Congee and its variants are a staple throughout Asia, including Vietnam, where you'll most commonly find people eating the comforting, soupy rice porridge at breakfast. Chef Eric Banh grew up in Saigon and created this rich chicken version for his Seattle restaurant Ba Bar. He adds that it's good too "as a midnight snack after you drink a lot." Most of the work for the congee can be done ahead.

1 rotisserie chicken
2 tablespoons vegetable oil
3 garlic cloves, smashed and peeled
1/2 cup roughly chopped yellow onion
1/2 cup roughly chopped carrot
8 peppercorns
4 bay leaves
3/4 cup jasmine rice, broken* or whole
3 tablespoons sticky rice (also known as sweet or mochi rice)
4 large eggs, at room temperature
Salt and pepper
1 cup fresh bean sprouts
2 tablespoons finely sliced green onion (green part only)
2 tablespoons roughly chopped cilantro
2 or 3 savory Chinese doughnuts (optional), sliced
About 2 tbsp. peeled and finely julienned ginger
1 lime, cut into 4 wedges

Steps:

  • Make broth: Although you could use canned broth instead, you can make your own with the bones from the same chicken that supplies meat for the congee. Separate wings from chicken and pull meat from bones; discard skin. Set bones and wings aside and shred meat into bite-size pieces.
  • Heat oil in a medium pot over medium heat. Add garlic, chopped onion, and carrot and cook until softened, about 5 minutes. Add wings, bones, peppercorns, and bay leaves, along with enough water to just cover bones (4 to 5 cups). Bring to a boil, then lower the heat to a slow simmer. Skim the pot after 15 minutes and occasionally throughout cooking. Simmer stock 2 to 3 hours, then strain through a fine-mesh strainer.
  • Meanwhile, make porridge base: Bring 10 cups water to a boil. Whisk in jasmine and sticky rice. Reduce heat to low and simmer, covered, stirring every 5 minutes, until rice looks like loose cooked oatmeal, about 45 minutes. Set aside 6 cups.
  • Bring a medium pot of water to a boil and carefully add eggs. Lower heat to a simmer and cook eggs 8 minutes, then plunge into an ice water bath. When they're cool, peel.
  • Bring porridge base and 2 cups chicken stock to a boil. Stir in 2 cups chicken meat and reduce heat to a simmer. Season with salt and pepper.
  • Break or slice eggs in half. Divide congee among four large soup bowls. Top each with sprouts, green onions, cilantro, egg, and a couple of slices of savory Chinese doughnuts. Add a few slivers of ginger last to keep it from cooking in the congee. Nestle a lime wedge next to each bowl and serve.
  • Make ahead: Porridge base, up to 5 days, chilled airtight (it thickens in the fridge and can be used that way, but if you like it looser, add a little water).
  • *Broken rice, a by-product of processing and transporting rice, is stickier and softer than whole-grain rice. Find it at Vietnamese markets.

Also known as jook, congee turns up in Chinese households morning, noon, and night. This thick rendition is made heartier with the addition of chicken.

3 1/2 to 4-lb chicken, cut into serving pieces, including back and giblets (exclude liver)
10 cups water
3 tablespoons Chinese rice wine or medium-dry sherry
3 (1/4-inch-thick) slices fresh ginger
3 scallions, halved crosswise and smashed with flat side of a heavy knife
1/2 teaspoon salt
1 cup long-grain rice
Accompaniment: fine julliene of fresh ginger, thinly sliced scallions, and Asian sesame oil

Steps:

  • Bring chicken and water to a boil in a 5-quart heavy pot, skimming froth. Add wine, ginger, scallions, and salt and cook at a bare simmer, uncovered, 20 minutes, or until breast meat is just cooked through. Trasfer 1 breast half with tongs to a bowl and continue to cook stock at a bare simmer, skimming froth as neccessary, 2 hours and 40 minutes. Meanwhile, cool chicken breast long enough to remove skin and bones, returning skin and bones to stock.
  • Cool breast meat completely and tear into shreds. Chill shreds, covered, and bring to room temperature before serving.
  • Pour stock through a large seive into a large bowl and discard solids. (you should have about 8 cups: if less, add water; if more, cook longer after adding rice.) Return stock to cleaned pot and add rice. Bring to a boil and stir. Reduce heat to low and simmer, covered until consistency of oatmeal, about 1 3/4 hours, stirring frequently during last 1/2 hour of cooking. (Congee will continue to thicken as it stands. thin with water if necessary.)
  • Season congee with salt. Serve topped with chicken and accompaniments.

Congee is regarded as the ultimate Chinese comfort food, according to the author Fuchsia Dunlop. This recipe for ji zhou or chicken congee, from her book on Jiangnan regional cuisine, is dead simple and satisfying. Serve it with chicken and soy sauce for a late-night Shanghai-style snack.

3/4 cup/150 grams sushi rice
2 1/2 quarts/2.5 liters chicken stock
Salt
Soy sauce, for serving
Thinly sliced spring onions or scallions, green parts only, for serving
Finely chopped fresh ginger, for serving
Sesame oil, for serving

Steps:

  • Rinse and drain the rice.
  • Put the rice in a pot with the chicken stock and bring to boil. Give the rice a good stir, scraping the bottom of the pan to prevent sticking, then lower the heat and half-cover the pan. Simmer gently for 1 1/2 to 2 hours, stirring every 15 minutes, until the grains have burst open and you have a thick congee. Keep an eye on the pot to make sure the rice doesn't stick to the bottom. Toward the end of cooking, when the stock has become integrated with the rice and is the consistency of oatmeal, season lightly with salt to taste.
  • Serve the congee with a sprinkling of soy sauce, spring onion and ginger and a few drops of sesame oil to taste.

2 pounds boneless, skinless chicken thighs
8 cups chicken stock
1 cup long-grain rice
3 small dried red chiles, such as Thai or chile de arbol
1 (3") piece ginger, thinly sliced
2 garlic cloves, pressed
1 1/2 teaspoons kosher salt
Cubed avocado, lime wedges, cilantro, sliced jalapeño, sliced scallions, chopped roasted, salted peanuts, chili oil, fish sauce, hot sauce, soy sauce, and/or crispy fried shallots (for serving; choose as many as you like)

Steps:

  • Place chicken, stock, rice, chiles, ginger, garlic, and salt in slow cooker. Cover and cook on low 8 hours.
  • Remove chiles and ginger. Stir, breaking up chicken into bite-size pieces. Divide congee among bowls. Serve with an assortment of toppings alongside.
  • Do Ahead
  • Congee can be made 3 days ahead; transfer to an airtight container and chill. Reheat in a large pot over medium, stirring in water as needed to loosen.

It's tasty and easy to digest. When I was young, my go-to sick food was chicken porridge or KFC mashed potatoes. When you have a cough, the doctor will advice to not have oily foods, but I will still add sesame oil to my porridge (while my mother looks away). That's like the best part about porridge!! Tons of heavenly sesame oil. Other than it being a 'sick people' or baby food, porridge is also eaten for breakfast or actually anytime you wish to. Nowadays, I cook it on my lazy days and on cold winter days. The ginger in it gives out a nice warm feeling in the tummy. However, if using as baby food, you normally do not add any seasoning to it. So just plain porridge with a choice of protein and veggies all blended together. Most Chinese restaurants in Malaysia cook it on request, some even specialise in it. You can even buy instant porridge in cups or packets where you just need to add boiling water to it. So what is rice porridge? It's just plain white rice that has been boiled with lots of water until the rice breaks down and becomes thick and gooey. You can also use your own choice of meat, such as chicken, pork or fish. It's also a great way to use up leftover rice if you do not feel like having fried rice. The basic condiments are spring onions, julienned ginger, fried onions. Other condiments (when available) include pork or chicken floss (rousong), pickled mustard plant (zha cai), and fried chinese crullers (char kway). For added seasoning, add sesame oil, light soy sauce, and white pepper. There are two ways I use to cook rice porridge. The first is by cooking it manually over the stove top in a large pot. The second is by using the rice cooker, so all I need to do is mix in the ingredients and press a button and stir every now and then. In Switzerland, I have yet to see a Chinese restaurant have porridge on their menu. That's basically not a problem, but when I am sick...porridge is all I crave for. But I do not want to be standing and stirring at the stove while I am sick. I use to also not really want to cook porridge because I am the only one who used to eat it. My husband always had the notion that my rice porridge was sweet, like grits or oats. It took me 3 years to convince him to even have a spoon of it. Now, he loves it! He even eats more servings than I do and requests it all the time. Once rice has broken down, you can adjust the thickness of the porridge. If it's still too watery, cook it longer and if it's too thick, add more water. Add choice of condiments. Serve. Directions for stove top: Follow directions above, just use a large pot. Tips: Do not fill rice cooker with water exceeding ¾ of the pot. You can always start with less water than the required and add the rest later. You may not need all the required water. Reduce or add water depending on the consistency you prefer. If using already cooked rice, use a ladle to break up any rice clumps first. If using fish, add it after the porridge has been cooked.
