CHEDDAR RICE CASSEROLE

1/4 cup chopped onion
2 garlic cloves, minced
1/4 cup butter, cubed
3 cups cooked long grain rice
2 cups shredded cheddar cheese
1 cup minced fresh parsley
1 cup whole milk
4 large eggs, lightly beaten
2 teaspoons Worcestershire sauce
1 teaspoon salt

Steps:

  • In a large saucepan, saute onion and garlic in butter until tender. Add remaining ingredients; mix well. Transfer to a greased shallow 1-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.

Cheesy baked rice is the perfect side dish for just about any meal.

4 cups cooked rice
1 teaspoon dried parsley
1 cup shredded colby jack or cheddar cheese
3 eggs
1 cup milk
1/2 teaspoon seasoning salt- you can use regular salt, but I like the extra flavoring of seasoning salt

Steps:

  • In a bowl mix all ingredients using only half the cheese.
  • Spread into a greased 8x8 pan or similar casserole type dish and spread the remaining cheese on top.
  • Bake at 400 for 20-25 minutes or until heat through and cheese is nice and melted.

This dish takes no more than 5 minutes to throw together and when you taste this rice you will eat the whole dish, it is *that* good! you could throw in 2 cups cooked chicken or turkey for a main meal, my family loves spice so I add in some cayenne pepper --- because of the high sodium content in the dry soup mix do *not* to add in any extra salt to this, you could add in the complete package of dry soup mix but for my family's taste we found it to be a little too salty --- all ingredients may be doubled --- this is *delicious*

1 (10 ounce) can cream of chicken soup, undiluted
1 (10 ounce) can cream of mushroom soup, undiluted
2 cups water
1 1/2 cus milk
1/2 cup melted butter or 1/2 cup margarine
1 (1 ounce) package dry onion soup mix
2 cups uncooked instant Minute Rice
1 (10 ounce) can sliced mushrooms, well drained (can use 2 cans)
1 medium onion, finely chopped
1 small stalk celery, finely diced (optional)
1 1/2 teaspoons garlic powder
1 teaspoon fresh ground black pepper (or to taste)
2 1/2 cups shredded mozzarella cheese, divided

Steps:

  • Set oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Butter a 13 x 9-inch baking dish.
  • In a bowl whisk together the soups with water, milk and melted butter until well combined.
  • Add in all remaining ingredients including 1-1/2 cups shredded cheese, save the remaining cup to sprinkle on the top; mix to combine.
  • Pour into greased baking dish.
  • Bake uncovered for 40-45 minutes or until the rice is tender.
  • Sprinkle 1 cup shredded cheese on top and return to oven for 2-3 minutes to melt the cheese.
  • Delicious!

SIMPLE BAKED RICE



Simple Baked Rice image

Rice infused with garlic and onion baked in chicken stock. A wonderfully simple dish even picky eaters will enjoy. I use homemade stock as it's the most flavorful, but use whatever you have on hand. Another option is adding whatever leftover veggies or meat I have to make a simple casserole without a heavy cream sauce. This recipe uses a rice-to-liquid ratio of 2:1 for long-grain rice.

cooking spray
1 cup long-grain rice
1 tablespoon olive oil
¼ cup diced carrot
¼ cup diced celery
¼ cup diced onion
2 cloves garlic, minced
2 cups chicken stock
1 bay leaf
1 pinch ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 2-quart casserole dish with cooking spray.
  • Spread long-grain rice into prepared casserole dish.
  • Heat olive oil in a saucepan over medium heat. Cook and stir carrot, celery, and onion in hot oil until onion is soft and translucent, about 4 minutes. Stir garlic into mixture; cook and stir 1 minute more. Increase heat to high; add chicken stock and bay leaf to the saucepan and bring to a boil. Pour the mixture over the rice in the casserole dish. Cover the dish tightly with aluminum foil.
  • Bake in preheated oven 20 minutes. Remove aluminum foil and continue baking until the rice is tender and has absorbed most of the liquid, about 20 minutes more. Remove and discard bay leaf; season with black pepper. Fluff with a fork to serve.

1 (4.5 ounce) can mushrooms, with liquid
2 stalks celery, finely chopped
1 red bell pepper, finely chopped
1 (1 ounce) package dry onion soup mix
1 (10.5 ounce) can beef broth
½ cup vegetable oil
1 cup water
3 tablespoons soy sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 9x13 inch baking dish, combine rice, mushrooms, celery, red bell pepper, onion soup mix, beef broth, oil, water and soy sauce.
  • Bake, covered, in preheated oven for 45 minutes, or until all liquid is absorbed and rice is cooked.

8 large vidalia sweet onions, thinly sliced
1/3 cup butter or 1/3 cup margarine
1/4 cup all-purpose flour
2 cups milk
2 cups cheddar cheese, shredded
1/2 teaspoon salt

Steps:

  • Place Vidalia slices in lightly greased 2 quart casserole dish and set aside.
  • Melt butter in a heavy saucepan over low heat. Add flour, stirring well until smooth. Cook for 1 minute while stirring.
  • Gradually add milk.
  • Cook over medium heat while stirring until it thickens and becomes bubbly.
  • Add cheese and salt, stirring until the cheese melts and sauce is smooth.
  • Pour over Vidalias and bake uncovered at 350° for 1 hour.

Use risotto rice with melty cheddar as a topping for this vegetarian cottage pie-style batch bake with aubergines and courgettes

1 onion , chopped
1 tbsp olive oil
2 courgettes , sliced
1 aubergine , diced
450g fresh tomato , chopped (or a 400g can chopped tomatoes)
200g risotto rice
2 eggs
140g cheddar , grated

Steps:

  • Sweat the onion in the oil for 10 mins, until soft and lightly golden. Add the courgettes and aubergine. Fry until golden brown. Add the tomatoes and some seasoning, then cover and simmer for 30 mins, uncovering for the final 15 mins if using fresh tomatoes. Heat oven to 200C/180C fan/gas 6.
  • Meanwhile, cook the rice in a large pot of salted boiling water for 20 mins, or until tender. Drain and mix with the eggs and two-thirds of the cheese.
  • Put the courgette and tomato mix in an ovenproof dish. Spoon the rice mixture over and smooth it out. Sprinkle over the rest of the cheese. Bake for 30 mins until bubbling and golden.
