CHICKEN THIGHS WITH COGNAC & RED WINE
This is a recipe I came up with, which I just love. It's easy to do, and goes well with rice and oven-baked vegetables. The recipe is very forgiving, and you can substitute any chicken parts, I prefer thighs. You can also adjust the garlic and herbs to suit your own tastes. I love the cognac/red wine flavors that come through.

Steps:
- 1 - Heat oil in large frying pan on med-high heat.
- 2 - Wash chicken and pat dry, then dredge in flour mixture and place chicken skin-side down, and cook approx 10 minutes before turning over to cook the other side for approx 10 minutes. You want the chickent to be golden-brown.
- 3 - Remove from heat and add the cognac, making sure pan is away from open flames. Return pan to burner, ignite cognac either with a long match or ignite gas burner. Keep the pan's lid handy, in case you need to smother the flames. Let the alcohol burn off.
- 4 - Add red wine, and simmer for 5 to 10 minutes, turning chicken once.
- 5 - Place chicken in medium-sized dutch oven, or casserole dish, cover, and set aside.
- 6 - Cook onions until transparent in same frying pan, then layer the onions over top of the chicken in the dutch oven, then set aside with lid on again.
- 7 - Add the remainder of ingredients to the pan, and bring to a simmer and ensure ingredients are well mixed. Spoon over top of onions in dutch oven, making sure the tomatoes are well distributed, and that the chicken is covered.
- 8 - Bake at 350 F for at least one hour. An extra half hour is going to give more tender chicken. .
- 9 - Serve chicken with rice or noodles, with chicken on the side. When removing chicken from the pot, be very careful that the chicken pieces don't fall apart. Spoon the sauce over top of the rice or noodles.
BAKED CHICKEN WITH WINE
I got this from my SIL. I had never tasted chicken so good. It was a recipe from the California Winemakers Association. It's a very forgiving recipe. I've used apple juice in place of the wine. It's not quite as good, but acceptable.

Steps:
- Coat chicken with seasoned flour.
- Melt 4 tablespoons butter in shallow baking dish.
- Put chicken in pan, skin side down; bake, uncovered at 350°F for 45 minutes (or until almost tender).
- Meanwhile, melt 2 tablespoons butter in saucepan and sauté mushrooms.
- When cooked and the liquid is mostly reabsorbed, add 2 more tablespoons of butter.
- Stir in flour.
- Add bouillon and wine, cook, stirring constantly, until thick and smooth.
- Remove chicken from oven.
- Turn pieces over.
- Sprinkle with onions, mushrooms and artichokes.
- (Thinly sliced water chestnuts or halved cherry tomatoes may also be used). Pour over sauce.
- Return to oven.
- Reduce heat to 325°F.
- Bake 20 to 30 minutes longer.

CHICKEN RAGOUT WITH ONIONS AND RED WINE
SCRUMPTIOUS! This is my absolute hands-down favorite chicken recipe. I adapted it from Julia Child's book "The Way to Cook". It will really impress any guests and they will return for seconds and thirds. It can be made very inexpensively with chicken thighs. You may also adapt for the crockpot just brown the chicken before hand and you may have to double the thickening agents to adjust the sauce before serving. Prep time includes the browning of the chicken. Make sure you have lots of bread to dip in the delicious sauce! Enjoy!

Steps:
- Brown chicken in large skillet on both sides in butter and oil.
- Remove chicken from pan and set aside, leaving the liquid in the pan.
- Add onions to the pan and saute till tender on moderate heat.
- Drain liquid over sieve into small bowl.
- Remove any unwanted fat.
- Set liquid aside.
- Season the chicken parts with salt/pepper and return to pan.
- Add tomato sauce, garlic, bay leaves, and thyme.
- Add enough wine and chicken stock to cover chicken parts.
- Simmer for at least 20 minutes uncovered.
- Remove chicken and place on platter.
- Pour juices and onions into saucepan and adjust seasonings.
- You may add more garlic, thyme, salt and pepper.
- In small bowl whisk together flour and butter (or wine).
- Add to the sauce and simmer until the sauce coats the back of a spoon.
- You may need to double the thickening agents if you have lots of juice.
- Pour sauce over chicken on platter and garnish with parsley.
- Serve with rice and crusty bread.

- Spread the flour on a plate, add 1-1/2 teaspoons of salt and a few grinds of black pepper and combine thoroughly. Dredge the chicken pieces in the flour, shaking off the excess and set aside.

- Drain all but 1 tablespoon of the bacon fat from the pan, add 2 tablespoons of olive oil and return to the stove. Working in batches if necessary, add the chicken in a single layer and cook until lightly browned on the outside, 1 to 2 minutes per side. Transfer to a plate and set aside.
