Chicken and Olives image

The sharp, briny bite of olives is the dominant flavors here, which is why it pairs so well with chicken breast. This is one of those dishes where, if you tasted the chicken and sauce separately, you probably wouldn't be very impressed, but together they're magic.

4 boneless chicken breast halves with skin
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
2 teaspoons herbes de Provence
2 tablespoons olive oil
¼ cup sliced shallots
½ cup pitted and sliced green olives
½ cup brine-cured pitted olives, such as Kalamata, halved lengthwise and brine reserved
1 cup chicken broth
1 lemon, zested and juiced
½ teaspoon cumin
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons cold butter, cut into four pieces

Steps:

  • Season skin-side of chicken with salt, black pepper, and cayenne pepper. Turn breasts over and season skinless side with salt, black pepper, cayenne, and herbes de Provence. Turn again so that the skin-side is facing up; rest for 10 minutes.
  • Heat olive oil in a large skillet over high heat. Place chicken skin-side down in hot oil. Reduce heat to medium-high and cook chicken until skin is well-browned, about 5 minutes. Turn chicken and cook until just browned, about 2 minutes; transfer to a plate.
  • Reduce heat to medium. Cook and stir shallots in the hot skillet until just softening and golden brown, about 2 minutes. Stir olives into shallots and cook until fragrant, about 30 seconds.
  • Pour the chicken broth into the skillet; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add lemon juice, 2 tablespoons of the reserved olive brine, lemon zest, and cumin; increase heat to high and cook until sauce is reduced by half, 2 to 3 minutes.
  • Reduce heat to low and return chicken, skin-side up, to the skillet. Cover the skillet with a lid and cook until no longer pink in the center and the juices run clear, about 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken to a plate and cover with aluminum foil.
  • Stir parsley and butter into sauce, stirring continuously until butter is melted and sauce is shiny. Spoon sauce over chicken.

This is a tried-and-tested recipe! I remember seeing an ad on TV about cooking with mayonnaise and decided to give it a shot. I've made it with just the mayonnaise on top and it really locks the moisture into the chicken. The bread crumbs and cheese are a must for me; they complement each other very well.

2 skinless, boneless chicken breasts
2 ½ tablespoons grated Parmesan cheese
2 tablespoons mayonnaise, or more to taste
2 tablespoons bread crumbs, or more to taste
1 ½ teaspoons herbes de Provence

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place chicken breasts in a baking pan.
  • Mix Parmesan cheese and mayonnaise in a bowl; spread evenly over chicken breasts. Coat with bread crumbs; sprinkle with herbes de Provence.
  • Bake in the preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/2 cup mayonnaise
2 tablespoons Mexican crema, or sour cream
1/2 cup coarsely chopped pitted green Spanish olives or other Mediterranean olives
1 , serrano chile kimmy, , minced with seeds
1 tablespoon finely chopped fresh flat-leaf parsley
4 boneless skinless chicken breast halves
2 teaspoons fresh lime juice
1 tablespoon olive oil
salt and pepper to taste

Steps:

  • 1. In a small bowl, mix the mayonnaise, crema, olives, chile, and parsley. Cover and refrigerate. 2. Rub the chicken breasts all over with lime juice, oil, salt, and pepper. Heat a stovetop grill pan over medium heat, and cook the chicken 4 to 5 minutes per side or until it is well marked from the grill, it is firm to the touch, and it is no longer pink inside. 3. Transfer the chicken to a platter or individual plates. Spread the mayonnaise mixture equally on top of each fillet. Serve while the chicken is still hot.From "1,000 Mexican Recipes." Based on a So Cal Mexican favorite involving marinating chicken thigh meat in Tampico brand citrus juice. In my version, I used whole chicken breast and use a blend of carrot and fruit juices for a healthier alternative! Great on the BBQ grill but works in a pan or in the oven too...Enjoy!

Number Of Ingredients 10

6 ounces chicken breasts
1/8 teaspoon kosher salt
1/8 teaspoon pepper
1 ounce carrot juice
1 ounce orange juice
1 ounce pear juice
1 ounce apple cider vinegar
1/2 teaspoon minced ginger
1/2 teaspoon minced garlic clove
1/2 teaspoon sriracha hot chili sauce

Steps:

  • In a bowl season the breast with salt and pepper.
  • Add carrot, orange, and pear juices along with apple cider vinegar.
  • Now incorporate ginger, garlic and chili sauce.
  • Use a rubber spatula or your hand to mix items together.
  • Cover bowl with plastic wrap and refrigerate for at least 20 minutes. (Okay to marinate overnight).
  • Remove from refridgerator and grill for 7 minutes on the first side, flip and grill 5 minutes on other side. (Internal temperature of 160-165 degrees).
  • Remove from grill and allow chicken breast to rest in a small bowl for 2 to 5 minutes.
  • Slice the breast at an angle.
  • Note: You can create a delightful reduction sauce to accompany your dish by doubling the amount of marinade made and saving half for your sauce before beginning your prep. Start with a hot sauce pan, add the reserved marinade liquid with 2 ounces of chicken broth and reduce sauce by half.
