CHICKEN THIGHS WITH APPLE BACONTHYME CREAM SAUCE
This is my own dish. I had a basic cream sauce recipe years ago. I made this my own. I added many different ingredients including the bacon. The bacon and apple combination gives it that sweet savory taste. Hope you all enjoy it as much as I do. Hugs!!

Steps:
- 1. cook the bacon and set aside
- 2. chop onion and saute in large nonstick fry pan with 2 Tbsp butter. add 2 tbsp apple juice or cider. Cook until slightly caramelized. add the garlic and cook for 1 more minute. Remove from heat. Put the onions aside on a plate
- 3. take the pan you cooked the onions in. Add 2 more tabla spoons of butter,and cook the chicken thighs. Salt and pepper them. flip over and salt and pepper again. Fry for about 15 or until no pink shows through. Remove from pan to plate.
- 4. put the sliced apples and cooked onions in the fry pan.cook over medium heat a 5 minutes.Add apple juice,or cider,and crushed bouillon cubes and stir all together.
- 5. Put the chicken back in the pan with the apples,and onions with it's juices. Sprinkle with the Thyme. Bring to a boil. Reduce heat to simmer. Cover and simmer about 15-20 minutes until apples are cooked and chicken is cooked.
- 6. Remove chicken from pan of apples. Stir sour cream and corn starch together in a bowl,and add to apple mixture. cook on medium.Stir until thickened. Remove from heat.
- 7. Place your chicken on a plate. pour apple sauce mixture on chicken, sprinkle with black pepper,and sprinkle with crumbled bacon. serve!!
BRAISED CHICKEN THIGHS AND APPLES
Apple cider and apples give this braised chicken dish a decidedly fall feel.

- Preheat the oven to 425 degree F. Sprinkle the chicken generously with salt and pepper. Heat the oil in a large, deep ovenproof skillet over medium-high heat. Place the chicken in the skillet skin-side down and cook, flipping once, until golden on both sides. Transfer to a plate.
- Reduce the heat to medium, add the thyme and leeks to the skillet and cook, stirring occasionally, until softened, about 4 minutes. Pour in the wine and use a wooden spoon to scrape up any browned bits from the bottom. Cook until the skillet is nearly dry. Stir in the broth, apple cider and a pinch each of salt and pepper and bring to a boil.
- Use a fork to mash the butter and flour together in a small bowl until smooth. Whisk the butter-flour mixture into the skillet until dissolved. Stir in the apples and remove from the heat. Nestle the chicken skin-side up in the skillet along with any collected juices from the plate. Bake until the chicken is cooked through, about 25 minutes.
MUSTARD CHICKEN THIGHS AND APPLES IN WHITE WINE AND CREAM SAUCE
This main dish is fast enough for a weeknight, but "fancy" enough for guests! Boneless, skinless chicken thighs are quickly browned, then simmered with apples and onions in a flavorful liquid. Simply remove the apples and onions at the end, let the liquid reduce, add a little cream, and voila, there is a beautiful sauce! We enjoyed this recipe with white rice, steamed broccoli, and a crusty baguette.

- Combine apple juice, white wine, Dijon mustard, garlic, ginger, and herbes de Provence in a small container; set aside.
- Melt butter in a 12-inch nonstick skillet over medium heat and brown chicken thighs, about 3 minutes per side. Season with salt and pepper. Sprinkle onion slices over chicken thighs, add apple slices, and pour cooking liquid on top. Bring mixture to a boil, cover, and reduce heat to a simmer.
- Simmer until chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken, apples, and onions to a serving dish and keep warm.
- Bring liquid to a boil over medium-high heat. Allow liquid to boil and reduce down to about 1 1/2 cups, stirring frequently, about 5 minutes. Stir in heavy cream and cook until sauce has thickened and is well blended.

- Preheat the oven to 350 degrees F (175 degrees C). Season both sides of the chicken thighs with salt and pepper.
- Heat oil in a deep oven-proof skillet or Dutch oven over medium-high heat. Add chicken thighs to the hot oil and cook until browned on both sides, about 4 minutes per side. Transfer chicken to a plate and keep warm.
- Add sliced onions to the skillet and saute until they just start to brown, about 3 minutes. Pour in apple cider and chicken stock, scraping the bottom of the pan to loosen any browned bits. Stir in thyme and salt. Simmer until the onions are soft, 4 to 5 minutes. Turn off the heat.
- Add chicken back to the skillet and spoon some sauce over the top. Arrange sliced apples around the chicken. Cover the skillet with a lid or aluminum foil.

- Preheat the oven to 350 degrees F (175 degrees C). Season chicken thighs with salt and pepper.
- Set an oven-proof skillet on high heat. When hot, add 1 tablespoon oil and chicken. Cook until well seared, about 3 minutes per side. Remove chicken to a plate and reduce heat to medium.
- Add remaining 1/2 tablespoon oil, then add garlic, thyme, and rosemary. Bloom spices together for 1 minute. Pour in chicken broth, then add sun-dried tomatoes, and finally the cream. Stir well and then blend in Parmesan cheese. Bring to a light simmer. Add chicken back to the pan.

- Dry chicken thighs with paper towels. Season with salt and pepper on both sides. Rub a pinch of smoked paprika onto the skin side.
- In a large frying pan, sauté pan, or wide Dutch oven, cook bacon over medium high heat until crisp. Remove the bacon from pan with a slotted spoon and drain on paper towels. Set aside.
