A homemade dressing lightens up these refreshing tortilla wraps. The avocado, bacon, blue cheese and tomato deliver the flavors I enjoy most while keeping me on my healthy eating plan. -Lynne Van Wagenen of Salt Lake City, Utah

2 cups cubed cooked chicken breast
1/2 cup chopped avocado
4 bacon strips, cooked and crumbled
1 celery rib, thinly sliced
1 green onion, sliced
2 tablespoons chopped ripe olives
2 tablespoons crumbled blue cheese
2 tablespoons lemon juice
1 tablespoon honey
1-1/2 teaspoons Dijon mustard
1 garlic clove, minced
1/4 teaspoon dill weed
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil
4 romaine leaves, torn
4 whole wheat tortillas (8 inches), warmed
1 medium tomato, chopped

Steps:

  • In a small bowl, combine chicken, avocado, bacon, celery, onion, olives and cheese. In another small bowl, combine lemon juice, honey, mustard, garlic, dill weed, salt and pepper. Whisk in oil. Pour over the chicken mixture; toss to coat. , Place romaine on each tortilla; top with 2/3 cup chicken mixture. Sprinkle with tomato; roll up.

2 -3 tablespoons white wine vinegar (Flay uses 3 T, but I like 2 T)
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
3 tablespoons extra virgin olive oil
1/4 lb blue cheese, sliced and crumbled or 1/4 lb feta cheese, crumbled
salt & freshly ground black pepper
3 cups thinly sliced romaine lettuce (about 1/2 to 3/4 inch)
8 slices bacon, cooked until crisp and coarsely chopped (can use turkey bacon)
2 cups coarsely shredded chicken, white and dark meat (from a store-bought rotisserie chicken,)
4 Sandwich wraps (white, whole wheat, tomato or spinach) or 4 flour tortillas, large

Steps:

  • Whisk together the vinegar, mayonnaise, dijon mustard and olive oil in a large bowl until combined.
  • 2. Put the romaine, bacon, chicken and blue cheese in a large bowl and toss to combine. Add half of the dressing from the above and combine.
  • 3. Heat the wraps in a dry sauté pan over low heat, or place on a plate, cover with a damp paper towel and microwave for 25 seconds to make more pliable. Place the wraps on a flat surface and spread some of the dressing in the middle surface. Divide the mixture among the wraps, fold like a burrito, slice in half diagonally and drizzle top with more dressing, if desired.

1 cup chopped deli rotisserie chicken (from 2-lb chicken)
1 1/2 cups torn romaine lettuce
1/4 cup blue cheese dressing
1 small tomato, chopped (1/2 cup)
2 tablespoons cooked real bacon bits (from 3-oz jar)
1 hard-cooked egg, chopped
2 flour tortillas (10 inch)
1/2 avocado, peeled, sliced

Steps:

  • In medium bowl, toss chicken, lettuce and dressing to coat. Stir in tomato, bacon and egg.
  • Place tortillas on large microwavable plate; cover with microwavable plastic wrap. Microwave on High 15 to 30 seconds to soften.
  • Spoon chicken mixture down center of each tortilla to within 1 inch of edges. Top with avocado slices. Fold opposite sides of tortilla up toward center about 1 inch over filling (sides will not meet in center); roll up tortilla, beginning at 1 open end. Cut diagonally in half. Secure with toothpick, if necessary. Serve immediately.

  • Add half of the cut-up chicken to the skillet, spread the pieces out in a single layer, and cook until browned on all sides and cooked through (you can test doneness by cutting into one piece of chicken, it should be white and opaque throughout), about 8 minutes.
