CHICKEN IN ROMANESCO SAUCE

2 red bell peppers (or 1 red and 1 yellow)
1/2 cup Marcona almonds or blanched raw almonds
1/2 cup chicken stock
1/2 cup fresh flat-leaf parsley leaves
Zest and juice of 1 lemon
Zest and juice of 1 orange
2 large cloves garlic, crushed
1 Fresno chile pepper
1/2 red onion, coarsely chopped
1 large heirloom tomato
2 tablespoons EVOO
8 bone-in chicken thighs
1 teaspoon smoked sweet paprika
Salt and freshly ground pepper
1/2 cup dry sherry

Steps:

  • Char the bell peppers under a broiler or over a gas flame, turning occasionally. Place the peppers in a bowl, cover with plastic wrap and let cool. Peel off the charred skin and remove the seeds.
  • Meanwhile, toast the almonds in a pan or in the oven until golden, then let cool.
  • Place the roasted bell peppers in a food processor along with the almonds, chicken stock, parsley, lemon and orange zest and juice, the garlic, chile pepper and red onion. Grate the tomato on the large holes of a box grater. Discard the skin and add the tomato pulp to the food processor. Puree until smooth.
  • Meanwhile, heat the EVOO in a large skillet over medium-high heat. Sprinkle the chicken with paprika, salt and pepper and cook until browned, 3 to 4 minutes per side. Add the sherry to the skillet and scrape up any browned bits from the bottom with a wooden spoon. Stir in the roasted pepper sauce, reduce the heat and simmer, partially covered, until the chicken is cooked through, 10 to 12 minutes. Transfer the chicken to plates and spoon the sauce over top.

CREAMED LACINATO KALE



Creamed Lacinato Kale image

This preparation is classic for a reason. Obviously, spinach is the usual green recruited for this dish, but I love using tender kale in its place. You can make in advance, then simply warm with the breadcrumbs and top with lemon juice just before serving. This should have a baked feeling, so the oven time is important to achieve the classic "steakhouse side dish" effect.

2 tablespoons extra-virgin olive oil, plus additional for drizzling
1 pound fresh lacinato, Tuscan or Red Russian kale, coarsely chopped
Kosher salt
One 10-ounce package frozen chopped spinach, defrosted and squeezed dry
2 cups heavy cream
1 cup finely grated Parmesan
1/2 cup grated Gruyere
1 tablespoon Worcestershire sauce
1/4 teaspoon red chile flakes
1/4 teaspoon ground nutmeg
Zest and juice from 1 small lemon
1 cup panko breadcrumbs, toasted

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 1 tablespoon oil in a large braiser over high heat. When the oil begins to smoke, add half the kale to the pan. Season with salt and cook, stirring, until the leaves take on a deep green hue and lose 50 to 75 percent of their volume, 2 to 3 minutes. Transfer the kale to a large bowl with the spinach. Repeat with the remaining oil and kale, adding it to the bowl as done.
  • Return the braiser to high heat and add the cream. Simmer the cream until it reduces to about 1 3/4 cups, about 5 minutes. Add the cream to the greens and stir to combine. Add the Parmesan, Gruyere, Worcestershire, chile flakes, nutmeg, lemon zest and juice and salt to taste. Return the greens to the braiser and top with the panko and a drizzle of oil. Bake until warmed, 12 to 15 minutes.

ROAST ROMANESCO WITH ANCHOVIES, CAPERS & CURRANTS

Try roasted romanesco with a salty tang of anchovies and capers, plus a sweet note of currants. It's a great side dish and also works well tossed through pasta

25g currants
1 romanesco , broken into small florets
3 tbsp extra virgin olive oil
3 banana shallots , peeled, halved and sliced lengthways
2 garlic cloves , finely sliced
¼ tsp chilli flakes
6 anchovies in oil, drained and roughly chopped
½ tbsp capers , drained and rinsed
10g pine nuts or flaked almonds, toasted
1 tbsp roughly chopped flat-leaf parsley , or a mixture of roughly chopped parsley and mint
squeeze of lemon juice

Steps:

  • Put the currants in a small bowl and cover with boiled water. Leave to soak for 1 hr. Heat the oven to 190C/170C fan/gas 5.
  • Arrange the romanesco in a roasting tin in a single layer. Add 2 tbsp of the oil, season and toss to combine. Roast for 20 mins until tender (keep an eye on it as it cooks more quickly than cauliflower), tossing halfway through to make sure it's evenly coloured.
  • Meanwhile, cook the shallots in the remaining oil over a medium heat for about 10 mins until golden. Reduce the heat and add the garlic, chilli flakes and anchovies and cook for 2 mins more. Gently press the anchovies with the back of a wooden spoon to help them dissolve. Drain the currants and add to the pan along with the capers, nuts, herbs and lemon juice. Toss with the roasted romanesco and transfer to a serving plate.

6 boneless skinless chicken breasts
1/2 cup seasoned bread crumbs
2 tablespoons dried parsley (or oregano or your favorite dried spice)
1/4 cup fresh romano cheese or 1/4 cup parmesan cheese, shredded
1/4 cup butter, melted

Steps:

  • Preheat oven to 400 degrees.
  • Combine bread crumbs, parsley and cheese.
  • Brush chicken with butter, then roll in crumb mixture.
  • Place meaty side up in ungreased, shallow baking pan.
  • Sprinkle remaining crumb mixture on top.
  • Bake, uncovered, for 40 minutes or until chicken is no longer pink.
  • Cover the chicken with foil if the crumbs begin to get too brown.

2 large leeks (white parts only), chopped
1 tablespoon unsalted butter
1 tablespoon olive oil
3/4 lb cavolo nero or other kale, stems and center ribs discarded and leaves coarsely chopped
1 cup chicken broth
3/4 cup water
2/3 cup heavy cream
1 1/2 oz coarsely grated Pecorino Romano (1/2 cup)
1 large whole egg
2 large egg yolks
Special Equipment
8 (3- to 4-oz) ramekins (1/3 to 1/2 cup)

Steps:

  • Wash leeks in a bowl of cold water, then lift out and drain well. Cook leeks in butter and oil in a 5- to 6-quart heavy pot over moderate heat, stirring occasionally, until softened, about 6 minutes. Stir in kale and cook, covered, until slightly wilted, about 2 minutes. Add broth and water and simmer, uncovered, until kale is tender, about 8 minutes.
  • Purée kale mixture in 2 batches in a blender until very smooth (use caution when blending hot liquids). Pour through a fine-mesh sieve into a bowl, pressing on and discarding solids.
  • Preheat oven to 325°F.
  • Bring cream and cheese just to a boil, then remove from heat. Steep, covered, 10 minutes.
  • Whisk together whole egg, yolks, and kale purée in a bowl. Pour cream mixture through fine-mesh sieve into kale mixture and whisk to combine. Divide among buttered ramekins and bake, uncovered, in a water bath until set, 30 to 35 minutes (centers will still be slightly wobbly).
  • Transfer ramekins with tongs to a rack and cool 5 minutes. If desired, invert custards onto plates by first running a thin sharp knife around edge of each ramekin.
