1 (12-ounce) package sweet Chinese sausage
2 medium red onions, wide around the middle
5 pickling cucumbers or Kirbies, with skins
Inner leaves from 1 bunch celery, washed and roughly chopped (about 1/2 cup)
1 bunch cilantro, leaves only
4 to 6 serrano chiles, stems removed and thinly sliced, diagonally
1 tablespoon chopped kaffir lime leaves, or 1 teaspoon grated lime zest
2 teaspoons pureed garlic
1/4 cup palm sugar or dark brown sugar
1/2 cup fresh lime juice
1/2 cup fish sauce

Steps:

  • Preheat broiler. Place sausages in one layer on a large baking sheet and broil until charred on all sides, about 5 minutes per side. Set aside to cool.
  • To make onion cups, slice off root ends and tops, then peel. Cut each in half horizontally, and separate layers by pressing with your thumbs against root end to release rings. Reserve 12 largest as serving cups. Slice remaining onion into thin strips for use in salad.
  • Slice cucumbers in half lengthwise. Then slice cucumbers and charred sausages, diagonally.
  • Combine sausage, cucumbers, onion strips, celery leaves, and cilantro in a medium bowl. In another bowl, whisk together serrano chiles, lime leaves, garlic, palm or brown sugar, lime juice, and fish sauce. Pour over salad and toss to combine.
  • To serve, place onion cups openside up on each serving plate. Spoon salad into cups and serve.

6 large eggs
1/4 cup whole milk
2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 fully precooked chicken sausages, sliced into thin rounds (or removed from casing)
1/2 small red onion, thinly sliced
1 teaspoon kosher salt
2 garlic cloves, thinly sliced
3 cups baby spinach
1/3 cup pitted, roughly chopped Kalamata olives (or Turkish gemlik olives)
1/3 crumbled feta cheese (preferably French), plus more for garnish
Flaky sea salt and freshly cracked black pepper
Chopped fresh parsley, for garnish
Olive oil, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk the eggs and milk until frothy.
  • In a large ovenproof skillet, heat 2 teaspoons of the olive oil over medium-high heat. Add the chicken sausage coins and brown them on all sides, 4 to 6 minutes, turning often. Transfer the sausage to a plate until ready to use.
  • Add 1 tablespoon of the olive oil to the skillet and heat it over medium-high heat until shimmering. Add the onion and 1/2 teaspoon of the salt. Cook, stirring often, until the onion is soft but not browned. Add the garlic and cook, stirring often, until fragrant, about 1 minute. Add 1 tablespoon room temperature water to the pan to stop the garlic browning, and the remaining tablespoon of olive oil, then stir in the spinach and the remaining 1/2 teaspoon of the salt. Cook, stirring often, until the spinach is wilted and the water in the pan evaporates, about 2 minutes. Spread this frittata filling evenly in the skillet and layer with the chicken sausage.
  • Pour the egg-milk mixture over the frittata filling and use a silicone spatula to scrape the sides of the pan and gently pull eggs from the edges toward the middle so that soft curds form and the frittata begins to firm up.
  • Give the pan a couple of good shakes to release the frittata from the pan bottom (the top of the frittata will still be raw). Sprinkle the olives and feta over the eggs. Transfer the skillet to the oven and cook until the fritatta is mostly dry (the feta will release some liquid--this is fine--but just be sure the egg is completely cooked) and lightly browned on top, 5 to 7 minutes.
  • Let rest 5 minutes, then slide the frittata onto a large plate and sprinkle with flaky sea salt and pepper to taste. Top with more feta, parsley and olive oil. Slice into wedges and serve warm or at room temperature.

¼ cup milk
½ cup shredded mozzarella
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
1 tablespoon canola oil
1/2 (1-pound) package Jimmy Dean Premium Pork Sausage
1 ½ cups arugula
½ cup grape tomatoes, halved

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a cast iron skillet or 8-inch cake pan with oil and set aside. In a bowl, beat eggs and milk together until they are an even consistency. Add cheese, salt, pepper, and garlic powder, and mix.
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain.
  • Place sausage, arugula, and tomatoes in the sprayed pan and spread into an even layer. Pour the egg mixture over the vegetables and sausage. Put the pan into the oven and cook for about 20 minutes, until the center is set.
  • Carefully remove the frittata from the oven and let cool for 10 minutes before slicing.

  • Heat oil in a heavy, nonstick, oven-safe skillet. (If you don’t have an ovenproof skillet, no worries. There is a tip at the end.) Add wet spinach and cover and steam for 2–3 minutes. Lift cover and stir spinach with a wooden spoon. Cover and steam an additional 2 minutes until all the spinach has wilted. Don’t overcook.
  • Remove spinach from skillet and drain in a colander, making certain to squeeze out the water with a wooden spoon. Set aside.
  • Add additional oil to skillet and heat until it shimmers. Add onion and sausage to skillet. Continue to stir and break up the sausage until it is cooked through and has crumbled. Drain any excess fat. Remove from heat.
  • Separate spinach with two forks. Sprinkle the separated spinach over the sausage and onion mixture. The spinach will try to clump up, so keep separating it until it is mixed together with the sausage.
