CHICKEN CORDON BLEU I
This entree is easy and delicious! It's one of my husband's favorites! Try to use the largest chicken breasts you can find so you'll be able to roll them easier.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
- Pound chicken breasts to 1/4 inch thickness.
- Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
- Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

Steps:
- Preheat oven to 350°.
- Place the broth in a microwaveable bowl at high 15 seconds.
- Stir in the butter and garlic.
- Combine the breadcrumbs, parmigiano cheese and paprika in a shallow bowl; set aside.
- Place the chicken on a cutting board and pound with a meat mallet to 1/4 inch thick.
- Sprinkle both sides of chicken with the salt, oregano and pepper.
- Top each breast with one slice of ham and one slice of cheese.
- Roll up each breast jelly-roll fashion.
- Dip each roll in chicken broth mixture; roll in breadcrumbs.
- Place rolls, seam side down in an 8-inch square pan coated with cooking spray.
- Pour remaining broth over the chicken.
- Bake at 350° for 35 minutes or tops are golden brown.

- 1. Pound the chicken on both sides.Place the ham on top of the chicken,and spred the cream cheese over the ham. Then sprinkle the mozzarella cheese over the chream cheese. Roll the chicken like a jelli roll & hold them by sticking them with party picks.Dredge then in the flour then in the egg wash. Then press the chicken in the bread crumbs firmlyto be sure the crumbs will stick. Deep fry the chicken until light brown. remove the chicken from the fryer to a sheet pan & bake at 350 degrees until chicken is cooked. Top the chicken with your favorite sauce.

- Take chicken breast and cut a slit in each lengthwise.
- Mix in a small bowl the swiss cheese, ham cubes, parsley, white wine and spices.
- Fill in the chicken pockets with ham mixture.
- Dredge chicken in milk then bread crumbs. Place in baking dish sprayed with non-stick cooking spray.
- Cook at 350* for 30 to 45 minutes, until chicken reaches 165* and is a nice light golden brown.
