cups water and omitting the salt.
  • Remove chicken from marinade; discard marinade. Cook chicken in large nonstick skillet on medium heat 6 to 8 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm. Add tomatoes to skillet; cook 3 min. or until tomatoes start to burst, stirring frequently.
  • Blend avocado with remaining dressing, remaining salsa and 1/4 cup cilantro in blender until smooth, gradually adding remaining water if necessary until sauce is desired drizzling consistency.
  • Add remaining cilantro to rice; mix well. Top with chicken and avocado sauce.

Steps:

  • Pound chicken to 1/2 inch thickness.

  • In a small oven tray, combine cherry tomatoes, a drizzle of olive oil and a good pinch of salt and pepper. Roast in the oven for 10-12mins at 200C/390F or until they just being to wrinkle. For a more intense flavour roast at a lower temp over a longer period of time (as low as 150c/300f for as long as 1hour+).

  • Serve pasta with sliced grilled chicken on top, a heavy sprinkling of parmesan, a side salad and some garlic bread. Enjoy!
