FRIED CHICKEN PO' BOYS

Four 6- to 8-ounce boneless skinless chicken breasts, cut lengthwise into 1-inch-wide strips
2 cups buttermilk
1/2 cup hot sauce
2 teaspoons fine salt
1 teaspoon Cajun seasoning
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon freshly ground black pepper
2 cups all-purpose flour
2 tablespoons Cajun seasoning
1 teaspoon freshly ground black pepper
1 teaspoon baking powder
1 teaspoon fine salt
1 teaspoon confectioners' sugar
Vegetable or canola oil, for frying
1/2 cup mayonnaise
3 tablespoons Dijon mustard
1 tablespoon dill pickle brine, plus pickle slices, for serving
1 tablespoon hot sauce
2 baguettes or long French loaves, split, buttered and lightly toasted
3 beefsteak tomatoes, thinly sliced
Red Cabbage Slaw, recipe follows
1/3 cup olive oil
1/4 cup cider vinegar
3 tablespoons Dijon mustard
1 tablespoon granulated sugar
1 teaspoon mustard seed
1 clove garlic, minced
One 16-ounce bag shredded coleslaw mix
2 cups shredded red cabbage
1/2 cup diced green onions
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: Put the chicken in a large bowl and add the buttermilk, hot sauce, salt, Cajun seasoning, garlic powder, paprika and black pepper and toss until the chicken is coated. Refrigerate for 4 hours or up to overnight.
  • For the seasoned flour: Combine the flour, Cajun seasoning, pepper, baking powder, salt and confectioners' sugar in a large shallow dish or paper bag.
  • Remove the chicken from the buttermilk and dredge each piece in the seasoned flour. Shake off any excess and transfer to a plate.
  • Fill a large cast-iron skillet halfway with oil and fit the skillet with a deep-frying thermometer. Heat to 350 degrees F. Line a baking sheet with paper towels and set a cooling rack on top.
  • Add 5 or 6 pieces of chicken at a time to the oil and cook for 3 to 4 minutes, then flip and cook until the chicken is golden brown and juices run clear when pierced, 3 to 4 minutes more.
  • Remove to the prepared cooling rack and let sit for 5 minutes. (See Cook's Note.)
  • For the sandwiches: Meanwhile, mix together the mayonnaise, Dijon, pickle brine and hot sauce in a small bowl. Spread the mixture on both sides of the baguettes. Lay the pickles and tomatoes on top of the mayonnaise on one side of each piece of bread. Add a few chicken pieces to each. Top with some Red Cabbage Slaw and the top pieces of bread. Cut each loaf in half, then cut into 8 to 10 portions. Serve with lots of napkins!
  • Combine the oil, vinegar, Dijon mustard, granulated sugar, mustard seeds and minced garlic in a bowl and whisk together. Add the coleslaw mix, cabbage and green onions and toss lightly. Taste the slaw, then add salt and pepper to your liking. Serve right away or chill up to overnight.

A New Orleans po'boy is traditionally loaded with fresh seafood from the coast and sandwiched between a soft French-style loaf. In this version, we kept the classic fixings, such as sliced tomato, finely shredded lettuce and a generous drizzle of homemade remoulade sauce. But we swapped in wild mushrooms that are "chicken fried" - coated in a shaggy buttermilk and seasoned flour batter, then deep fried to golden perfection, giving you a hearty vegetarian alternative to the beloved sandwich. We opted for maitake and oyster mushrooms because they hold the batter well and fry up crispy, but a variety of mushrooms would work well for this recipe.

3/4 cup mayonnaise
3 tablespoons finely chopped pickles, such as gherkins or dill pickles
3 tablespoons whole-grain mustard
1 tablespoon ketchup
1 tablespoon hot sauce, such as Frank's
1/8 teaspoon onion powder
Kosher salt and freshly ground black pepper
6 ounces mixed wild mushrooms, such as maitake (also known as hen-of-the-woods), oyster, shiitake and cremini
1 1/2 cups buttermilk
1/4 cup hot sauce, such as Frank's
1 1/2 cups all-purpose flour (see Cook's Note)
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
Vegetable or canola oil, for deep-frying
2 plum tomatoes, thinly sliced
4 soft sub rolls (about 8 inches long), split lengthwise and toasted
2 cups finely shredded iceberg or butter lettuce

Steps:

  • For the remoulade sauce: Whisk together the mayonnaise, pickles, mustard, ketchup, hot sauce, onion powder, 1/4 teaspoon salt and several grinds of pepper in a small bowl until combined. Cover with plastic wrap and refrigerate until ready to serve.
  • For the po'boys: Trim the mushrooms into bite-size pieces (roughly 2 inches; any smaller will make the breading process more tedious). Maitake and oyster mushrooms can be sliced/torn lengthwise, while shiitake and cremini mushrooms are best quartered.
  • Pour the buttermilk and hot sauce into a shallow baking dish and whisk to combine. Add the mushrooms, then toss until evenly coated. Marinate at room temperature until well-seasoned, about 10 minutes.
  • Whisk together the flour, smoked paprika, 1 teaspoon salt and several grinds of pepper in a large bowl. Stir in 2 tablespoons of the buttermilk marinade to make shaggy clumps.
  • Heat 2 inches of vegetable or canola oil in a large pot over medium heat until a deep-frying thermometer registers 350 degrees F. Line a rimmed baking sheet with paper towels for draining.
  • Dip the mushrooms first in the flour mixture, turning to coat, then back in the marinade. Then dip again in the flour to coat with the clumpy bits; transfer to a plate. Working in batches, fry the mushrooms, flipping occasionally, until golden brown and crisp, 2 to 3 minutes. Use a slotted spoon to transfer the mushrooms to the lined baking sheet and season with a pinch of salt.
  • Lay the sliced tomato on the bottoms of the sub rolls, then top with the mushrooms. Drizzle the remoulade sauce over the mushrooms, top with shredded lettuce, sandwich together and serve.

8 to 12 ounces skinless, boneless, chicken breasts, cut into 3/4 inch cubes
1/4 cup dried bread crumbs
2 tablespoons unsalted butter
Salt and freshly ground black pepper
1 loaf of Italian bread (8 ounces) split in half vertically
4 tablespoons tartar sauce, recipe follows
2 cups (4 ounces) shredded iceberg lettuce
8 ounces of ripe tomatoes, cut into 1/4 inch slices
1 scallion (green onion) trimmed of 2 inches of green
1 small (2 ounces) sour dill pickle
1/4 cup (packed) washed parsley leaves
2 cup mayonnaise, low fat or regular
1 teaspoon strong mustard like Creole or Dijon
Salt and 1/8 teaspoon cayenne pepper

Steps:

  • Dredge the chicken in bread crumbs. In a large skillet heat the butter. When the foaming subsides, brown the chicken on all sides for about 10 minutes or until cooked through. Season to taste with salt and pepper. While the chicken is cooking, slice the bread in half vertically and then in half again horizontally and pull out all of the soft bread crumbs to create four boat like shells. Spread each "bread boat" with tartar sauce, top with chicken nuggets, then with shredded lettuce and tomato slices. Slice each piece in half again.
  • In a food processor or blender mince the scallion, pickle and parsley, then puree with mayonnaise and mustard and season with salt and cayenne pepper.

Crispy fried buttermilk chicken pieces piled together with cool + crisp lettuce, juicy tomatoes, and dill pickles on toasty bread. Big time cajun/creole flavors throughout. This is comfort food at its finest, y'all!

2 tablespoons Creole mustard (I use Zatarain's)- see notes
1 tablespoon sweet relish
2 teaspoons Louisiana-style hot sauce

1 1/2 teaspoons smoked paprika
1 teaspoon prepared horseradish
1 teaspoon worcestershire
1 teaspoon garlic paste or 2 cloves of garlic, finely minced

2 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons smoked paprika
1 teaspoon dried thyme
1 teaspoon onion powder
1 teaspoon ground mustard
2 pounds boneless/skinless chicken breasts, cut into 2″ pieces
1 cup whole buttermilk
2 teaspoons Louisiana-style hot sauce, plus more for serving
1 cup all purpose flour
1 cup fine yellow cornmeal
1.5 quarts peanut oil, for frying- canola/vegetable oil as sub
4 (8-inch) French bread loaves or 4 hoagie rolls, sliced in half lengthwise, lightly toasted, and buttered
2 medium-sized tomatoes, sliced thinly

Steps:

  • In a bowl, combine the mayonnaise, mustard, sweet relish, hot sauce, lemon juice, paprika, horseradish, worcestershire, garlic, and creole seasoning together. Give everything a good stir to fully combine. Then cover the bowl tightly with plastic wrap or put the sauce into an airtight container with lid. Place the remoulade into the refrigerator until ready to use.

6 boneless skinless chicken breasts, pounded to 1/2 inch thickness
1/2 cup flour
1 tablespoon paprika
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon dry mustard

8 pieces cooked bacon
4 -6 tablespoons oil
1 avocado, halved and cut into slices
1 half iceberg lettuce, shredded
2 tomatoes, sliced
6 pieces swiss cheese
1 French bread, loaf
salt and pepper
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon prepared horseradish
1 teaspoon yellow mustard

Steps:

  • Combine the flour and spices together in a large sandwich bag, set aside. Place the chicken breasts on a cutting board. Allow a few inches of space between each breast and cover with clear plastic wrap. Using meat malt, pound the breast to an even thickness (about 1/2 inch thick). Remove the clear wrap and cut the chicken into strips, about 3 strips per breast. Place the strips into the bag of flour and seasonings, seal and shake the bag.
  • Heat a large saute pan over medium heat with the oil. Place the chicken (don't crowd the pieces and cook in batches adding oil as necessary) into the pan and allow cook for 2 to 3 minutes each side. The chicken should be golden in color when you flip them over. Remove the cooked chicken from the pan and place on a plate with a paper towel to catch any excess oil.
  • Turn the oven to the "broil" setting. In a small bowl combine the mayonnaise, ketchup, prepared horseradish and yellow mustard; mix together. Cut the French bread in half both horizontally and vertically. Spread the Po'boy sauce on both sides of the loaf; set aside the top half. To the bottom add the chicken (overlapping pieces), then the bacon, avocado and Swiss cheese. Place that half on a baking sheet. Broil just until the cheese has melted and remove from oven.
  • Top the Po'boy with lettuce and tomatoes. Add the top half of the French bread. Cut into portions and serve immediately.
