1 cup precooked white corn flour (masa harina) for arepas
1 1/3 cups water
1/4 teaspoon salt
1/3 cup shredded mozzarella cheese
1 tablespoon vegetable or olive oil
1 cup shredded cooked chicken breast
1/4 cup finely chopped white onion
1/2 cup diced plum (Roma) tomatoes
1/4 cup mayonnaise with lime juice or regular mayonnaise
1 medium avocado, pitted, peeled and chopped
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Heat oven to 400°F.
  • To make arepas: In large bowl, stir corn flour, water and salt with spoon; let rest 1 minute or until mixture thickens. Stir in mozzarella cheese. Form 4 balls of dough, using about 1/2 cup dough each. Place each ball on plastic wrap; shape each into 3 1/2-inch circle, 3/4 inch thick.
  • In 12-inch skillet, heat oil over medium heat. Cook arepas in oil about 4 minutes on each side, until dark spots appear on both sides. Place arepas on ungreased cookie sheet.
  • Bake about 20 minutes or until fully cooked and hollow sounding when tapped. Cool about 20 minutes.
  • Meanwhile, make chicken filling. In medium bowl, mix all filling ingredients until well blended. To serve, slice each arepa vertically but not all the way through. Fill each with about 1/2 cup filling.

Arepas are small grilled corn cakes and are native to Venezuela and Colombia. They can be eaten plain or stuffed with meats, cheeses, beans and vegetables. Sugar can be added to create a sweet cake which can be used for dessert.

2 ½ cups milk
1 ½ cups arepas flour (such as P.A.N.®)
½ cup grated Monterey Jack cheese
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
¼ cup unsalted butter, cut into pieces
1 tablespoon honey
vegetable oil
1 (6 ounce) package cooked chicken, shredded, or to taste
½ (8 ounce) package Monterey Jack cheese, sliced, or to taste
½ avocado, sliced, or to taste

Steps:

  • Bring milk to a simmer in a pot. Remove from heat and stir in butter.
  • Combine arepas flour, grated Monterey Jack cheese, kosher salt, and black pepper in a large bowl. Add the hot milk mixture and honey; stir until combined. Let mixture sit until milk is absorbed enough for a soft dough to form, 1 to 2 minutes. Dough will continue to stiffen.
  • Form dough into 12 balls about 2 inches in diameter. Flatten between palms into 3 1/2- to 4-inch arepa patties about 1/3-inch thick.
  • Heat oil in a large nonstick skillet over medium heat. Fry 3 to 4 arepas at a time until lightly golden brown, about 3 minutes per side. Slice each arepa in half crosswise and stuff a portion of chicken, sliced Monterey Jack cheese, and avocado between the halves.

  • In the meantime, heat oil in a skillet over medium heat; add cook and stir onion for about 3 minutes. Add red bell pepper; cook and stir until onion and pepper are softened, several more minutes. Add garlic; cook and stir until fragrant, about 1 minute.
  • Add the shredded chicken and a tablespoon or two of the reserved broth to moisten, the tomato and salt and pepper to taste. Heat through, gently, stirring often to blend flavors until chicken is still moist but most of the moisture is gone from the pan and the tomatoes have dissolved into the mixture, several minutes. Taste and adjust for salt and pepper and add a squeeze of lime or a little sprinkle of vinegar.
  • Serve inside still warm and split arepas, topped with green sauce, pickled red onions and cheese. Garnish with lime and avocado if desired.

Turn the heat to low and simmer gently (hardly any bubbles) for 10-15 minutes, until the chicken is cooked through (Check for doneness after 10 minutes. Cut into the largest piece to make sure there’s no pink color). Remove chicken from the pot and set it aside until cool. Shred chicken, pulling it apart by hand or with the fork method (see my BBQ Chicken Enchilada post for more on the fork method)
  • In a medium bowl mix the mashed avocado with mayonnaise and lime juice. Add the rest of the ingredients: chicken, bell pepper, onion, cilantro, jalapeño, and garlic. Season to taste with salt and pepper. Cover and store in the fridge until you’re ready to eat. Can be made a few hours ahead and kept covered in the fridge. Will be delicious the next day too, but green color may not be as vivid.
  • Preheat oven to 350ºF. Pour the warm water into a large bowl. Stir in salt to dissolve. Pour in the corn flour and immediately start kneading the mixture with your hands, being sure to squeeze out any lumps. Allow the dough to sit for 3-5 minutes. Divide dough into 8 pieces. To shape an arepa, roll the dough into a ball and then pat it, between your hands, into a disc. Press your thumbs around the outside of the disc to form a nice edge. Discs should be 3 1/2 – 4 inches in diameter and 1/3 to 1/2 inch thick. Set discs on a large platter or baking sheet as you form them. (If the dough seems dry or cracks when you roll it, add a more warm water)
  • Lightly oil a large non-stick skillet (cast iron is great). Turn the heat to medium and get the skillet nice and hot. Brown the arepas in batches, about 4 minutes per side, until they are seared with some brown areas on both sides. Set them back on the platter or baking sheet as you go.
