ROAST CHICKEN WITH MAPLE BUTTER AND ROSEMARY
This simple roast chicken combines the classic fall flavors of maple and rosemary with melted butter, which is basted over the bird as it cooks to keep it juicy. The butter browns slightly and helps caramelize the outside thanks to the sugars in the maple syrup. The result is a fragrant, sweet-and-salty chicken that makes the house smell great. There will be plenty of buttery pan juices left over, which you should most certainly pass around the table, but they would also be delicious spooned over rice pilaf.

- Heat the oven to 375 degrees. Pat the chicken dry and season it well with salt and pepper, both inside and out. Place the chicken breast-side up in a 10-inch cast-iron or ovenproof skillet and stuff the rosemary sprigs into the bird's cavity.
- In a saucepan, melt the butter over medium-low heat. Add the chopped rosemary and the maple syrup, and cook together until the rosemary is fragrant and the mixture has thickened slightly, about 1 to 2 minutes. Spoon all of the mixture over the chicken, making sure it is evenly covered. A decent amount will end up on the bottom of the pan, and that's O.K.
- Roast the chicken, basting with the pan juices every 15 to 20 minutes or so, until the chicken is glossy and golden brown and registers 165 degrees with an instant thermometer in the thickest part of the thigh, about 55 to 60 minutes. Remove from the oven and baste an additional time, if desired. Allow the chicken to rest for 10 minutes before carving. Whisk remaining juice and pass at the table.

CHICKEN PORTER ROCKWELL
A delicious savory pastry from the Lion House Restaurant, with some minor changes. A company dish; it may be a little too rich for everyday! Serve with your favorite chicken gravy. This is a great substitute for chicken cordon bleu.

- First make the piecrust. In a mixer, cream the fats. Add sugar, baking powder, salt and dry milk. Add half the flour and mix well. Add water and remaining flour. This can all be done in the mixer but don't mix it too much. (You can also use your own pie crust recipe with about the same amount of flour, or perhaps a flat refrigerated pie crust from the store, not the ones already in the pie tin.).
- Roll out pie crust and cut into 16 (5 inch) circles.
- Flatten chicken breasts--use a meat mallet or place between plastic wrap and roll flat with a rolling pin.
- Prepare filling. Melt butter in a pan. Add onions, mushrooms, garlic and saute until tender. Remove from heat and add parsley, salt and pepper.
- Divide filling between chicken breasts. Roll up breasts, tuck in ends, and place each breast on a pastry circle.
- Place a second circle on top. Seal the edges with a fork.
- Beat egg and salt together and brush on each pastry. Cut slit in top.
- Place on a greased cookie sheet and bake for 25 minutes at 400 degrees or until golden brown. Serve with a chicken gravy or a clear chicken glaze.

PORT-A-PITT BBQ CHICKEN (COPYCAT RECIPE)
Here in Northern Indiana, they have fund raisers where this chicken is sold. It is slow cooked in a large covered grill (about the size of a small travel trailer) where it is constantly moving from the grilling section to a dipping section and back. This makes it fall-apart tender and a spectacular flavor. Edited to add: Since the sauce makes a lot and I end up throwing so much of it away, I've been making up LOTS of chicken for freezing. I have been taking 2 or 3 whole chickens, cutting them in half; then baking the halves in the sauce (may need to bake in batches). When cool, I freeze in freezer bags dividing up the remaining sauce among the bags. When ready to eat, thaw and grill with the thawed marinade.
