BASIL CHICKEN SANDWICHES

"I got the inspiration for this recipe when I knew my parents and in-laws were coming to see our new home," shares Kerry Durgin Krebs of New Market, Maryland. "My mother-in-law has food allergies, my father-in-law has some very specific food preferences and my parents appreciate light meals. I created this chicken sandwich with fresh basil for our lunch."

1/2 teaspoon pepper
1/4 teaspoon salt
Dash paprika
1 pound boneless skinless chicken breasts, cut into 1/2-inch slices
6 tablespoons prepared olive oil vinaigrette salad dressing, divided
6 ciabatta rolls, split
18 basil leaves
1 jar (7 ounces) roasted sweet red peppers, drained
1/4 cup shredded Romano cheese

Steps:

  • In a bowl, combine the pepper, salt and paprika; sprinkle over chicken slices. In a nonstick skillet over medium-high heat, cook chicken in 2 tablespoons salad dressing for 4-5 minutes on each side or until chicken is no longer pink. , Brush remaining salad dressing on rolls. Place basil leaves on rolls; top with chicken and red peppers. Sprinkle with Romano cheese.

½ cup light mayonnaise
½ cup torn basil leaves
1 clove garlic, coarsely chopped
⅛ teaspoon cayenne pepper
1 pinch salt
2 slices Italian bread
2 thin slices fresh mozzarella cheese
1 (4 ounce) Chicken, broilers or fryers, breast, meat and skin, cooked, stewed
2 (1/4 inch thick) slices tomato
⅛ cup fresh spinach leaves
1 teaspoon olive oil

Steps:

  • Combine mayonnaise, basil, garlic, cayenne, and salt for garlic-basil mayo in a food processor; blend until smooth. Place in the refrigerator to chill for at least 1 hour to allow flavors to mix.
  • Preheat a panini maker.
  • Spread garlic-basil mayonnaise to taste on each slice of bread. Assemble sandwich with cheese, chicken, tomato, and spinach. Brush the outside of the sandwich with olive oil.
  • Grill in the preheated panini maker until golden brown and cheese is melted, about 5 minutes.

This is a tried-and-tested recipe! I remember seeing an ad on TV about cooking with mayonnaise and decided to give it a shot. I've made it with just the mayonnaise on top and it really locks the moisture into the chicken. The bread crumbs and cheese are a must for me; they complement each other very well.

2 skinless, boneless chicken breasts
2 ½ tablespoons grated Parmesan cheese
2 tablespoons mayonnaise, or more to taste
2 tablespoons bread crumbs, or more to taste
1 ½ teaspoons herbes de Provence

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place chicken breasts in a baking pan.
  • Mix Parmesan cheese and mayonnaise in a bowl; spread evenly over chicken breasts. Coat with bread crumbs; sprinkle with herbes de Provence.
  • Bake in the preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Set up your breading station! 1 - Flour seasoned with the lemon-pepper seasoning & 1 tsp salt, 2- eggs mixed with a little water, 3 - panko breadcrumbs and italian breadcrumbs with parmesan cheese.
  • Dredge the cutlets in the flour first and shake off any excess. Then add to the egg/water mixture and make sure it's all covered. Then add to the breadcrumbs and pat down gently on both sides for even coating. Set breaded cutlets aside on a clean plate.
  • Add vegetable oil to a large skillet, you want about an inch of oil in the frying pan and set over medium-high heat. When the oil is hot (see tips above!) add 2 cutlets at a time and fry about 3-4 mins per side. You'll know they're ready to flip when the edges are nice and golden brown. Line a large, clean plate with paper towels and put the fried cutlets on there when they're finished. Squeeze a bit of fresh lemon juice on top while they're still hot!
