This chicken stock recipe was a staple in my home growing up. I remember my mom making chicken stock on the stove every weekend, all winter long. Long-simmered homemade chicken stock (AKA bone broth) is wonderfully nutritious and filled with protein, nutrients, and minerals. Plus, the flavor is unbeatable. Number Of Ingredients 12

1 whole chicken (4-5 pounds), any paper inside removed
1 white or yellow onion, quartered
2 large carrots, scrubbed or peeled and cut in half
2 celery ribs, with leaves if possible
3-4 garlic cloves, smashed open or cut in half
1 large bay leaf
3-5 sprigs fresh thyme
5 stems fresh parsley (about 1 small handful)
2 teaspoons sea salt
½ teaspoon whole black peppercorns
1 tablespoon apple cider vinegar
enough filtered water to fill the pot

Steps:

  • Place a 6- to 8-quart pot with a tight-fitting lid on the stovetop. I use a 6-quart pot for a 4- or 5-pound chicken.
  • Remove the paper pouch that contains the organs if it's still in the chicken. Use in another recipe or discard.
  • Add all ingredients to the pot. Clean the veggies but it's ok to leave the skin on the onion and carrots. Cover with filtered cold water to about an inch below the top.
  • Put a tight-fitting lid on the pot.
  • Set it on the stove and bring it to a boil. This takes about 10-20 minutes.
  • Immediately reduce to a simmer. Simmer for at least 4 hours or up to 24 hours. The longer the simmer, the better the flavor.
  • If you use a whole chicken, remove the meat from the chicken after 2 hours to prevent overcooking it. (See the sections above for my method to remove the meat).
  • Keep the pot covered to prevent your stock from evaporating. If you notice the liquid reducing too much, you can add a few cups of water at any time during the process.
  • After simmering for at least 4 hours in total, strain your stock through a fine-mesh sieve, strainer, or cheesecloth into a large bowl, pot, or a large stockpot. Simmer up to 24 hours for more flavor before straining.
  • Discard everything that was in the pot except the liquid you just strained. The veggies, for example, are beyond saving, but they served a very good purpose.

I make a lot of soups, stews, casseroles, and Mexican dishes. Needless to say i use a lot of chicken stock as well as a lot of shredded, cooked chicken. A 10 pound bag of frozen chicken hind quarters sells at this writing for about $4.00. Yield is a guess.

1 (10 lb) bag frozen chicken legs with thigh
4 medium yellow onions, quartered, skins on
4 stalks celery, cut in large pieces
4 carrots, split lengthwise, cut in large pieces
4 sprigs fresh thyme or 1 teaspoon dried thyme
8 -10 black peppercorns
4 -6 bay leaves, depending on size
4 sprigs fresh parsley or 1 teaspoon dried parsley
water, to cover

Steps:

  • Open bag of chicken, empty contents into large stock pot.
  • Wrap herbs in cheese cloth, tie with cotton string.
  • Add all other ingredients.
  • Cover with water by 2 inches.
  • cover pot, bring to a boil.
  • Reduce heat to simmer.
  • Simmer for 4 hours.
  • Turn off heat.
  • Use tongs to remove chicken one piece at a time.
  • Remove skin and fat, discard.
  • Remove meat, set aside, discard bones.
  • Discard Bouquet Garni when you find it.
  • When you've picked out all you can with the tongs, pour remaining contents through a colander.
  • Save the good stuff, discard the rest.
  • Shred chicken and place 2 cups at a time in sandwich size zip lock bags, freeze.
  • scour the pot clean and return the stock.
  • Let cool then chill over night.
  • Next morning remove congealed fat with a spatula.
  • Reduce or not as you see fit.
  • Place 2 cups at a time in sandwich sized zip lock bags, freeze.
  • Supposed to keep for 3 months, I've never kept any that long.

1 3-to-4-pound chicken
1/2 large onion, roughly chopped (don't bother to peel)
1 large carrot, roughly chopped
1 celery rib, roughly chopped
1 bay leaf

Steps:

  • Cut the wings off the chicken, then separate the leg-thigh quarters from the carcass. Cut the back away from the breast. Pull the skin off of the backbone and legs-thighs and put it aside. Leave the skin on the breast. Set the leg-thigh quarters and the breast aside. Remove as much meat as you can - without going crazy - from the wings; dice and refrigerate.
  • Combine what's left of the wings with the backbone, onion, carrot, celery and bay leaf in a large pot with 4 cups water and turn the heat to high.
  • Bring almost to a boil, then lower the heat so the mixture sends up a few bubbles at a time. Cook for 30 minutes, or an hour if you have more time.
  • Cool slightly and strain, pressing down on the solids to extract as much liquid as possible; discard the solids.

This recipe for an intense, lovely chicken stock is full of deep flavors and provides a perfect base for soup. Feel free to use leftover bones from roast chicken, but at least half of the bones should be raw. Ask your butcher for feet, heads and wings, which are all high in gelatin and will lend body to the stock. Once cooled, freeze the stock in old 32-ounce yogurt containers, which have the added benefit of being premeasured.

Number Of Ingredients 10

4 pounds raw chicken bones
6 quarts water
2 onions, unpeeled, quartered
2 carrots, peeled and halved crosswise
2 celery stalks, halved crosswise
1 teaspoon black peppercorns
2 bay leaves
4 thyme sprigs
5 parsley sprigs (or 10 stems)
1 tablespoon white-wine vinegar

Steps:

  • Put everything but the vinegar in a large stockpot. Bring the stock to a boil over high heat, then turn down to a simmer.
  • Skim off any foam that rises to the surface. Add the vinegar. (It helps draw out nutrients and minerals from the bones into the stock.)
  • Simmer the stock for 6 to 8 hours, covered, keeping an eye on it to make sure it stays at a simmer.
  • Strain the stock through a fine-meshed sieve. Let cool.
  • Scrape the fat that rises to the top. (Save it in the fridge or freezer for matzoh ball soup.) Refrigerate for up to 5 days, or freeze for up to 3 months.

Number Of Ingredients 9

2-1/2 pounds bony chicken pieces (legs, wings, necks or back bones)
2 celery ribs with leaves, cut into chunks
2 medium carrots, cut into chunks
2 medium onions, quartered
2 bay leaves
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
8 to 10 whole peppercorns
2 quarts cold water

Steps:

  • Place all ingredients in a soup kettle or Dutch oven. Slowly bring to a boil; reduce heat until mixture is just at a simmer. Simmer, uncovered, for 3-4 hours, skimming foam as necessary. , Set chicken aside until cool enough to handle. Remove meat from bones. Discard bones; save meat for another use. Strain broth, discarding vegetables and seasonings. Refrigerate for 8 hours or overnight. Skim fat from surface.
