COPYCAT CHICKEN MARGHERITA

Chicken Margherita is the Olive Garden copycat you've been dying to make at home-and now you can with this mozzarella and tomato-loaded recipe.

1 pound boneless, skinless chicken breast
1 teaspoon dried oregano
Salt and pepper
1 tablespoon olive oil
1/4 cup white wine
4 tablespoons butter
3 cloves garlic (minced)
2 tablespoons lemon juice
1/2 pound fresh mozzarella
1 cup pesto sauce
2 cups cherry tomatoes (quartered)
1/2 cup Parmesan cheese (grated)

Steps:

  • Gather the ingredients.
  • Season the chicken breasts with dried oregano, salt, and pepper. Preheat the oven to 400 F.
  • Heat the olive oil in a large cast-iron skillet or sauté pan on medium-high heat. Add the chicken to the pan and brown it on both sides for 3 to 5 minutes.
  • Remove the chicken from the pan and place it on a plate. Turn down the heat, add the white wine to the pan, and deglaze it by scraping at the browned bits on the bottom. Add the butter, garlic and lemon juice as well. Cook for 2 to 3 minutes, or until the butter is completely melted and the garlic is fragrant.
  • Add the chicken back to the pan and top each piece with an equal amount of the fresh mozzarella. Place it in the preheated oven until the top of the cheese is melted and slightly browned.
  • Top each chicken breast with an equal amount of the pesto, cherry tomatoes, and Parmesan cheese. Serve immediately with a side salad, pasta, or bread to make it a complete meal.

1 can (12 ounces) frozen nonalcoholic margarita mix, thawed
3 tablespoons lime juice
3 garlic cloves, minced
4 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine margarita mix, lime juice and garlic. Pour 1 cup marinade into a shallow dish. Add chicken; turn to coat. Cover and refrigerate for 2-4 hours. Cover and refrigerate remaining marinade., Drain and discard marinade from chicken. Sprinkle chicken with salt and pepper. Place chicken on oiled grill rack. Grill, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 5-7 minutes on each side, basting frequently with reserved marinade.

4 (6 ounce) skinless, boneless chicken breasts
¼ cup olive oil
2 tablespoons balsamic vinegar
1 clove garlic, minced
1 teaspoon Italian seasoning
½ teaspoon salt
1 cup halved cherry tomatoes
4 fresh basil leaves, minced
1 teaspoon lemon juice
salt and freshly ground black pepper to taste
4 slices mozzarella cheese
¼ cup basil pesto

Steps:

  • Gently pound chicken breasts into even thickness using the smooth side of a meat mallet, about 1/2 inch thick. Place chicken into a resealable plastic bag.
  • Whisk together olive oil, balsamic vinegar, garlic, Italian seasoning, and salt in a small bowl. Pour over chicken, coat evenly, and marinate for 4 to 8 hours.
  • Combine cherry tomatoes, basil, lemon juice, salt, and pepper in a small bowl.
  • Preheat an outdoor grill for medium heat; lightly oil the grate.
  • Remove chicken from marinade and grill with the lid closed for 4 minutes. Flip chicken and grill an additional 3 to 4 minutes. Top each breast with a slice of mozzarella cheese and 1 tablespoon of pesto, then top with cherry tomatoes. Close lid on grill and continue grilling until cheese is melted and chicken is no longer pink inside, about 3 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Using a spatula, carefully remove chicken to a serving platter.

1/2 cup reduced-fat balsamic vinaigrette

½ teaspoon lime zest
¼ cup lime juice
2 tablespoons gold tequila
2 tablespoons honey
1 tablespoon vegetable oil
2 teaspoons cornstarch
¼ teaspoon garlic salt
¼ teaspoon ground black pepper
4 skinless, boneless chicken breast halves
4 (10 inch) flour tortillas, warmed
1 tomato, cut into 8 wedges
1 avocado - pitted, peeled, and cubed
1 lime, cut into 8 wedges

Steps:

  • Preheat oven to Broil.
  • Combine the lime zest, lime juice, tequila, honey, oil, cornstarch, garlic salt and pepper in a small saucepan over medium heat. Bring to a boil, stirring, to thicken the sauce.
  • Broil chicken breasts for 10 to 15 minutes, or until cooked through (no longer pink inside). Baste with prepared sauce for last 5 minutes of cooking time.
  • To serve, arrange a folded tortilla on each of 4 plates; add a chicken breast, 2 tomato wedges and some avocado chunks. Drizzle chicken with remaining sauce and garnish with 2 lime wedges.

This chicken is so full of flavour it is great as is, I served mine with a subtle lemon, mustard sauce which was lovely. If you are after a quick light meal that tastes great, scrap the cakes and just serve with some roasted baby vine tomatoes, a meal that can be on the table in about 35 Min's.

600 g baby vine-ripened tomatoes
4 chicken breasts
4 tablespoons basil pesto, more if you like
8 sun-dried tomatoes packed in oil, and drained
250 g mozzarella cheese, sliced
30 g baby spinach leaves (that is just a guess I use 5-6 leaves per breast.)
8 slices prosciutto

Steps:

  • Preheat oven to 180c.
  • Slice sun dried tomatoes thinly, allow 2 per breast.
  • Open chicken breast out and pound with a meat mallet until about 1/4 inch thick.
  • Spread 1 tablespoon of pesto over each breast, top with tomatoes, spinach and sliced cheese. Fold chicken over to cover filling, wrap with 2 slices of prosciutto to enclose securely. Repeat with remaining breasts.
  • Place chicken in an oven proof dish with vine tomatoes and cook in the oven for 25-30 Min's or until chicken is cooked through.
  • To serve: Slice chicken and arrange on plate with tomatoes and serve with a side salad.
