12 ounces whole onion or 11 ounces chopped, ready-cut onion (2 1/2 to 2 2/3 cups)
Pan spray
8 ounces skinless, boneless chicken breasts
1/2 cup no-salt-added tomato puree
1/2 cup white wine
1 1/2 tablespoons balsamic vinegar
1/2 cup no-salt-added chicken stock
1/2 teaspoon dried tarragon
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Chop whole onion.
  • Heat nonstick pan over high heat, reduce heat to medium-high and spray with pan spray. Add onion, and saute until it begins to brown and soften.
  • Add chicken breasts, and brown on both sides.
  • Reduce heat to simmer, and add tomato puree, wine, vinegar, chicken stock and tarragon. Cover, and continue cooking until chicken is tender, about 10 minutes total. Season with salt and pepper.

A wonderful recipe for chicken featuring balsamic vinegar. What sets this apart from others is the surprise inclusion of that distinctly American condiment, catsup. Together these create a delicious sweet and sour combination. This Cooking Light inspired dish is just 4 points per serving. For Core followers, count 1/2 point per serving for the wine or substitute with additional broth.

olive oil flavored cooking spray
2 1/2 cups coarsely chopped onions (a sweet onion such as Vidalia or Oso Sweet would be especially good)
8 (3 ounce) boneless skinless chicken thighs or 4 (6 ounce) boneless skinless chicken breasts
1/2 cup dry white wine
1/2 cup fat-free chicken broth
3 tablespoons catsup
3 tablespoons balsamic vinegar
1 1/2 teaspoons minced fresh tarragon or 1 teaspoon dried tarragon
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 dash black pepper

Steps:

  • Add 1 or 2 tablespoons of water to a large nonstick skillet and add onions.
  • Cook the onions for 4 minutes until they begin to soften.
  • Apply small amount of cooking spray and cook another minute or two until there is some browning and carmelization.
  • Add chicken and sauté each side 3 minutes or until browned.
  • Combine wine and remaining ingredients (wine through black pepper) in a medium bowl; stir well.
  • Add wine mixture to chicken mixture and cover, reduce heat and simmer 15 minutes.
  • Turn chicken over.
  • If you like a thick sauce, remove cover and cook an additional 5 minutes.
  • Otherwise return cover and simmer an additional 5 minutes.

From the cookbook author Anne Willan, I learned her version of this classic recipe during my stay at her home in Burgundy. To tell the truth, I like it even better than sauteed chicken in wine, because the extra acid and lack of cream makes a tangier, less cloying dish.

3 1/2 pounds mixed chicken drumsticks and thighs
Salt and pepper
3 tablespoons unsalted butter
1 head garlic, broken into unpeeled cloves
1 cup red wine vinegar
1 pound tomatoes, roughly chopped
1 tablespoon tomato paste
4 sprigs fresh thyme
4 sprigs fresh flat-leaf parsley
1 bay leaf
1 cup chicken stock
Chopped fresh parsley leaves, as needed

Steps:

  • Season the chicken with salt and pepper. Melt 2 tablespoons of the butter in a large skillet until foaming, then, a few pieces at a time, brown the chicken well on all sides. You're not cooking the chicken here; just making the skin crisp and giving it color, so 5 minutes per side is about right. Remove the chicken to a plate.
  • Add the garlic to the pan and cook about 10 minutes. Deglaze the pan with the vinegar and boil to reduce by half, 10 to 15 minutes. Return the chicken to the pan. Add the tomatoes and tomato paste. Using a piece of kitchen twine, tie together the thyme, parsley, and bay leaf. Add the herb bundle to the chicken and simmer, uncovered, until the meat falls from the bone, about 30 minutes. Transfer the chicken to a dish, cover, and keep warm.
  • Pour the stock into the pan juices and boil until thickened, about 10 minutes. Strain into a saucepan, and if it's still not concentrated enough for you liking, boil it down a little more. Whisk in the remaining tablespoon of butter. Season, and pour over the chicken. Serve with chopped parsley, sprinkled over, and with a bowl of roasted or mashed potatoes on the side.

LIISA'S CHICKEN SAUCE (AKA VINEGAR CHICKEN)

This recipe originally came from Judd Farr on an episode of Calling all Cook's -Food Network. I adjusted the quantity for my use and I use this to baste my chicken on the grill. I used to tease my boys if they were bad - I'd put vinegar in their mouths; when they found out that this recipe has vinegar in it --they said the chicken must have been bad- thus the name! This is one that our family uses on a regular basis. It makes a lot of basting sauce - so don't be alarmed - I usually use 1/2 of the sauce and store the remaining for another time.

1 free-range chicken, cut to 8 pieces (ask your butcher to do it for you if you want)
1 bouquet garni, of thyme, bay leaf, parsley, tarragon (i.e. herbs wrapped in cheese cloth)
2 tablespoons olive oil
1 tablespoon butter
1 onion, diced
10 garlic cloves, peeled
1 cup white wine vinegar
2 cups diced tomatoes
1 cup dry white wine
1 cup chicken stock
salt and pepper
chopped parsley

Steps:

  • Make sure chicken parts are patted dry.
  • Season them.
  • Heat olive oil in large sauté pan or dutch oven.
  • Lay the chicken skin side down (cook the chicken in batches if the pan is not large enough) turn chicken to allow it to brown evenly on all sides (about 3 minutes each side.).
  • Add butter, diced onion, garlic cloves, and sauté for a few more minutes.
  • Remove any access fat.
  • Deglaze the pot with the white wine vinegar and reduce the liquid COMPLETELY.
  • Add the bouquet garni, white wine, chicken stock and diced tomatoes to the pot.
  • Bring to a boil, lower the heat to a slow simmer, cover and simmer for 30 minutes.
  • Take off the lid, raise the temperature to medium, take out the herb sachet and cook for another 10 minutes (patience, patience! this process will reduce the liquid and thicken the sauce).
  • Plate chicken with the sauce and garnish chopped parsley.

1/2 cup minced shallot
16 garlic cloves, peeled
1/3 cup sherry wine vinegar or 1/3 cup red wine vinegar
1 cup reduced-sodium chicken broth
2 sprigs fresh thyme (or 2 teaspoons dried)
1/2 cup reduced-fat sour cream
1 tablespoon Dijon mustard
2 teaspoons tomato paste
2 teaspoons all-purpose flour
2 medium tomatoes, seeded and cut into 1/2-inch pieces

Steps:

  • Pat chicken pieces dry with paper towels and season with 1/2 teaspoon salt and pepper.
