1 smoked bacon, slice chopped
1 1/2 cups red potatoes, cubed (about 8 ounces)
1 cup carrot, chopped
6 boneless skinless chicken thighs, cut into bite sized pieces
3 1/2 tablespoons all-purpose flour
3 cups leeks, sliced (about 2)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 cups chicken broth, fat-free, lower-sodium
0.5 (14 1/8 ounce) package refrigerated pie dough
1 tablespoon nonfat milk
1 large egg white

Steps:

  • Preheat oven to 450°F.
  • Cook bacon in a large Dutch oven over medium heat until almost crisp, stirring frequently. Increase heat to medium-high. Add potato and carrot; saute 3 minutes, stirring occasionally. Add chicken to pan; saute 3 minutes or until lightly browned, stirring occasionally. Stir in flour, leek, salt, and pepper; saute 1 minute, stirring frequently.
  • Slowly add broth to pan, stirring constantly; bring to a boil. Cook 2 minutes or until slightly thick, stirring occasionally. Spoon 1 1/4 cups mixture into each of 6 (8 ounce) ramekins. Cut dough into 6 (4 inch) circles (reroll dough scraps, if necessary). Place over ramekins, folding under and pressing down on edges to seal.
  • Combine milk and egg white; brush over dough. Cut small slits in dough to vent. Bake at 450 for 30 minutes or until golden. Let stand 10 minutes.

This bake is a great way to use up leftover roast potatoes or gammon and can be made-ahead and frozen for convenience

2 tbsp olive oil
400g chicken breast , cut into small chunks
140g thick-sliced ham , roughly chopped
roughly leftover roast potato , large ones halved
2 leeks , trimmed and sliced
1 heaped tbsp plain flour , plus extra for dusting
200ml white wine
400ml chicken stock
3 heaped tbsp crème fraîche
375g shortcrust pastry sheet (use fresh if you're freezing the pie)
beaten egg , to glaze

Steps:

  • Heat half the oil in a large frying pan and brown the chicken for about 5 mins. Tip into a 22 x 28cm ovenproof pie dish, then evenly scatter over the ham and roast potatoes. Heat the remaining oil and soften the leeks for about 5 mins, then stir in the flour for 1 min.
  • Pour in the wine and stock. Bring to the boil and, stirring continuously, boil rapidly to reduce to a thick sauce. Take off the heat, then stir in the crème fraîche and seasoning. Pour over the pie filling and leave to cool.
  • Unroll the pastry and cut off a small strip to make decorations (if you like). Roll the remainder to fit the dish and place on top of the pie. Use a fork to crimp the edges and press the pastry to the edge of the dish. Make a small hole in the centre, then cover well with cling film. Freeze for up to 3 months. For best results, defrost at room temperature for 8 hrs.
  • Heat oven to 200C/180C fan/gas 6. Brush pie with egg to glaze (making sure the steam hole hasn't sealed up). Cook for 30-40 mins, until golden and hot through.

500g parsnip , peeled
300g floury potato , peeled
500g boneless skinless chicken breast
2 tsp cornflour
1 tbsp olive oil
4 leeks , sliced
grated zest 1 lemon
2 tbsp chopped parsley
2 tbsp low-fat crème fraîche
1 tbsp wholegrain mustard

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Chop the parsnips and potatoes into chunks, then boil for 15 mins until tender. Drain, reserving the water, then mash with a little seasoning.
  • Cut chicken into small chunks, then toss in the cornflour. Heat the oil in a large pan, add the leeks, then fry for 3 mins until starting to soften. Add the chicken and 200ml water from the potatoes, then bring to the boil, stirring. Reduce the heat, then gently simmer for 10 mins, until the chicken is just tender. Remove from the heat, then stir in the lemon zest, parsley, crème fraîche and mustard.
  • Divide the chicken filling between four 300ml pie dishes. Spoon over the mash and spread roughly with a fork to seal in the filling. Bake for 25 mins until the topping is crisp and golden.

  • Heat 1 tablespoon of oil in a large casserole over a medium-high heat, season the chicken pieces and colour them on both sides (you will probably need to do this in batches), then remove them to a bowl. Pour off the fat, turn the heat down a little, add another tablespoon of oil and fry the leeks for a few minutes until softened and lightly coloured, stirring frequently, then remove them to a large bowl.
  • Return the chicken pieces to the casserole, add the wine, stock or water and a little seasoning. Press the chicken pieces down (they won’t be completely covered), bring the liquid to the boil, then cover and simmer over a low heat for 35 minutes until the chicken is just tender, stirring halfway through. Remove the chicken pieces to a plate, reserving the cooking liquid (skim off any fat) and, once they are cool enough to handle, remove and discard the skin and shred the flesh, adding it to the bowl with the leeks.
  • Melt the butter in a medium nonstick saucepan over a medium heat, stir in the flour and cook for about 1 minute until it's a thick paste. Remove from the heat and gradually stir in the cooking liquid and the crème fraîche until smooth. Bring to the boil, stirring frequently, and simmer over a low heat for 5 minutes. Adjust the consistency if required and whisk in the mustard to taste. Pour the sauce over the chicken and leeks, and mix in the watercress. Transfer this to a shallow 2 litre ovenproof dish.
  • Bring a large pan of salted water to the boil, add the potatoes and simmer until tender, then drain through a colander and leave for a few minutes for the surface moisture to evaporate. Return them to the pan and mash them very coarsely, partly chopping them with the side of the masher. Stir in 2 tablespoons of olive oil and some salt, and then the parsley. Spoon the potato on top of the chicken – it should be loose and craggy.
