Kerala is one of the south Indian states of India. Coconut is a main ingredient in almost all the recipes belonging to this region. Sometimes it is used scraped, sometimes as a paste, sometimes the milk of coconut is extracted and added to the dish and some other times it is dry roasted and then ground into a paste before adding it to any dish. Each way of adding coconut gives a distinctive flavour to the dish. Here in this curry the coconut is roasted and then made to a paste before finally adding it to the gravy.

1 kg fresh whole chicken, cut into medium pieces
to taste salt
2 teaspoons turmeric
1 teaspoon red chili powder
1/4 teaspoon black pepper
1 onion, chopped
6 garlic flakes
2 inches piece gingerroot, chopped
4 green chilies, slit
2 sprigs curry leaves
3 tablespoons coriander seeds
5 round red chilies
1 cup scraped coconut
2 tablespoons scraped coconut
1 teaspoon mustard seeds
1 onion, sliced
2 sprigs curry leaves

Steps:

  • Marinate the chicken in Chilli powder, Turmeric Powder, Black Pepper Powder and salt for 15-20 minutes.
  • Then add in chopped Onions chopped Garlic chopped Ginger slit Green chilles and Curry Leaves and set aside for another 1/2 an hour.
  • Meanwhile Dry roast the corriander seeds and the chillies till lightly browned. Make a paste of this when at room temperature. Keep aside.
  • Dry roast the scraped coconut till it is brown in colour(do not over brown it). Make a paste of this too, when at room temperature, and set aside.
  • Mix in the dry roasted corriander and chilli paste to the chicken and marinate for another 1 hour or more.
  • Heat a thick bottom wok or a deep pan add the chicken and 1 cup of water and cook covered on high flame(about 5-10 minutes) making sure the chicken doesn't scorch.
  • Keep cooking on low(covered) after this, while stirring ocassionally.
  • When the chicken is done add the coconut paste and cook for some more time.
  • Finally heat some coconut oil and splutter the mustard seeds and add sliced onions, when they are light brown in colour add the curry leaves and 2 tbsp of scraped coconut. fry till the coconuts are slightly browned. Pour this onto the chicken and mix. Cover and remove from flame.
  • Serve after some time with Kerala Parottas.

  • Prepare the Chicken: Separate meatiest side of each chicken thigh from bone, and then cut each meaty piece of chicken in half. Leave whatever meat is left on bone as is. Transfer all chicken pieces to a large Dutch oven.
  • Prepare the Meat Masala Blend: Place fennel seeds, cardamom pods, whole cloves, and broken cinnamon stick in a small skillet. Cook over medium, stirring often, just until fragrant, about 1 minute. Remove from heat. Cool completely, about 15 minutes. Transfer to a spice grinder. Process until a slightly coarse powder forms, about 40 seconds.
  • Prepare the Marinade: Add onion, serrano chiles, garlic, ginger, coriander, Kashmiri red chili powder, turmeric, curry leaves, and 2 tablespoons of the Meat Masala Blend to chicken pieces in Dutch oven; toss together until evenly coated. Cover and chill at least 30 minutes or up to 12 hours.
  • Remove Dutch oven from refrigerator. If you marinated chicken more than 4 hours, let stand at room temperature 1 hour. Scatter potatoes around chicken mixture in Dutch oven; pour ½ cup water on top. Place Dutch oven over low heat. Cook, covered, until potatoes and chicken are tender, about 40 minutes, stirring every 10 minutes. During this time, moisture should naturally release from chicken mixture and cooking juices should rise up sides of Dutch oven, partially covering chicken mixture. Stir in coconut milk and vinegar. Bring to a gentle simmer over low. Cook, stirring occasionally, until chicken easily pulls away from the bone and flavors meld, about 10 minutes. Remove from heat.

  • To prepare this delicious Kerala-style chicken curry, first, saute all the whole spices in some coconut oil. This will give your curry a distinct flavour. Keep aside when done.
  • Next, in the same pan, add some more oil and let it heat. Then, add grated coconut in it and let it fry. Once done, let it cool down at room temperature and add in a grinder jar along with the roasted whole spices. Grind to a fine coconut powder. Also, grind the whole roasted spices as well. (Note: You can also use coconut powder in this recipe)
  • Now, put some coconut oil in a deep pan over medium flame and add the chopped onions in it. Fry for a minute and then add fennel seeds in it. Let them cook for about 1-2 minutes.
  • Now, add chicken in the frying pan and cook for about 3-5 minutes. Then, add the ginger-garlic paste along with the garam masala and powdered coconut. Mix well and cook for about 2-3 minutes. Next, add the chopped tomatoes and mix. Then, sprinkle a little water in the kadhai and cook the chicken for about 10-15 minutes. Make sure that the masalas are cooked well and the chicken is tender.
