Giblets : The edible inner parts of poultry, including the gizzard, heart, liver and kidneys ....... This recipes was devised to use up all the giblets left over from home slaughtered chickens! You can use either giblets or just livers in this recipe. However, the cooking time for giblets is longer than that for livers. Giblets need 15 - 20 minutes, but the livers should be added only 5 - 8 minutes before serving. Have lots of fresh bread and rolls on hand to dip into the sauce!

1 kg chicken giblets (or livers)
20 ml olive oil
2 ml cumin, ground
1 ml clove, ground
5 ml paprika
1 bay leaf
salt & pepper
piri-piri, whole or ground
2 onions, chopped
2 cloves garlic, crushed
100 ml white wine

Steps:

  • Fry the giblets and/or livers in the olive oil until brown.
  • Add the spices and seasonings and stir well.
  • Add the chopped onion and garlic. Fry for 5 minutes.
  • Add wine and simmer gently until cooked.
  • If you are cooking giblets only, a little water may be added if necessary.

BRINE-BRAISED GIBLETS RECIPE

When braised in a tart brine, gizzards are truly delectable! This is an easy dish to serve guests, as it can be made a day in advance and reheated. Cooked barley is a perfect side to soak up the rich sauce.

Yield 4 servings

Number Of Ingredients 12

1 pound chicken gizzards
2 tablespoons unsalted butter
1 medium onion, finely chopped
2 cloves garlic, minced
¼ teaspoon salt
Freshly ground black pepper
1¼ cups pickle brine
2 tablespoons sour cream
¼ cup finely chopped dill pickles, for garnish
2 tablespoons minced fresh dill, for garnish
2 tablespoons minced fresh chives, for garnish
Cooked barley or rye toast for serving (optional)

Steps:

  • Wash the gizzards well and remove any excess fat. Pat dry with paper towels.
  • Melt the butter in a medium saucepan. Add the onion and sauté over low heat until soft and golden but not brown, 5 to 7 minutes. Add the gizzards and garlic. Sprinkle with the salt and a few generous grinds of pepper. Cook over medium heat, stirring occasionally, until the gizzards are nicely browned and beginning to caramelize, about 10 minutes.
  • Pour in the pickle brine, cover the pan, and bring to a boil, then immediately lower the heat to simmer. Simmer gently for 45 minutes, until the gizzards are fork-tender.
  • With a slotted spoon, remove the gizzards from the broth and transfer them to a cutting board. Slice into ½-inch-thick pieces.
  • Stir the sour cream into the sauce, mixing well. Return the gizzards to the pan and stir to coat before transferring them to a serving dish. Garnish with the pickles and herbs.

Yield Serves 4 as a main course, or 6 as a starter

Number Of Ingredients 14

1 pound chicken offal-a mix of livers, gizzards, and hearts (we use about 60% livers and 40% gizzards and hearts.)
¼ cup olive oil, plus more if needed
Salt and pepper
2 garlic cloves, crushed with the side of a knife
1 small peperoncino chile
1 bay leaf
Fresh rosemary sprig
Fresh thyme leaves, to taste
⅓ cup finely diced onion
½ cup white wine
¾ cup chicken or vegetable stock, plus more if needed
1 pound fresh fettuccine
Plenty of grated cheese (ricotta salata, pecorino, or Parmesan)
Finely grated zest of ¼ lemon

Steps:

  • With a sharp paring knife, remove any visible fat, arteries, or membranes from the offal, as best as you can. Pat it dry with paper towels.
  • Add most of the olive oil to a large sauté pan over medium heat. When the surface begins to shimmer, fry the offal in the olive oil, spreading it out in one layer, and season with salt. If the offal gives off water, cook until the pan starts to sizzle again; you are looking for it to brown. Then flip, and brown the other side.
  • Add the crushed garlic cloves, another whirl of olive oil, the chili, bay leaf, rosemary, and thyme. Add the onion, lower the heat, and cook until the onion is very soft and begins to melt, about 7 minutes.
  • Add the white wine to deglaze and scrape all the flavor from the bottom of the pot, reduce the wine by half, and add the chicken stock. Simmer gently, covered, for about 20 minutes, then let it rest for at least 10 minutes and as long as a few hours, for the flavors to meld. Remove the bay leaf and taste for salt and pepper.
  • Meanwhile, bring a pot of salted water to a boil. Add the fettuccine to the boiling water and cook until tender, 2 to 3 minutes. Drain the pasta, and toss it with your ragù over medium heat. Loosen it with some olive oil and stock if necessary. Season with salt and pepper, and finish with grated cheese and lemon zest.

3 tablespoons olive oil
2 medium yellow onions, sliced
Sea salt
1/4 cup bacon, cut into slivers
1 pound chicken livers, rinsed, dried and trimmed
Freshly ground black pepper
2 teaspoons thyme leaves
Freshly grated nutmeg
1 tablespoon sherry vinegar
2 teaspoons Dijon mustard
1/2 cup chicken broth
4 slices country bread, toasted

Steps:

  • Heat 2 tablespoons olive oil in a medium sautépan. Add onions and cook over medium-low heat until soft and caramelized, 20 to 30 minutes. Stir occasionally and season with salt.
  • Place another sauté pan over medium heat. Add bacon and sauté until browned on edges. Using a slotted spoon, remove to a plate. Pour off fat and place pan back on stove. Season chicken livers with salt and a generous amount of pepper. Add remaining tablespoon olive oil to pan and increase heat to medium high. Place chicken livers in pan and sauté on all sides, until just cooked through, 5 to 7 minutes. Remove livers.
  • Add thyme, nutmeg, vinegar, mustard and broth to pan and cook on high for 2 minutes. Taste and adjust seasoning. Return bacon and chicken livers to pan and roll in juices to warm through. Lay toasts on four plates. Spread each with a little onion, then spoon livers and juices over top. Serve.
