1 boneless skinless chicken thigh cut into bite size pieces
1 Tbsp sake
1 c shiitake mushrooms stemmed and chopped
2 chinese sausage sliced
4 clove garlic minced
4 scallions sliced
2 Tbsp mirin
3 Tbsp white miso
2 Tbsp mirin
4 c dashi stock
8 oz fresh or dried udon noodles
1 c bean sprouts
2 large eggs
2 Tbsp fried shallots

Steps:

  • 1. Mix the chicken with the sake and let sit 15 minutes Cook the udon noodles according to package directions and drain. Heat the dashi stock in a large clay pot or pan on stove. Add the chicken and mushrooms cook for 5 minutes. Add the scallions and sausages. Cook 1 minute. Mix the Mirin with the garlic and miso paste. Add a little stock from the pan and stir it in until the miso is dissolved.
  • 2. Stir the miso mixture into the soup Taste and adjust the seasoning. Add in the bean sprouts and noodles. Bring to a boil. Add the eggs and cover and let simmer until eggs have poached.
  • 3. Top with fried shallots and serve

1 ½ (32 fluid ounce) containers chicken stock
1 clove garlic, minced
1 tablespoon minced fresh ginger root
1 teaspoon chili powder
1 large cooked skinless, boneless chicken breast, chopped
1 head bok choy, chopped
¼ cup dried shiitake mushrooms
2 (7 ounce) packages dried udon noodles
½ cup mung bean sprouts
1 green onion, sliced diagonally
2 tablespoons dried minced onion
1 tablespoon chopped fresh cilantro

Steps:

  • Bring chicken stock, garlic, ginger, and chili powder to a boil in a pot over medium-high heat. Add chicken, bok choy, and mushrooms; let simmer lightly for 3 minutes. Add noodles and cook soup for 4 minutes more.
  • Pour soup mixture evenly into 2 soup bowls. Place mung beans on top in the center of each bowl, with green onion placed neatly on top. Sprinkle dried onions and cilantro on top.

1/4 cup miso
1/4 cup warm water
6 cups water
1 large red chile, sliced
1 tablespoon finely grated ginger
3 green onions, thinly sliced
2 chicken breasts, trimmed and thinly sliced
100 g snow peas, halved
250 g udon noodles
3 green onions, thinly sliced for garnish

Steps:

  • Place the miso paste and warm water in a small bowl and stir to combine.
  • Place the water, chilli, ginger and green onions in a large saucepan over high heat and bring to the boil.
  • Add the chicken, snow peas and noodles and cook for 3-4 minutes until the chicken and noodles are cooked through.
  • Stir the miso mixture into the noodle mixture.
  • To serve, spoon into bowls and top with extra green onions.

Gently add eggs to boiling water and boil for exactly 7 minutes (this should yield cooked whites and runny yolks so adjust time if you’d like your eggs cooked differently). When eggs are finished, transfer to a colander and run under cool water.
