I combined a number of my favorite things to come up with this tasty sandwich. This is a great use for leftover chicken. Makes a great summer supper, or hearty lunch.

1 1/2 cups cooked chicken, diced
1/2 avocado, diced
2 tablespoons onions, minced
2 tablespoons pimentos, minced
1 tablespoon fresh parsley, minced
2 tablespoons celery, minced (optional)
3 tablespoons mayonnaise (more if desired)
1/2 teaspoon lemon juice (bottled is fine here, but fresh is even nicer)
2 -5 drops hot pepper sauce
salt
pepper
2 sandwich rolls, such as french rolls, sub rolls, ciabatta
2 leaves lettuce

Steps:

  • Combine all ingredients except rolls and lettuce in a medium bowl.
  • Slice rolls in half, and toast if desired. Lay lettuce leaves on bottom halves of rolls, and divide chicken salad between them. Place roll tops on sandwich.

Deelish!! Wonderful combination of flavors that makes a tasty and satisfying lunch or quick dinner. Great use of leftover chicken or canned chicken breast. I hope you enjoy these chicken salad sandwiches as much as we do. Tip: If you don't have access to fresh lovage, use triple the amount of fresh celery leaves.

3 cups cooked chicken, cubed (or use two 12.5 ounce cans Swanson's White Premium Chunk Chicken Breast, well drained)
1 ripe firm tomatoes, chopped
1 teaspoon fresh lovage, leaf finely chopped (or fresh celery leaf)
1/2 teaspoon snipped fresh marjoram
1/8 teaspoon onion powder, to taste
salt and pepper (optional)
3/4 teaspoon fresh lemon juice
1/3 cup good quality mayonnaise
2 firm ripe avocados, cubed
8 slices fresh white bread, lightly toasted
lettuce (optional)
sliced cheese (optional)

Steps:

  • In a medium bowl, stir together the drained chicken chunks, chopped tomato, lovage or celery leaf, snipped marjoram, onion powder, lemon juice, and mayonnaise.
  • Fold in the avocado cubes, stirring gently to combine.
  • Spread equal amounts on the toasted bread and make a sandwich.
  • Add a lettuce leaf or slice of cheese, as desired. Enjoy!
  • Tip: Cover and refrigerate any leftover chicken salad for up to three days.

I love chicken salad sandwiches. For this recipe, I use a rotisserie chicken from the supermarket. The chicken is tossed with avocado oil mayonnaise, capers and dill relish, then layered on crusty bread with sliced radishes and butter lettuce. 4 cups cubed rotisserie chicken
3/4 cup chopped celery
1/2 cup chopped green onions
1/2 cup reduced-fat mayonnaise or avocado oil mayonnaise
2 tablespoons capers, drained and chopped
2 tablespoons caper juice
2 tablespoons dill pickle relish
1/2 teaspoon salt
1/2 teaspoon pepper
20 slices French bread (1/2 inch thick)
3 tablespoons butter, softened
10 Bibb or Boston lettuce leaves
1 cup thinly sliced radishes

Steps:

  • Place chicken in a food processor; pulse until finely chopped. Transfer to a large bowl; stir in celery, green onions, mayonnaise, capers and juice, relish, salt and pepper., Brush 1 side of each bread slice with butter. In a large skillet, toast bread, buttered side down, in batches, over medium heat until golden brown. To assemble sandwiches, place 10 slices bread toasted side down. Layer with lettuce, radishes and chicken salad; top with remaining toast slices.

I love chicken salad and I love avocado, so I figured I might as well put them together. Oops! Fixed mistake on mayo amount May 2012.

Number Of Ingredients 14

8 ounces cooked chicken breasts
2 tablespoons chopped pecans
1/4 cup finely chopped celery
1/4 cup finely chopped red onion
1 teaspoon Dijon mustard
1/2 teaspoon fresh lemon juice
1 teaspoon canned diced jalapeno
1/8 teaspoon kosher salt (less if table salt)
3 tablespoons mayonnaise (more or less, to bind salad)
4 slices bread
2 tablespoons mayonnaise or 2 tablespoons Dijon mustard, for bread
1 avocado
2 slices provolone cheese
2 romaine leaves

Steps:

  • Chop cooked chicken into 1/4-inch cubes and place in medium bowl.
  • Add pecans, celery, red onion, Dijon mustard, lemon juice, jalapeño and salt. Then add just enough mayonnaise to bind salad together.
  • Stir to combine and adjust seasoning as desired.
  • Spread mayonnaise or Dijon mustard on the bread, mash half a avocado on each sandwich and top with provolone and romaine.
  • On other half of each sandwich add the chicken salad, then put the two halves together and enjoy!
  • NOTE.
  • To prepare the cooked chicken, try cooking them in pineapple juice. It gives them a very nice flavor.

2 boneless skinless chicken breasts (cooked and shredded)
1 large avocado (diced)
1/4 cup cilantro (chopped)
salt and pepper, to taste
4 ciabatta rolls (or dinner rolls)

Steps:

  • Add the chicken, avocado, cilantro and salt and pepper in a small bowl and mix until all ingredients are well combined.
  • I served mine on small ciabatta buns, but you can use any buns or rolls you like. I also ate some the next day on whole wheat bread and I added a little salsa - it was delicious!
