Steps:
- Heat a large skillet over medium heat. Add enough olive oil to coat the skillet. Season the chicken breasts generously with salt and pepper. Cook until golden brown on one side, 8 to10 minutes; flip and cook until cooked through and no longer pink, about 5 minutes more. Transfer to a cutting board and slice into strips.
- Bring a large pot of water to a boil. Cook the pasta according to the package directions.
- Meanwhile, in a food processor, blend together the basil, walnuts, avocados, lemon juice, garlic and olive oil. Add salt and pepper to taste.
- Drain the pasta into a colander. Transfer it to a large serving platter or bowl and toss with the pesto. Top with the sliced chicken. Serve immediately.

- In a large bowl, combine avocado, basil, lemon juice, garlic, black pepper, and salt. Set aside.
- Start cooking the pasta according to your package's directions.
- Lightly pound the chicken into 1/8" thick cutlets, then season both sides evenly with salt and pepper.
- Heat half of the olive oil in a large frying pan over medium-high heat. Add cutlets and cook for 5 minutes on each side. Transfer to a plate and keep warm.
- Heat the rest of the olive oil in the pan, then add the shallots and sautee for about 1 minute. Sprinkle sugar over the shallots and cook undisturbed until it is melted and golden, or about another minute.
- Stir in clementine slices, water, white wine vinegar, & red pepper. Scrape the pan for about 30 seconds, then lower the heat and let simmer for 3 minutes. (If you are using the spinach, add it right after this step and stir the sauce until the leaves have wilted.).
- Drain the pasta, but don't rinse it. Put the pasta in the bowl holding the avocado mixture, and stir to combine well.
- Serve chicken over pasta and top with clementine sauce.

- Bring chicken broth to a boil in a saucepan. Stir quinoa into the broth and bring again to a boil; reduce heat to medium-low, cover, and simmer until quinoa is tender and broth has been absorbed, 15 to 20 minutes.

- Mix paprika, cumin, onion powder, black pepper, cayenne pepper, and sea salt together in a small bowl; rub onto chicken breasts to season completely.

- Mix 2 Tbsp. each dressing and salsa until blended. Pour over chicken in shallow dish; turn to evenly coat both sides of chicken breasts with dressing mixture. Refrigerate 30 min. to marinate.
- Meanwhile, cook rice as directed on package, using 1-1/2 cups water and omitting the salt.
- Remove chicken from marinade; discard marinade. Cook chicken in large nonstick skillet on medium heat 6 to 8 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm. Add tomatoes to skillet; cook 3 min. or until tomatoes start to burst, stirring frequently.

- Prepare Chili Lime Chicken according to directions. When done, remove chicken to cutting board and cover to keep warm. Don't slice until ready to serve.

- In a small oven tray, combine cherry tomatoes, a drizzle of olive oil and a good pinch of salt and pepper. Roast in the oven for 10-12mins at 200C/390F or until they just being to wrinkle. For a more intense flavour roast at a lower temp over a longer period of time (as low as 150c/300f for as long as 1hour+).
- Meanwhile, butterfly your chicken breast right through to make 2 even sized breasts. Combine in a zip lock bag with 1/4 tsp oregano, thyme, salt, a drizzle of oil, a squeeze of lemon juice & a pinch of black pepper and allow to marinate for as long as you have time for (up to 8 hours). If you're pushed for time just leave at room temp whilst you prep the other ingredients. If marinating take out fridge at least 15mins before needed.
- Cook pasta in salted boiling water until al dente. Scoop out a cup of starchy pasta water just before draining.
- Serve pasta with sliced grilled chicken on top, a heavy sprinkling of parmesan, a side salad and some garlic bread. Enjoy!
