Time 1h10m

Yield 8

Number Of Ingredients 13

1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
½ cup sliced celery
⅓ cup butter
⅓ cup chopped onion
⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon celery seed
1 ¾ cups chicken broth
⅔ cup milk
2 (9 inch) unbaked pie crusts

Steps:

  • Preheat oven to 425 degrees F (220 degrees C.)
  • In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
  • In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
  • Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.

CHICKEN IN A POT

Chicken In A Pot image

You'll rely on this hearty chicken dinner again and again: It takes only 15 minutes of prep to pull together.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 1h15m

Number Of Ingredients 10

1 1/2 cups low-sodium chicken broth
1/3 cup dry white wine
1 whole chicken (3 to 4 pounds), rinsed and patted dry (giblets removed)
1 tablespoon butter, room temperature
Coarse salt and ground pepper
2 leeks (white and light-green parts only), halved lengthwise, rinsed well, and cut into 2-inch pieces
10 baby carrots or 5 carrots, halved if large and cut into 2 1/2-inch lengths
5 garlic cloves, unpeeled
1 tablespoon extra-virgin olive oil
1 pound new potatoes, halved (quartered if large)

Steps:

  • Preheat oven to 450 degrees. In a 5-quart Dutch oven or heavy pot, combine broth and wine. Rub chicken all over with butter and season generously with salt and pepper. Tie legs together with kitchen twine. Place chicken in pot. Bake, uncovered, 30 minutes.
  • In a large bowl, toss leeks, carrots, and garlic with oil; season with salt and pepper. Remove pot from oven and add vegetables. Bake until chicken's juices run clear when pierced between breast and leg or an instant-read thermometer inserted in thickest part of a thigh (avoiding bone) registers 165, 35 to 45 minutes. Let chicken rest 10 minutes.
  • Meanwhile, set a steamer basket in a large pot filled with 2 inches boiling water. Place potatoes in basket, cover, and steam until tender, about 15 minutes. Season with salt and pepper. Carve chicken and serve with vegetables and pan juices.

Category Chicken, Recipe Roundup
  • Slow Cooker Honey Garlic Chicken. Using the Crockpot to cook chicken is a terrific way to guarantee it stays nice and juicy. After all, it’s often cooked in stock or liquid, and once that lid is on, not a drop of moisture can escape.
  • One-Skillet Chicken with Lemon Garlic Cream Sauce. Lemon and cream don’t typically go well together, as the acidity in the fruit often leads to curdling.
  • Creamy Chicken & Mushroom Soup in 30 Minutes. Chicken and mushroom is a classic flavor combination, and in this soup, it’s better than ever. Since the mushrooms will get chopped up in a big pot, you won’t need to worry about finding anything fancy.
  • One-Pan Garlic Ranch Chicken and Veggies. Ranch has such a unique taste, and I think it works best with chicken. But instead of smothering the meat in dressing, all you’ll need is a pack of dry ranch mix.
  • Honey Balsamic Chicken Breasts and Veggies. Balsamic glaze is noticeably tangy and can be pretty acidic. That said, it does have a slight sweetness, which is enhanced beautifully by adding honey.
  • One-Pot Teriyaki Chicken and Rice. This dish is quite similar to a stir-fry, only you’ll cook the rice with the rest of the ingredients, rather than in a separate pot.
  • One-Pot Chicken Noodle Soup. This home-grown soup is super nostalgic and just what you’ll need after a day out in the cold. Since this base is essentially just chicken broth, make sure to start with something of high quality.
  • One-Pan Honey Garlic Chicken and Veggies. Honey and garlic are both quite well known for their medicinal benefits, and it doesn’t hurt that they taste great together to boot.
  • One-Pan Spanish Chicken and Rice. This chicken and rice meal is kind of like a fast paella recipe. It uses many of the same herbs and spices, but you won’t need to worry about adding shrimp and rabbit.
  • One-Pot Chicken Ranch Pasta. If you’re craving pasta but don’t want the usual mac and cheese or marinara dish, you’ll have to try this insanely indulgent ranch recipe.
