STUFFED CHICKEN



Stuffed Chicken image

A delicious stuffed chicken recipe that uses about two breasts per person. Serve with rice and stir fried veggies, if desired.

1 tablespoon vegetable oil
½ onion, finely diced
1 stalk celery, diced
1 teaspoon hot pepper sauce
1 tablespoon Dijon-style prepared mustard
2 skinless, boneless chicken breast halves

Steps:

  • Lightly oil grill and preheat to medium high.
  • In a small skillet, heat vegetable oil. Saute onion and celery until tender. Stir in hot sauce and mustard and mix all together. Remove from heat.
  • Cut pockets into chicken breasts and stuff with onion mixture. Saute chicken in skillet 2 to 3 minutes each side, until lightly browned. Remove from skillet and grill over medium high heat for 10 to 15 minutes on each side, or until juices run clear. Serve with remainder of onion mixture as a sauce/topping.

SIMPLE CHICKEN STUFFING



Simple Chicken Stuffing image

This is how I often stuff chicken, probably not as good as some of the more elaborate recipes but better than using pre-packaged stuffing. This is enough for a small chicken, double the quantities for a large chicken. While a matter of personal prference I don't go too overboard chopping the onion / celery finely and like it to have a slightly chunky texture.

3/4 cup breadcrumbs
1 medium onion, chopped
1/4 cup celery, sliced
1 large egg
1 tablespoon soy sauce
2 teaspoons garlic
1 teaspoon dried tarragon

Steps:

  • Mix all ingredient in a bowl.
  • Stuff chicken and cook as per usual.
  • This is quite a moist firm mix so you could also roll into a firm pattie and cook to one side.

4 boneless skinless chicken breast halves (4 ounces each)
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1-1/4 cups water
1/4 cup butter, melted
1 package (6 ounces) cornbread stuffing mix

Steps:

  • Place chicken in a greased 3-qt. slow cooker. Top with soup. In a bowl, combine the water, butter and stuffing mix; spoon over the chicken. Cover and cook on low for 4 hours or until chicken is tender.

CHICKEN STUFF

This is SOOOO good! Great for an appetizer at any get-together. My husband and I will make a batch of this while watching a football game and "stuff" ourselves silly with it!

Number Of Ingredients 7

2 (8 ounce) cans crescent rolls
2 (8 ounce) packages cream cheese, room temperature
1 bunch green onion, chopped (I use green tops only, but you can use all if you like)
1 (10 ounce) can white chicken meat, shredded
season salt (I use Lawry's)
pepper
garlic powder

Steps:

  • Mix together room temp cream cheese, chopped green onions, and shredded chicken, and just a few shakes of the season salt, pepper and garlic powder.
  • Set aside.
  • In a 9 x 13 pan, lay out 1 tube of the crescent rolls, pressing out to solidly cover the entire bottom.
  • Spread all of chicken mixture evenly over crescent roll layer.
  • Lay 2nd roll of crescent rolls over the top, trying to cover as much of chicken mixture as possible.
  • You can try to cover it completely, but it is okay if you have a few holes here and there, makes for interesting presentation.
  • Bake at temperature on crescent roll can, approximately 30-35 minutes, or until golden brown.
  • Let cool for about 15 minutes before cutting.
  • Slice into squares and ENJOY!

This easy version of Grandma's specialty features seasoned stuffing and chicken baked in a creamy mushroom sauce.

1 ¼ cups boiling water
4 tablespoons butter or margarine
4 cups Pepperidge Farm® Herb Seasoned Stuffing
6 skinless, boneless chicken breasts
Paprika
1 (10.75 ounce) can Campbell's® Condensed Cream of Mushroom Soup or Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup
⅓ cup milk
1 tablespoon chopped fresh parsley

Steps:

  • Mix water and butter. Add stuffing. Mix lightly.
  • Spoon stuffing along center of 3-quart shallow baking dish. Arrange chicken on each side of stuffing and sprinkle with paprika.
  • Mix soup, milk and parsley. Pour over chicken. Cover.
  • Bake at 400 degrees F for 30 minutes or until done.

CHEDDAR-STUFFED CHICKEN BREASTS

Salsa and cilantro give these melt-in-your-mouth roll-ups a southwestern flair.

4 boneless skinless chicken breast halves (1 1/4 pounds)
1/4 teaspoon salt
1/4 teaspoon pepper
3 ounces Cheddar cheese
1 tablespoon butter or margarine, melted
1/4 cup salsa
Chopped fresh cilantro, if desired

Steps:

  • Heat oven to 375°F. Spray square pan, 9x9x2 inches, with cooking spray. Flatten each chicken breast half to 1/4-inch thickness between sheets of plastic wrap or waxed paper. Sprinkle with salt and pepper.
  • Cut cheese into 4 slices, about 3x1x1/4 inches. Place 1 slice cheese on center of each chicken breast half. Roll chicken around cheese, folding in sides. Brush butter over chicken rolls. Place chicken, seam sides down, in pan.
  • Bake uncovered about 30 minutes or until chicken is no longer pink in center. Serve with salsa. Sprinkle with cilantro.
