A quick and easy dish to prepare, this chicken stir-fry is packed with veggies. Try adding bean sprouts, bamboo shoots, snap peas, or any of your favorite vegetables. Serve it with white or brown rice, or noodles.

2 cups white rice
4 cups water
⅔ cup soy sauce
¼ cup brown sugar
1 tablespoon cornstarch
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
¼ teaspoon red pepper flakes
3 skinless, boneless chicken breast halves, thinly sliced
1 tablespoon sesame oil
1 green bell pepper, cut into matchsticks
1 (8 ounce) can sliced water chestnuts, drained
1 head broccoli, broken into florets
1 cup sliced carrots
1 onion, cut into large chunks
1 tablespoon sesame oil

Steps:

  • Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender, and liquid has been absorbed, 20 to 25 minutes.
  • Combine soy sauce, brown sugar, and corn starch in a small bowl; stir until smooth. Mix ginger, garlic, and red pepper into sauce; coat chicken with marinade and refrigerate for at least 15 minutes.
  • Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Cook and stir bell pepper, water chestnuts, broccoli, carrots, and onion until just tender, about 5 minutes. Remove vegetables from skillet and keep warm.
  • Remove chicken from marinade, reserving liquid. Heat 1 tablespoon sesame oil in skillet over medium-high heat. Cook and stir chicken until slightly pink on the inside, about 2 minutes per side; return vegetables and reserved marinade to skillet. Bring to a boil; cook and stir until chicken is no longer pink in the middle and vegetables are tender, 5 to 7 minutes. Serve over rice.

4 star fruit
1 lb chicken breast, skinless, boneless, cut into 1/4 inch wide strips
1/4 cup sherry wine
2 tablespoons brown sugar
2 tablespoons finely chopped peeled gingerroot
1 tablespoon soy sauce
4 garlic cloves, crushed
3 tablespoons cornstarch
1 teaspoon vegetable oil
1 1/2 cups julienne cut red bell peppers
1 cup vertically sliced onion
2 teaspoons dark sesame oil
1/4 teaspoon salt
1/8 teaspoon pepper
4 cups hot cooked rice

Steps:

  • Cut 1 star fruit in half crosswise and squeeze 2 tablespoons juice, using a citrus reamer or juicer; set juice aside. Or just whiz it in a food processor or blender on steroids.
  • Dice star fruit halves; set aside.
  • Slice remaining 3 star fruit crosswise and set aside.
  • Combine 2 tablespoons star fruit juice, chicken, sherry, brown sugar, ginger root, soy sauce and garlic in a bowl and stir well. Cover and chill 30 minutes.
  • Drain chicken, reserving marinade. Sprinkle chicken with cornstarch; toss well to coat. Heat vegetable oil in a large nonstick skillet over medium high heat.
  • Add chicken and star fruit; stir fry 1 minute.
  • Add bell pepper and onion and stir fry 3 minutes or until chicken is done. Add reserved marinade, sesame oil, salt and pepper; stir fry 1 minute.
  • Serve over rice.

1/2 cup red bell pepper, diced
1/2 cup scallion, chopped
2 teaspoons garlic, mashed
6 star fruit (medium)
1 cup heavy cream

paprika

4 cups rice, cooked
4 lbs chicken, cooked, deboned and cut into bite size pieces

Steps:

  • In a medium pan, heat olive oil. Saute red bell pepper, scallions, garlic and star fruit over medium low heat until tender about 8 minutes.

4 cups star fruit slices (leave the seeds, they are edible)
1 1/2 cups sugar
1/2 cup vinegar
1 stick cinnamon
1/2 teaspoon whole cloves

Steps:

  • Place carambola slices in glass jar or bowl.
  • Make a syrup of sugar, vinegar, and spices. Bring to a boil and pour over carambola slices.
  • Let stand overnight in the refrigerator.
  • Next day, drain off syrup and bring to a boil.
  • Place carambola slices in hot, sterilized jars and pour boiling syrup over, leaving 1/2 inch headspace. Wipe jar mouths and adjust lids. Process in boiling water-bath canner 10 minutes.

65g brown basmati rice
2 tsp rapeseed oil
15g ginger, peeled and cut into thin matchsticks
2 small red onions (160g), cut into wedges
160g broccoli, broken into florets, stem finely chopped
2 carrots (160g), halved lengthways, then cut into diagonal slices
1 red chilli, finely chopped (optional)
200g chicken breast, cut into thin strips
½ tsp ground cumin
1 tbsp crunchy peanut butter
1 tbsp wheat-free tamari
1 tbsp brown rice vinegar

Steps:

  • Cook the rice following pack instructions, then drain. Heat the oil in a non-stick wok over a high heat and fry the ginger and red onions for 2 mins. Add the broccoli stem, carrots and chilli, if using, and cook for 1 min.
  • Tip in the chicken and cumin, stir-fry briefly, then add the broccoli florets and 3 tbsp water. Cover and leave to steam for 3-4 mins, or until the broccoli florets are just tender and the chicken is cooked through.
  • Meanwhile, mix the peanut butter with the tamari and vinegar. Stir the sauce into the veg and chicken, then serve over the cooked rice.

2 bell peppers, roasted, peeled and sliced (red or yellow)
10 cups lettuce greens

2 tablespoons basil, chopped
2 teaspoons sugar

2 tablespoons orange marmalade
2 teaspoons olive oil
