1 three-inch piece fresh ginger, peeled and cut into 1/8-inch-thick matchsticks (1/2 cup)
2 tablespoons canola oil
1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch chunks
1 large onion, thinly sliced
2 cloves garlic, minced
1/4 cup soy sauce
2 tablespoons white vinegar
2 tablespoons sugar
1/2 cup sliced scallions

Steps:

  • Soak ginger in cold water 10 minutes; drain.
  • Heat oil in a skillet over high heat; brown chicken in two batches, 6 to 8 minutes. Set aside.
  • In same skillet over medium heat, cook ginger, onion, and garlic, stirring until browned, 8 to 10 minutes. Add soy sauce, vinegar, and sugar; cook over high heat until thick, 3 to 4 minutes. Add chicken; stir to warm. Remove from heat; stir in scallions.

½ tbsp vegetable oil
2cm piece ginger , cut into matchsticks
1 garlic clove , chopped
½ onion , thinly sliced into half moons
1 tbsp fish sauce
½ tbsp soft brown sugar
250g skinless chicken thigh fillets, trimmed of all fat and cut in half
125ml chicken stock
50g green bean , trimmed and cut into 2.5cm lengths
1 tbsp chopped coriander
steamed rice , to serve

Steps:

  • Heat the oil in a saucepan over a medium-high heat. Add the ginger, garlic and onion, and stir-fry for about 5 mins or until lightly golden. Add the fish sauce, sugar, chicken and stock. Cover and cook over a medium heat for 15 mins.
  • For the final 3 mins of cooking, add the green beans. Remove from the heat and stir through half of the coriander. Serve with steamed rice and the remaining coriander scattered over.

1 cup soy sauce
1 cup water
1/2 cup brown sugar
3 teaspoons gingerroot, peeled, cut into thin slices and smashed
8 chicken thighs, about

Steps:

  • Mix soy sauce, water, brown sugar and ginger and pour into a crock pot.
  • Put in as many chicken thighs as can be covered with sauce.
  • Cook 4 to 6 hours on low.
  • I like to quickly crisp up the chicken under the broiler before serving.

2 teaspoons cooking oil (I use olive oil)
3/4 lb chicken breast, boneless, skinless, cut into bite sized pieces
1 cup carrot, thinly sliced
1 cup mushroom, thinly sliced
8 ounces sliced bamboo shoots, 1 can drained (or shoe string type)
1/2 cup snow peas, sliced in half
1/2 cup pea shoots (optional)
1/4 cup chicken broth
1/4 cup rice vinegar
2 tablespoons soy sauce
2 teaspoons sugar (I use Splenda)
1 tablespoon fresh gingerroot, grated
1 teaspoon sesame oil
1/2 teaspoon pepper, freshly ground
2 cups bok choy, chopped
1 cup sweet red pepper, chopped
2 tablespoons water
1 tablespoon cornstarch

Steps:

  • Heat cooking oil in a large saucepan (or wok), on medium high; add the chicken, cook uncovered 2 to 4 minutes, stirring occasionally until no longer pink.
  • Add next 12 ingredients; stir to mix, bring to a boil, reduce heat to medium, simmer gently partially covered for 2 to 4 minutes until carrot is almost tender crisp; do not overcook.
  • Add bok choy and sweet red pepper; stir and cook covered another 2 to 4 minutes, just until bok choy is limp and veggies are tender crisp.
  • Whisk cornstarch into cold water, in a small bowl; add to chicken mixture; heat and stir until simmering and thickened.
  • Serve over brown rice if desired.

4 chicken breasts (skin on)
1/3 cup melted unsalted butter
1/2 cup honey
2 tablespoons lemons or 2 tablespoons lime juice
1 teaspoon ground ginger

Steps:

  • Combine melted butter, honey, lemon/lime juice and ground ginger in a bowl.
  • Mix well.
  • Place chicken in crock pot. Pour mixture over chicken and cook on low for 6 hours.
  • Spoon mixture over chicken periodically to make sure it gets covered in the sauce.

This one-pot dish was inspired by a dinner of ginger fried rice and garlicky stir-fried greens served at Uncle Lou, a Cantonese restaurant in New York. It's both mild and full of flavor, which might sound contradictory at first, but it delivers subtle notes of fresh ginger, soy sauce and lime, rather than bold hits in each bite. Serve with extra soy sauce and lime on the side, so that everyone can adjust the seasoning as they would like. Fish out the ginger slices at the end or let everyone know they're there.

2 tablespoons neutral or olive oil
1 (3-inch) piece fresh ginger, peeled and cut into thin slices
2 pounds boneless, skinless chicken thighs or breasts
Kosher salt
3 large garlic cloves, minced or grated
2 cups jasmine rice, rinsed with cold water
3 cups low-sodium chicken broth or water, at room temperature
3/4 pound quick-cooking greens, such as chard, kale or spinach, leaves removed from thick stems, if needed, and cut or torn into bite-size pieces (about 4 packed cups)
2 tablespoons soy sauce, plus more as needed
2 limes, 1 juiced (about 1 tablespoon juice) and 1 cut into wedges
2 scallions (optional), sliced
1/4 packed cup cilantro leaves and tender stems (optional), roughly torn or chopped

Steps:

  • In a large Dutch oven or pot with a lid, heat the oil and ginger slices over medium-high until the oil around the ginger starts to sizzle, 1 to 2 minutes. Season the chicken with salt, then push the ginger to the side. Add the chicken to the pan and let cook, undisturbed, until the chicken starts to brown and easily releases from the pan, 5 to 7 minutes. (It's OK if the pieces of chicken don't all have color, as it will be crowded.) Stir in the garlic and rice, flipping over the chicken, and cook until the rice is coated with oil and starts to sizzle, about 1 minute.
  • Add the stock or water, then raise the heat to high to bring to a boil, stirring to scrape up anything on the bottom of the pot. Cover and immediately lower the heat to maintain a simmer. Cook until most of the water has been absorbed and the chicken is cooked through, about 20 minutes. During the last 8 minutes, stir to make sure nothing is sticking on the bottom, then layer the greens on top, cover and finish cooking.
  • Remove from the heat, stir in the soy sauce and juice of 1 lime. Fluff the rice and let sit for 5 minutes, covered. Serve as is, or pull the chicken apart into bite-size pieces. Season to taste with salt, the lime wedges and more soy as needed or serve at the table. Top with the scallions and cilantro, if using.
