CHICKEN AND SAUSAGE CASSOULET

Cassoulet is one of my favourite dishes. This simple home-style version is closer to baked beans and sausages than fine French fare, but I'm okay with that. If using dried beans you'll need to start soaking them the night before.

400g dried great northern beans, cannellini beans or navy beans
2 tbsp olive oil
4 chicken drumsticks
4 good-quality pork sausages
4 thick slices speck or 200g bacon pieces
1 onion, peeled and diced
1 small carrot, peeled and diced
1 stick celery, diced
1 cup tomato passata
2 cups chicken stock
2 bay leaves
5 sprigs thyme
1 tsp salt
2 tbsp chopped parsley, to serve

Steps:

  • 1. Place the beans in a bowl, cover them with water - about 3 centimetres above the beans - and add a teaspoon of salt. Allow to stand at room temperature overnight. Drain the beans and rinse with clean water, then place in a medium saucepan and cover with water again. Bring to a simmer and simmer for 40 minutes then drain. 2. Heat your oven to 150C fan-forced (160C conventional). Heat a large, wide, oven-proof frying pan (or use a heavy baking dish) over medium heat. Add the oil and fry the chicken drumsticks, sausages and speck or bacon until browned. Remove from the pan (if using bacon pieces you can leave these in the pan). Add the onion, carrot and celery and fry for about 10 minutes until fragrant. Add the beans to the pan and stir to coat and combine. Add the passata, chicken stock, bay leaves, thyme and salt and stir. 3. Arrange the chicken, sausages, and speck back in the pan, pressing them into the mixture until halfway submerged. Bake for 90 minutes, then remove from the oven and allow to stand for 10 minutes. Scatter with parsley and serve. Tip: I prefer to use dried beans as I think they have a better flavour and soaking overnight takes no effort at all, but if you're pressed for time then use canned and skip the soaking. 3/4 lb chicken sausage (asiago- spinach if you can find it)
2 (15 ounce) cans cannellini beans, rinsed and drained
1 large onion, sliced thin
2 cups mushrooms, sliced
1/2 teaspoon garlic, crushed
1 1/2 cups water (feel free to replace part with white wine)
1 chicken bouillon cube (large or 2 small)
1/3 teaspoon herbes de provence
salt and black pepper
1 pinch red pepper flakes
1 tablespoon olive oil
2 tablespoons butter

Steps:

  • Skin sausage and slice into thin slices.
  • Heat oil in pan and add chicken, onion, garlic and mushrooms.
  • Cook about 7 minutes.
  • Add the remaining ingredients, except for the butter.
  • Cook another 5-7 minutes or until the liquid has thickened and is almost gone.
  • Mix in butter, and serve.

Flavorful chicken thighs are perched on top of a sausage, bean and tomato mixture in a French-inspired casserole.

4 slices bacon, cut into 1-inch pieces
6 bone-in chicken thighs (about 2 lb), skin removed if desired
1 cup ready-to-eat baby-cut carrots
1 medium onion, chopped (1/2 cup)
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 oz Polish sausage links, cut into 1/2-inch pieces
2 cans (15 oz each) navy beans, drained, rinsed
1 can (14.5 oz) diced tomatoes with roasted garlic, undrained

Steps:

  • Heat oven to 350°F. In 12-inch nonstick skillet, cook bacon over medium-high heat until crisp. Remove from skillet; drain on paper towels. Reserve 1 tablespoon drippings in skillet.
  • Add chicken to skillet; cook over medium-high heat about 4 minutes, turning once, until golden brown. Stir in carrots, onion, thyme, salt and pepper; cook 4 to 5 minutes or until chicken and vegetables are browned. Drain well. Remove chicken from skillet.
  • In ungreased 13x9-inch (3-quart) glass baking dish, mix sausage, beans, tomatoes, bacon, carrots and onion. Top with chicken thighs; cover with foil.
  • Bake about 45 minutes or until juice of chicken is clear when thickest part is cut to bone (180°F) and vegetables are tender.

This is a hearty stew of white beans, chicken and sausage. This recipe was developed for a 3 quart crock pot. If you use a larger one, you will need to double the ingredients. Serve with cornbread, green onion fans and a side salad.

1/2 cup vegetable juice or 1/2 cup tomato juice
2 medium carrots, scrubbed, sliced into 1/2 inch thick slices
2 celery ribs, cut into fourths
1 medium onion, chopped
2 garlic cloves, minced
2 bay leaves
1 teaspoon basil, crushed
1 teaspoon oregano, crushed
2 -3 frozen boneless skinless chicken thighs
8 ounces smoked turkey or 8 ounces chicken sausage
salt and pepper, to taste

Steps:

  • Combine the beans, tomato juice, carrots, celery, garlic, bay leaves, and spices.
  • Cut the sausages in half lengthwise and slice, stir into beans.
  • Place the frozen chicken thighs on top of the bean mixture.
  • Cover; cook on low-heat for 8 to 10 hours.
  • Remove bay leaves, stir, adjust seasonings as desired and serve.

Cook undisturbed for 6-7 minutes, adjusting the heat as necessary so thighs cook evenly. Flip when edges are opaque and lightly browned and cook for another 3-4 minutes or until cooked through to a safe internal temperature of 165 degrees. Transfer to a plate and let cool to the touch. Do not wipe out the skillet and keep it at medium-high.

  • Bake in preheated oven until heated through, top is browned, and sides are bubbly, about 20 minutes. (If baking from refrigerated, bake an additional 5 to 10 additional minutes.)
