1 small white onion, chopped
1 cup Arborio rice
1 can (15 ounces) reduced-sodium chicken broth
1/2 cup white wine
1 can (8 ounces) peas, drained
1 can (6 ounces) chunk chicken, drained
1/2 cup chopped, fresh basil
1/2 cup freshly grated Parmesan cheese
Salt and pepper, to taste

Steps:

  • Preparation Time: Approximately 20 minutes Cook Time: Approximately 15 minutes Preparation: Heat olive oil in a medium, non-stick saucepan over medium heat. Add onion; cook and stir for 5 minutes, until onion is translucent. Add rice; stir, coating rice with olive oil and onions. Pour in broth and wine. Simmer covered until stock is absorbed, about 20 minutes. Stir in peas, chicken, basil and Parmesan cheese. Season with salt and pepper to taste. Serve immediately. 4 boneless skinless chicken breast halves
1/4 cup flour
salt and pepper
4 tablespoons butter
1/4 cup minced fresh basil
1 tablespoon red wine vinegar
1/2 cup parmesan cheese
1 teaspoon sugar
1 cup cream or 1 cup milk

Steps:

  • Flatten breasts, dip in flour, salt and pepper.
  • Heat butter in 12in skillet.
  • Add breasts, cook for 4 minutes each side until browned and juices run clear.
  • Remove from pan.
  • Mix basil with remaining ingredients.
  • Add to pan, cook and stir for 3 minutes,thicken with a little flour if needed.
  • Serve over chicken.

1 cup uncooked orzo pasta
1 (14.5 ounce) can chicken broth
½ cup grated Parmesan cheese
¼ cup chopped fresh basil
salt and pepper to taste
2 tablespoons chopped fresh basil

Steps:

  • Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned.
  • Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.
  • Mix in Parmesan cheese and basil. Season with salt and pepper. Transfer to shallow bowl. Garnish with basil sprigs.
